This savory sausage gravy is a specialty amount country folds in our area. It's best served over fresh, hot biscuits. It makes a real "sticks to the ribs" dish that we always enjoy and carries a traditional flavor that can showcase locally produced sausage. -Mrs. J. N. Stine, Roanoke, Virginia

Number Of Ingredients 10

1 pound sage-flavored bulk pork sausage
2 tablespoons finely chopped onion
6 tablespoons all-purpose flour
1 quart milk
1/2 teaspoon poultry seasoning
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
Dash Worcestershire sauce
Dash hot pepper sauce
Biscuits

Steps:

  • Crumble sausage into a large saucepan; cook over medium-low heat. Add onion; cook and stir until transparent. Drain, discarding all but 2 tablespoons of drippings. Stir in flour; cook over medium-low heat about 6 minutes or until mixture bubbles and turns golden. Stir in milk. Add seasonings; cook, stirring, until thickened. To serve, slice biscuits and spoon gravy over halves.

  • In a saucepan, cook the sausage over medium heat until no longer pink.
  • Stir in butter until melted.
  • Sprinkle with flour.
  • Gradually stir in milk, salt, and pepper.
  • Bring to a boil.
  • Cook and stir for 2 minutes.
  • Serve over biscuits.

1/3 cup flour
1 quart milk
1 dash pepper
Pillsbury Grands refrigerated buttermilk biscuits

Steps:

  • Cook sausage in skillet.
  • Drain Fat.
  • Sprinkle flour over sausage and stir well.
  • Cook flour and sausage together for about 5 - 7 minutes.
  • Add milk.
  • Cook over medium heat until thickened.

1 pound breakfast sausage, hot or mild
1/3 cup all-purpose flour
3 to 4 cups whole milk, more to taste
1/2 teaspoon seasoned salt
2 teaspoons freshly ground black pepper, more to taste
Biscuits, warmed, for serving

Steps:

  • With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
  • Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
  • Spoon the sausage gravy over warm biscuits and serve immediately!

3 tablespoons flour
1 pint milk (as required)
to taste sour cream (optional)

Steps:

  • Use cast iron skillet, break up and brown sausage. Add flour to sausage; brown it up for awhile. This gives it a good color.
  • Add milk required to give thick gravy; simmer to merge flavor.
  • Add glob of sour cream just before serving, after removing from heat. Serving suggestions: Serve on top of toast, biscuit, hash browns, home fries or whatever you're eating.

I received this recipe from an elderly Southern Lady that worked for me 20 years ago, long before Sausage Gravy became popular around here. I have received many compliments when I serve this. I would definitely use a sage sausage. We like Bob Evans the best.

1 lb ground sausage (we prefer sage sausage)
2 tablespoons flour
1 cup milk
1 cup water
1/4 cup brewed coffee
salt and pepper

Steps:

  • Place Sausage in a skillet (cast iron is best) and brown.
  • Add flour and brown.
  • Add milk and water.
  • Simmer until it is the thickness you desire.
  • Stir in the coffee to the mixture.
  • If to thick, add more milk.
  • Serve over your favorite biscuits.
