4 ounces monterey jack pepper cheese, shredded
2 tablespoons mayonnaise

1 teaspoon Worcestershire sauce
2 ounces pimientos, chopped
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon paprika
3 dashes hot sauce
black pepper

Steps:

  • Cream together cream cheese, mayo, sour cream.
  • Blend in spices, Worcestershire sauce, and hot sauce.
  • Stir in cheeses, pimientos, black pepper and beat until creamy and combined. A hand mixer works well for this.
  • Cover and refrigerate for about and hour.
  • Serve with crackers and celery sticks.

1 tablespoon sweet pickle relish
1 teaspoon onion powder
1 teaspoon Tabasco sauce
Salt and freshly ground pepper
Halved radishes and celery sticks, for serving

Steps:

  • In a medium bowl, using a wooden spoon, blend the goat cheese with the cheddar cheese, mayonnaise, pimientos, scallions, pickle relish, onion powder and Tabasco; season with salt and pepper.
  • Transfer the spread to a bowl and serve with radishes and celery.

1 teaspoon celery seed
1 cup pickled jalapenos, chopped
6 ounces piquillo pepper, chopped (regular pimentos can be substituted)
5 cups shredded Cheddar (approximately 1 1/4 pounds)
1 to 2 tablespoons Sriracha

Steps:

  • Combine the cream cheese, mayonnaise, garlic powder, onion powder and celery seed. Mix in the pickled jalapenos, piquillo peppers and grated Cheddar. Add the Sriracha and combine. Taste and add more mayonnaise and Sriracha, if necessary. Chill before serving.

1 cup mayonnaise

Steps:

  • Place the drained pimientos in a blender or food processor and puree until smooth. Using an electric mixer, combine the pimientos and cheese, beating until smooth. Beat in the mayonnaise. Spread on slices of white sandwich bread while the mixture is room temperature. Trim the bread crusts and cut the sandwiches into triangles.

1 teaspoon yellow mustard
1/2 cup mayonnaise

  • Bring vinegar to a boil in the microwave.

  • Place the drained pimientos in a blender or food processor and purée until smooth. Using an electric mixer, combine the cheese and pimiento, beating until smooth. Beat in the mayonnaise.   • The spread may be stored, covered, in the refrigerator for up to 1 week. Remove the spread from the refrigerator and allow it to reach room temperature before serving.
