GRANOLA

Granola image

Homemade granola couldn't be easier with Alton Brown's recipe from Good Eats on Food Network. Maple syrup sweetens this healthy melange of oats and nuts.

Provided by Alton Brown

Time 1h25m

Yield 6 servings

Number Of Ingredients 9

3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  • Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

THE BEST GRANOLA

The Best Granola image

For our best granola, we wanted a crunchy, clustery version that wasn't too sweet. We created this simple but universally likeable recipe that's flavored with vanilla and a blend of brown sugar and maple syrup. We love its pure flavors and balance of salty and sweet. It is the perfect canvas for personalization, so we've included some ideas for mix-ins at the end of the recipe.

Provided by Food Network Kitchen

Categories     appetizer

Time 2h

Yield 5 cups

Number Of Ingredients 9

Nonstick cooking spray
3 cups regular rolled oats (not quick-cooking)
1 cup slivered almonds
1 cup large unsweetened coconut flakes
1 tablespoon kosher salt
1/2 cup packed light brown sugar
1/3 cup pure maple syrup
1/3 cup vegetable oil
2 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 300 degrees F. Lightly spray a rimmed baking sheet with nonstick cooking spray.
  • Combine the oats, almonds, coconut chips and salt in a large bowl and stir to combine.
  • Combine the brown sugar, syrup and oil in a medium saucepan over medium-high heat and cook, stirring often, until the sugar is dissolved, about 2 minutes. Remove from the heat and stir in the vanilla extract.
  • Pour the sugar mixture over the oats and stir until well combined, then spread the granola mixture in an even layer on the prepared baking sheet. Bake, stirring occasionally (see Cook's Note) until toasted and golden brown, 60 to 70 minutes. Remove to a wire rack to cool completely and store in an airtight container for up to 1 week.

ABSOLUTELY FABULOUS GRANOLA BARS

Absolutely Fabulous Granola Bars image

My family loves granola bars. The quaker brand used to be there favorite, but since I have been making these granola bars I have been forbidden to bring the "store bought" kind into the house. The nice thing about this recipe is that you can add as many "mix-in's as you would like. Chocolate, dried fruit, nuts ... the list is endless.

Provided by Hines Honey

Categories     Breakfast

Time 40m

Yield 24 serving(s)

Number Of Ingredients 8

4 cups whole oats
1 cup chopped nuts (pecans are preferred in my house)
1/2 cup all-purpose flour
1 cup chocolate chips
2 eggs, beaten
2/3 cup corn syrup (or honey if you prefer)
2/3 cup cooking oil
1/2 cup packed dark brown sugar

Steps:

  • Preheat oven to 325 F.
  • Line 9x13 pan with tin foil. Grease the foil, then set pan aside.
  • Mix all ingredients in a large bowl until well combined.
  • Press evenly into prepared pan.
  • Bake for 25 to 30 minutes, or until golden brown across the top of the bars.
  • Immediately remove from pan and invert on to a cooling rack so that the foil can be removed from the bars.
  • Allow to cool, then cut into bars.
  • I wrap them indiviually, so they can be quickly snatched for a snack of breakfast on the run.
