This recipe comes from my daughter-n-laws mother. We have this delicious homemade oreo ice cream every year when I go to visit them in the summer. This makes in the gallon size ice cream maker.

1 (16 ounce) package Oreo cookies, crushed finely
1 (14 ounce) can sweetened condensed milk
1 pint half-and-half
1 pint heavy whipping cream
1 quart milk
4 lbs rock salt (box for ice cream)
crushed ice (bag)

Steps:

  • Crush oreo cookies in a plastic bag. Set aside.
  • In the ice cream container, add half and half, heavy whipping cream, sweetened condensed milk, crushed cookies. Stir to combine.
  • Add enough regular milk to the line on the ice cream container.
  • Cover with ice cream maker lid and place in the other container that holds the metal container of liquid. Secure and lock in place.
  • Add a layer of rock salt (about 2 cups around containter) and a layer of ice and repeat layers of salt and ice til you cover the top of the machine.
  • Plug in and let the machine go for 30 minutes or until it stops.
  • Cover the machine with a towel for 10 minutes, and serve.
  • NOTE: Be sure to keep watching and adding rock salt and ice until the ice cream is made.

Brownie and chocolate chip lovers don't have to decide -- these ice cream sandwiches have both (plus an extra hidden cream-filled cookie surprise). One baking sheet does double duty and bakes both layers at the same time.

Nonstick cooking spray, for the baking sheet
24 chocolate sandwich cookies, such as Oreos
Two 16.5-ounce packages chocolate chip cookie dough, at room temperature
One 18.3-ounce box brownie mix (plus required ingredients)
24 vanilla sandwich cookies, such as Golden Oreos
4 cups (1 quart) vanilla ice cream, softened

Steps:

  • Preheat the oven to 375 degrees F. Line an 18-by-13-inch rimmed baking sheet with foil, leaving a 2-inch overhang on at least two sides. Coat with cooking spray.
  • Arrange the chocolate sandwich cookies on half of the baking sheet in 6 rows, with 4 cookies per row. Cover the chocolate sandwich cookies with the cookie dough: pressing and spreading the dough into and over the cookies to make one giant chocolate chip cookie that covers half of the baking sheet.
  • Prepare the brownie batter according to package directions. Pour the batter into the empty half of the pan. Arrange the vanilla sandwich cookies on top of the brownie batter in 6 rows, with 4 cookies per row Press the cookies into the batter.
  • Bake until a toothpick inserted in the center of the chocolate chip cookie portion and brownie portion comes out with just a few crumbs, 20 to 23 minutes. Let cool completely in the pan on a cooling rack, about 2 hours. Freeze to firm up, about 30 minutes.
  • Use the foil overhang as handles and lift the giant cookie out of the baking sheet and carefully flip it over onto a cutting board, making sure it does not bend or crack. Peel away the foil from the bottom. Line the baking sheet with plastic wrap.
  • Using a warm serrated knife, trim the rough edges of the giant cookie so it is an even rectangle (about 12-by-16-inches). Cut it in half crosswise so you have one brownie half and one chocolate chip cookie half (each 8-by-12-inches). Lay the chocolate chip cookie piece on the prepared baking sheet so the chocolate sandwich cookies are facing up. Working quickly, spread the ice cream across the cookie all the way to the edges. Smooth out the top and sides. Place the brownie half, with the chocolate cookies facing down, on top of the ice cream and gently press to adhere. Fold the plastic wrap around the assembled ice cream sandwich to help hold its shape and freeze until hardened, at least 6 hours and up to overnight. Use a warm serrated knife to cut into 24 ice cream sandwiches.

1 quart vanilla ice cream, softened
1 (6 ounce) chocolate sandwich cookie crumb crust (such as an OREO® crust)
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Reserve 8 mini sandwich cookies for garnish. Place remaining cookies in a food processor or plastic bag and crush coarsely.
  • Stir crushed cookies into softened ice cream. Put ice cream mixture into cookie crust and place in the freezer until set, about 1 hour.
  • Pipe whipped topping around the edge of the pie and top with the reserved cookies, standing on end. Freeze for 3 to 8 hours before serving.

I changed it only slightly, adding more Oreos and adding the Oreos to the ice cream freezing process a little sooner. It's very good! Cook time is the freezing process time and for my Cuisinart freezer, that's about 20 minutes.

1 cup coarsely chopped Oreo cookies
2 large eggs
3/4 cup sugar
2 cups heavy cream or 2 cups whipping cream
1 cup milk
2 teaspoons peppermint extract

Steps:

  • Place cookies in a bowl, cover and refrigerate.
  • Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes; whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 more minute.
  • Pour in the cream and milk and whisk to blend.
  • Add the peppermint extract and blend again.
  • Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.
  • While the ice cream is somewhat loose but on it's way to being frozen, add the chopped cookies and continue freezing until the ice cream is ready.
  • At this point, I transfer the ice cream to a plastic container and put it in the freezer to harden (ripen) completely.

1 egg, beaten

12 chocolate sandwich cookies (such as Oreo®), crushed

Steps:

  • Heat heavy cream, 1 cup half-and-half, and milk in a saucepan over medium heat until it begins to simmer, about 10 minutes; stir in Thai tea mix and bring to a boil. Reduce heat to low; simmer 5 minutes, or up to 10 minutes for more tea flavor.
  • Whisk about 1/4 cup cream mixture, a teaspoon at a time, into beaten egg; whisk beaten egg mixture into cream mixture in saucepan and cook until slightly thickened, about 1 minute. Strain cream mixture through a cheesecloth-lined sieve; discard tea leaves.
  • Beat remaining 1 cup half-and-half, sweetened condensed milk, and vanilla extract into cream mixture until well blended; cover and chill for at least 6 hours or overnight.
  • Freeze cream mixture in ice cream maker according to manufacturer's instructions. I've never made this but I tasted a bit, that was all that was left, and it was really good. It only has 4 ingredients and sounds super easy to make. I think you could easily substitute homemade sauce for the hershey's. I think it would be great to take to a potluck because you wouldn't have to worry about keeping it warm or making sure it doesn't spill on the way there.

1 (8 ounce) package Cool Whip, thawed
1 (16 ounce) jar of hershey's hot fudge
1 1/2 gallons vanilla ice cream

Steps:

  • Grease a 9x13" pan.
  • Crush the cookies, either in a food processor or put them in a plastic bag and beat the heck out of them. Layer half of the crumbs in the pan.
  • Spread the softened ice cream over the cookies.
  • Warm the fudge until pourable in the microwave and pour over the ice cream.
  • Spread the Cool Whip over the fudge. Then cover with the rest of the oreos.
  • Put it in the freezer for probably at least two hours or until it gets firm.
  • Take it out of the freezer about 20 minutes before you want to serve it.
