This homemade instant oatmeal recipe makes convenient packets that are lower in sugar, carbs, and sodium than store-bought oatmeal, but higher in protein and fibre! A quick and easy way to make healthier choices on the go!

Number Of Ingredients 6

3 cups of quick cooking oats
1/2 cup instant skim milk powder
1/3 cup chia seeds
1/4 cup ground flax seeds
3 tbsp brown sugar
1/8 tsp salt

Steps:

  • Take one cup of the oats and pulse in a food processor or blender until the flakes are broken up. You'll have a mixture of powder and flake pieces.
  • Stir together the rest of the master mix.
  • Scoop out 1/3 cup into 12 containers that have a 1 cup capacity. Think mason jar, Tupperware, etc. Alternatively, use plastic zip bags and dump into a bowl when it's time to eat.
  • Add in your favourite mix-ins! See notes for ideas.
  • When you want to enjoy some oatmeal, boil water and add 1/3 cup water to each serving. Stir and allow to sit for 15-30 seconds before eating.

5 cups old-fashioned rolled oats ((500 grams))
⅓ - ½ cup packed light or dark brown sugar (, depending on desired sweetness (66-105 grams))
½ cup powdered milk ((42 grams))
1 teaspoon salt
⅔ cup chopped dried fruit ((approximately 75 grams))
⅔ cup chopped nuts ((approximately 75 grams))
½ - 1 teaspoon cinnamon or nutmeg

Steps:

  • In a food processor pulse the rolled oats 4-5 times, just until they start to break up. Remove about two-thirds of the oats (3 ⅓ cups, but no need to be exact) and pulse the remaining oats to a fine powder.
  • Combine the oats, sugar, powdered milk, salt and any optional additions. Store in a large airtight container or portion out into individual servings and store in zipped bags. Mix should keep for 1-2 months.

By toasting and grinding rolled oats in advance, you can make your own instant oatmeal, cutting your morning cooking time and allowing you to create novel flavors.

4 cups old-fashioned rolled oats
1/4 cup light-brown sugar
1 1/4 teaspoons coarse salt
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees. Spread oats on a rimmed baking sheet; bake until lightly toasted but not browned, about 15 minutes. Let cool. Pulse in a food processor until coarsely chopped. Mix in 1 cup of a combination of add-ins (see our suggestions below), and stir in sugar, salt, and cinnamon, or more to taste, before storing in an airtight container for up to 2 weeks.
  • To serve, stir in boiling water until desired consistency is reached. Let stand 2 to 3 minutes.

I love making my own oatmeal mixture because I know exactly what's in it (many store-bought packets have additives), it's cheaper (every penny counts!), and I think it just tastes better. I keep a large Tupperware of this mixture in my desk at work, along with a 1/4-cup measuring cup; I give the Tupperware a quick shake before measuring out my serving. Alternatively, you could prepackage servings in sandwich-sized Ziplocs. 1/4 cup is about the same amount as the store-bought packets, so that's the serving size the recipe is based on, but I often measure out 1/2 cup portions.

  • Put the following ingredients into each small-size zip baggie: 1/4 cup un-powdered oats, 2 tablespoons powdered oats, and 1/8 teaspoons salt.
  • *Optional:add to each packet additional flavors.
  • Store in an airtight container.
  • To serve: Empty packet into a bowl.
  • Add 3/4 cup boiling water.
  • Stir and let stand for 2 minutes.
  • For thicker oatmeal, use less water - for thinner oatmeal, use more water.

Stir to combine, reduce the heat to medium-low, and simmer, uncovered, stirring occasionally, until the oats have absorbed most of the water and are creamy in texture, 5 to 7 minutes.
  • Stir the oatmeal mix again to ensure that it’s evenly blended. Combine 1/3 cup of the mix and 2/3 cup of the water in a microwave-safe bowl (use a slightly larger bowl than you think you’ll need, so the oatmeal doesn’t bubble over). Microwave for 1 1/2 to 2 1/2 minutes, pausing to stir if necessary to prevent overflow, until the oats have absorbed most of the water and are creamy in texture.
