Hot Dog Buns image

These Homemade Hot Dog Buns will take your barbecue to the next level! They are soft and fluffy and way better than store bought!

Provided by Ashley Fehr

Categories     Bread and Baked Goods

Time 3h8m

Number Of Ingredients 6

6-7 cups all purpose flour ((you can sub in whole wheat) divided)
1/4 cup granulated sugar
1 tablespoon instant or quick yeast
1 tablespoon salt
2 1/2 cups warm water ((noticeably warm but not hot))
1/2 cup melted unsalted butter

Steps:

  • In a large bowl (the bowl of a stand mixer if you're using one), stir together 1 cup of flour, sugar, yeast and salt.
  • Add water and butter and stir until combined.
  • Add two more cups of flour and stir until combined.
  • Place bowl in stand mixer, and gradually add remaining 3-4 cups flour, 1/2-1 cup at a time. As your dough gets closer to finishing, reduce the amount of flour you add at once so that you don't add too much. You can make this dough by hand as well -- just stir in flour gradually until you can no longer use a spoon, then knead it in by hand, just until a soft and smooth dough forms. We want to stop adding flour when our dough is just past the sticky point.
  • Cover and place dough in a warm spot for 1.5 hours or until doubled (I like to turn my oven on to preheat for a few minutes, then turn it off before placing my dough inside). Punch dough down.
  • Uncover dough and divide into 4 even sections. Divide each section into 5 equal sections so you have 20 pieces. Keep remaining pieces covered to prevent drying out while you roll each bun. (For smaller hot dog buns, divide each section into 6 pieces, for a total of 24 buns)
  • Line a baking sheet with parchment paper. Roll each piece of dough into a smooth ball, pinching the seams in the back and rolling until smooth. Place ball on the counter and roll back and forth with both hands to make a cylinder that is roughly 5-6" by 1-1.5". For hot dog buns that are not as thick, press down to flatten slightly. Line up on baking sheets about 1-1.5" apart.
  • Once your hot dog buns are all rolled, let rise for 45-60 minutes until doubled again.
  • Bake at 400 degrees F for 15-20 minutes, until light golden brown. Optional: brush wth melted butter upon removing from the oven.
  • Let cool to room temperature before slicing and serving.

CHEF JOHN'S HOT DOG BUNS

Chef John's Hot Dog Buns image

Don't get me wrong; if you hand me a hot dog at the ball game, it's not like I'm going to throw it back in your face, but given the choice this butter-crisped, split-topped bun is the way to go. Thanks to its genius design the meat and fixings go in the top, which leaves three relatively flat sides to toast in butter.

Categories     Bread     Yeast Bread Recipes     Rolls and Buns

Time 3h50m

Yield 8

Number Of Ingredients 9

1 (.25 ounce) package active dry yeast (such as Fleischmann's RapidRise®)
3 ½ cups all-purpose flour, divided, or more as needed
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons melted butter
3 tablespoons sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
3 tablespoons melted butter, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk 1/2 cup flour and water into yeast until mixture is smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk egg, 3 tablespoons melted butter, sugar, and salt into yeast mixture; add remaining flour and stir.
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled in size, about 2 hours.
  • Transfer dough to a floured work surface and form into a 5x10-inch rectangle about 1/2-inch thick. Cut dough into 8 equal lengths. Turn each slice cut-side up and form into a hot dog bun shape about 5 inches long. Transfer dough, cut-sides up, to the prepared baking sheet about set them about 1/4-inch apart.
  • Cut a slit about 1/8-inch deep down the center of each bun. Brush 2 tablespoons melted butter over the top and sides of each bun. Let rise until almost doubled in size and the buns have risen into each other, about 45 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake buns in the preheated oven until golden brown, about 20 minutes. Brush tops with remaining melted butter.

Time 11h10m

Number Of Ingredients 10

17.6 oz all purpose flour (4 US cups, measured by spoon and level method (please see notes).)
½ cup warm milk
¾ cup warm water
2 tsp dry active yeast
1 1/2 tsp salt
1 tbsp sugar
1 egg
2 tbsp softened butter / oil
Extra oil to lightly oil the bowl
1 egg for the egg wash

Steps:

  • In a mixing bowl (of your stand mixer), combine the flour, yeast, sugar and salt.
  • In another small bowl, whisk together the water, milk and egg.
  • With the paddle attachment in your stand mixer or a dough whisk, mix the dry ingredients and add the water-milk-egg mixture and mix to combine.
  • Switch to the dough hook of your stand mixer, and knead the dough to bring it together. The dough needs to be fairly wet and sticky. Knead for about 5 minutes, until you have a smooth ball of dough.
  • Add the oil or butter and knead for a further 5-10 minutes (I knead it for about 8 minutes), until the dough is shiny, smooth and tacky to the touch.
  • Lightly oil a big bowl and place the dough in it. Make sure the dough is lightly oiled on the surface as well.
  • For best results, cover the bowl with plastic wrap and store in the fridge overnight (8 hours) or for up to 24 hours. Alternatively, if you want to bake it on the same day, you can cover the dough with plastic wrap and let it rise for 1 hour in a warm place, until it has doubled in size.
  • On the day you bake the bread rolls - turn the chilled dough out on to a lightly floured surface and lightly dust the surface of the dough as well. If the dough wasn't chilled, you may need extra flour on your hands and on your work surface to prevent the dough from sticking.

PRETZEL HOT DOG BUNS

Pretzel Hot Dog Buns image

Provided by Jeff Mauro, host of Sandwich King

Time 1h40m

Yield 8 servings

Number Of Ingredients 10

1 cup milk
1/4 cup light brown sugar
2 tablespoons honey
1 packet active dry yeast
2 tablespoons unsalted butter
2 small cloves garlic, grated
3 cups all-purpose flour, plus more for dusting
1 cup bread flour
1/2 cup baking soda
Pretzel salt or coarse ground sea salt, for sprinkling

Steps:

  • In a small saucepan, heat the milk, 1/2 cup water, sugar and honey to 105 to 110 degrees F. Add to the bowl of a stand mixer. Sprinkle the yeast over the water mixture and wait for at least 10 to 15 minutes until the yeast blooms.
  • In a separate saucepan over medium heat, add the butter and garlic and cook until the butter is melted and the garlic is fragrant, 2 to 3 minutes.
  • Combine the all-purpose flour and bread flour in a mixing bowl.
  • Add the flour mixture to the bowl with the blooming yeast, and then add in the melted butter and garlic mixture. Mix on medium speed until the dough has come together and is smooth and elastic in texture and pulling away from the sides of the bowl, 5 to 7 minutes.
  • Line 2 baking sheets with silicone mats. Turn the dough out onto a lightly floured cutting board and form into a ball. Cut into 4 equal pieces, and then cut those in half to form 8 equal pieces. Using your hands, roll each piece into a ball and place onto a prepared baking sheet. Cover with a dish cloth and let them rest in a warm place for 12 to 15 minutes.
  • Once rested, lightly dust your work surface again and roll the balls into 7-inch logs. Place onto the other prepared baking sheet, cover, place back in the warm spot and let rest for an additional 30 minutes.
  • Preheat the oven to 425 degrees F. Place one oven rack high and one low. Line 2 more baking sheets with silicone mats or parchment paper.
  • In a large pot, bring 8 cups water to a boil, and then add the baking soda. In batches, place the dough in the water and cook for 30 seconds on each side.
  • Using a slotted spatula, remove the logs and place onto the prepared baking sheets. Sprinkle the logs with pretzel salt as they come out of the water, to ensure the salt sticks. Then cut 3 diagonal slits on top of the bread, not too deep.
  • Bake for 10 to 13 minutes, rotating between the top and bottom racks of the oven halfway through the cooking.

A QUICK AND EASY HOT DOG BUNS RECIPE

A quick and easy hot dog buns recipe image

These buns are so soft, and they stay soft the next day and the day after, but they are strong enough to hold up under even the thickest of hot dogs and sausages. They are fluffy and delicious.

Categories     Breakfast/Lunch/Dinner

Time 1h20m

Number Of Ingredients 7

2 tsp Yeast
2 Tbsp Sugar
1 cup Milk warm
2¾ cups Flour
½ tsp Salt
2 Eggs
3 Tbsp Butter (Melted)

Steps:

  • Mix the yeast, 1 teaspoon sugar, and warm milk and leave to proof-about 5 minutes.
  • Combine two and a half cups of flour, the remaining sugar, and salt. Mix well.
  • Add the proofed yeast, one egg, and melted butter, and use a sturdy spoon to mix until everything comes together in a rough, shaggy mass of dough.
  • Cover with a plastic wrap or a tight-fitting lid and leave to rest for five minutes.
  • Remove the lid, turn the dough to a lightly floured work surface and knead, gradually adding the leftover quarter cup of flour - your dough will still be soft, but don't be tempted to add more flour.
  • Return the dough to the bowl and grease the surface with a bit of oil or melted butter, cover with a plastic wrap or a tight-fitting lid, and leave to rest for 30 minutes.
  • Punch down the dough to remove any trapped air and transfer it back to a lightly floured work surface.
  • Divide the dough into eight pieces, roll each out about 6 inches long, and pinch down the sides and ends.
  • Place the buns, seam-side down, on a parchment-lined baking sheet.
  • Make the egg wash by whisking one egg, then brush the buns with the egg wash.
  • Cover the loaves and leave them to rise for 15minutes. They should become nicely puffy.
  • Place in a 350F preheated oven and bake for 12 to 15 minutes.

1 cup warm milk (105-110F)
2 teaspoons vegetable oil
2 teaspoons salt
3 1/2 cups all-purpose flour
1 egg white (for egg wash)

Steps:

  • In the bowl of an electric mixer, combine sugar, yeast and warm water. Stir to dissolve and let set until bubbly, about 5 minutes.
  • Add in milk, vegetable oil and salt.
  • With the mixer on a low speed with the dough hook attached, gradually add the flour.
  • Once 3 cups have been incorporated, add the remaining flour a tablespoon at a time until the dough begins to pull away from the sides of the bowl.
  • Turn dough out onto a floured surface and knead for 2-4 minutes, until smooth and supple. The dough should be soft, but not sticky.

CHINESE HOT DOG

Chinese Hot Dog image

Chinese hot dog is one of the most popular bread among Asian bakeries. Also, it is my childhood Hong Kong style hot dog buns. Some people in Hong Kong called it sausage rolls or hot dog rolls as well.

CHINESE HOT DOG BUNS

Chinese Hot Dog Buns image

An Asian bakery classic and the food of my childhood, these homemade Chinese Hot Dog Buns recipe is better than what you get in any Chinese bakery. Really!

Provided by Sarah

Categories     Chinese bakery

Time 3h

Number Of Ingredients 12

2/3 cup heavy cream ((160 ml, at room temperature))
1 cup milk ((plus 1 tablespoon, at room temperature; total 250 ml))
1 large egg ((at room temperature))
1/3 cup sugar ((75g))
1/2 cup cake flour ((70g))
3 1/2 cups bread flour ((500g))
1 tablespoon active dry yeast ((11g))
1 1/2 teaspoons salt ((7g))
1 tablespoon oil
12 hot dogs
Egg wash: whisk together 1 egg with 1 teaspoon water
Simple syrup: 2 teaspoons (8g) of sugar dissolved in 2 teaspoons hot water

Steps:

  • In the bowl of a mixer, add the heavy cream, milk, egg, sugar, cake flour, bread flour, yeast, and salt (add it in that order). Using the dough hook attachment, turn on the mixer to "stir." Let it go for 15 minutes, occasionally stopping the mixer to push the dough together.
  • After 15 minutes, the dough is ready for proofing. Cover the bowl with a damp towel and place in a warm spot for 60-90 minutes, until the dough doubles in size.
  • In the meantime, heat a tablespoon of oil in a skillet over medium heat. Add the hot dogs, and allow them to crisp slightly and get some color on them. Set aside on a plate to cool.
  • After the hour of proofing, put the dough back in the mixer and stir for another 5 minutes to get rid of air bubbles. Dump the dough on a lightly floured surface and cut into 12 equal pieces.
  • Preheat the oven to 350 degrees F. Take each piece of dough and roll it into a 10-12 inch rope, keeping the middle thicker than the ends. Roll the rope around a hot dog, tucking in the ends. Place on a parchment-lined baking sheet (keep the buns 2-3 inches apart). Repeat until all the buns are assembled.
  • Cover the baking sheet with a kitchen towel and allow the buns to rise in a warm place for another hour. The buns should close to double in size. Brush with egg wash, and bake the buns for 14 minutes, rotating the pans halfway through baking.
  • Remove from the oven and immediately brush the buns with sugar water. This last step gives them that signature Chinese bakery shine.

HAMBURGER OR HOT DOG BUNS

Hamburger or Hot Dog Buns image

There's nothing better with your burgers than homemade buns. For a heartier bun substitute 1 cups of whole wheat flour for 1 cup all-purpose flour. I've written the instructions for use with a stand mixer, however you can knead by hand. Prep time includes rising. Recipe comes from Peter Reinhart's 'The Bread Baker's Apprentice'. These are hearty buns, perfect for bratwurst and BBQ sandwiches. Note: Milk can be substituted for the buttermilk, and will slightly affect the final outcome, so experiment and see which one you like best. The same is true with the different types of fat.

Provided by Galley Wench

Categories     Yeast Breads

Time 3h20m

Yield 12 serving(s)

Number Of Ingredients 11

4 1/4 cups unbleached all-purpose flour (19 oz.)
1 1/2 teaspoons salt
3 tablespoons granulated sugar
2 teaspoons instant yeast
1 large egg, slightly beaten, at room temperature
1/4 cup butter, room temperature (margarine, shortening or vegetable can be substituted)
1 1/2-1 3/4 cups buttermilk, room temperature (milk can be substituted)
1 egg, beaten with
1 teaspoon cold water
2 tablespoons poppy seeds (optional) or 2 tablespoons caraway seeds (optional)
cooking spray

Steps:

  • In a large mixer bowl, blend together the flour, salt, sugar and yeast.
  • Pour in the egg, butter and 1 1/2 cups buttermilk and mix on low speed with the paddle attachment until all the flour is absorbed and the dough forms a ball. If dough seems very stiff and dry, add additional buttermilk until the dough is soft and supple.
  • With dough hook, knead dough on medium speed until soft, supple, and tacky, but not sticky. Continue kneading until the dough clears the sides of the bowl (may stick slightly to the bottom).
  • Lighly oil a large bowl and transfer the dough to the bowl, turning over to coat it with oil.
  • Cover with plastic wrap and allow to rise at room temperature for 1 1/2 to 2 hours, or until the dough doubles in size.
  • Remove dough from bowl and divide into 12 pieces, 3 ounces each.
  • Shape each piece into a ball by stretching the surface of the dough around to the bottom on all sides, rotating the ball a quarter-turn as you go.
  • Place on lined baking sheets.
  • Mist the dough lightly with spray oil and cover with a towel or plastic wrap and allow dough to rest for 20 minutes.
  • For hamburger buns: gently press down on the rolls to form the desired shape.
  • For hot dog buns: gently roll the dough on floured surface until elongated to about 4 inches; transfer to lined baking sheets.
  • Mist tops of buns with spray oil and loosely cover with plastic wrap or a towel. Allow dough to rise at room temperature for 60 to 90 minutes, or until nearly doubled in size.
  • Preheat oven to 400°F.
  • Brush tops of the buns with egg wash and garnish with sesame or poppy seeds.
  • Bake for approximately 15 minutes or until they are golden brown (interior temperature should register 180 degrees in the center).
  • When the buns are done, remove immediately from the baking sheet and cool on a wire rack; This will prevent the crust from becoming soggy.

Place in an oiled bowl, cover with a tea towel and let rise in a warm, draft-free place until doubled in bulk, about 1-2 hours.

  • French Toast Sticks. This simple French toast recipe is an ingenious riff on the breakfast classic, using hot dog buns in place of regular bread. The recipe plays off the original pain perdu better than a white loaf or baguette would because old-school French toast is made with old brioche, which is an egg-enriched dough—just like hot dog buns.
  • Garlic Bread Soup. What more convincing do you need than hearing the words “garlic” and “bread” in a soup recipe? It’s essentially garlic bread heaven, turned into a creamy, velvety soup.
  • Hot Dog Bun Éclairs. These éclair-inspired treats come together in just fifteen minutes, thanks to simple store-bought ingredients like hotdog buns and readymade pudding.

  • To mix the dough: In a large bowl, dissolve the sugar and then the yeast in the warm water. Add the milk, oil, salt and 3 cups of flour to the yeast mixture.
  • Gradually add flour, 1/4 cup at a time, until the dough begins to pull away from the sides of the bowl. Turn the dough out onto a floured work surface.
  • Knead until you have a smooth, elastic dough. Because this dough is so slack, you may find that a bowl scraper or bench knife can be helpful in scooping up the dough and folding it over on itself.
  • Put the dough into an oiled bowl. Turn once to coat the entire ball of dough with oil. Cover with a tightly-woven dampened towel and let rise until doubled, about one hour.
  • Turn the dough out onto a lightly oiled work surface. Divide into 18 equal pieces. This is done most easily by dividing the dough first into thirds, then those thirds into halves, then the halves into thirds.
  • Shape each piece into a ball. For hamburger buns, flatten the balls into 3 1/2" disks. For hot-dog buns, roll the balls into cylinders, 4 1/2" in length.
  • For soft-sided buns, place them on a well-seasoned baking sheet a half inch apart so they'll grow together when they rise. For crisper buns, place them 3" apart.
  • Fifteen minutes before you want to bake your buns, preheat your oven to 400°F. Just before baking, lightly brush the tops of the buns with the egg wash and sprinkle with whatever seeds strike your fancy.
  • To bake the buns: Bake for 20 minutes or until the internal temperature of the bread reaches 190°F. (A dough thermometer takes the guesswork out of this.)

  • Stir together 1/4 cup water, yeast, and 1 teaspoon sugar in a small bowl. Let stand until foamy, about 5 minutes.
  • Combine warm milk and 2 beaten eggs in the bowl of a stand mixer fitted with the dough hook attachment. Stir in yeast mixture. With mixer running on medium-low speed, gradually beat in flour and salt. Increase speed to medium, and beat until dough is very sticky, about 2 minutes. Gradually beat in remaining 1/4 cup sugar, 1 teaspoon at a time, until well incorporated, about 4 minutes. Stop mixer, and add butter. Beat on medium speed until dough is smooth, elastic, and pulls away from sides of bowl, about 8 minutes, stopping to scrape down sides of bowl if needed. Transfer dough to a bowl lightly greased with cooking spray. Cover with plastic wrap, and let rest at room temperature until doubled in volume, 1 hour to 1 hour and 30 minutes.
  • Preheat oven to 375°F. Turn dough out onto a clean work surface. Divide dough into 12 (3-ounce) portions. Pat 1 dough portion into a 5- x 3-inch rectangle. Fold the 2 short sides in so they meet in the middle, and gently press. Using your hands and starting at 1 long side, roll dough into a log, gently rolling and pressing into a 5-inch-long log. Repeat with remaining dough portions. Place dough logs parallel to each other, 1 inch apart, on 2 parchment paper–lined baking sheets; gently flatten tops of each. Cover buns loosely with plastic wrap, and let rise at room temperature until almost doubled in volume, about 1 hour.
  • Whisk together remaining egg and remaining 1 teaspoon water. Brush buns on 1 baking sheet with half of egg wash. Sprinkle with poppy seeds, if desired. Bake in preheated oven until golden brown and internal temperature registers 190°F, 14 to 18 minutes. Transfer buns to a wire rack, and let cool completely, about 1 hour. Repeat with remaining baking sheet of buns, remaining egg wash, and, if desired, poppy seeds. Store buns at room temperature in a ziplock plastic bag for up to 3 days.

  • Cut the butter into 1/2″ pats and let warm to room temperature while mixing the ingredients. In the bowl of a stand mixer fitted with the dough hook attachment, add the water, flour, sourdough starter, egg, sugar, and salt. Mix on speed 1 for 1 to 2 minutes until the ingredients come together. Increase the mixer to speed 2 and mix for 4 to 5 minutes until the dough starts to strengthen and clump around the dough hook. Let the dough rest in the mixing bowl for 10 minutes. Turn the mixer on to speed 1 and add the room temperature butter, one pat at a time, waiting to add each pat until the previous one is fully absorbed. This is a fairly strong dough, so it won’t take long to add all the butter and the dough to come back together and smooth, somewhere around 3 to 5 minutes.
  • Bulk fermentation (9:30 a.m. to 12:30 p.m.)Transfer the mixed dough to a bulk container and ferment for 3 hours at 75ºF (23°C). Perform 3 sets of stretch and folds at 30-minute intervals.
  • Chill dough (12:30 p.m. to 1:30 p.m.)Place the covered bulk fermentation container into the fridge for at least 1 hour to thoroughly chill.
  • Divide and shape rolls (1:30 p.m.)Line a full sheet pan, or two half sheet pans, with parchment paper and set near your work surface. Divide the dough into ten pieces, each weighing 100g. Shape each into a tube about 4-inches long and place them on the prepared sheet pan with space between.

  • Pour the warm water into a large bowl, or into the bowl of a stand mixer fitted with the dough hook. Pour the sugar and yeast into the water and whisk with a fork to combine. Allow to rest 5-10 minutes to activate.
  • Gradually add the flour, about 1/2 cup at a time, to the mixture until the dough begins to pull away from the sides of the bowl. The dough should feel stable like PlayDoh but may be a tiny bit sticky. This is ok.
  • Turn the dough out onto a lightly floured surface, then knead the dough until you have a smooth, elastic dough. You might want to use a bench scraper to help you knead the dough, since it will be a little loose and maybe slightly sticky.
