HOMEMADE BEEF SUMMER SAUSAGE RECIPE
Beef Summer Sausage is really easy to make and once you try it you'll never want to buy it from the store again! You don't need any special equipment to make it. It's a perfect healthy party appetizer, snack, or lunch. It's also gluten free, keto, sugar free, and no carb.

Steps:
- Mix 4 pounds of ground beef with Morten's Tender Quick Home Meat Cure. Cover and refrigerate overnight. If you don't have one, set a cooling rack in a baking sheet.
- Add garlic salt, cracked black pepper, and liquid smoke. Mix together until combined.
- Divide the meat mixture into four equal parts. Shape meat into four sticks, or logs.
- Line a roasting pan with aluminum foil for easier cleanup. Set sausages on a roasting pan with a wire rack.
- Preheat oven to 225 degrees. Bake sausage for 4 hours.
- Remove from the oven and cool. Refrigerate summer sausage for up to three weeks, or freeze for up to three months.
- Slice and serve with sliced cheese and crackers.

- Divide the mixture into four 1/2-inch thick patties. You can also divide it into eight small patties if you wish.

- Add all of your dry ingredients to a small bowl and give them a quick stir.
- Grab a mixing bowl and toss your ground beef into it. Sprinkle the dry sausage ingredients over the ground beef. Mix the ground beef and the dry ingredients. Use your hands. Don't be afraid to really get in there and get your hands meaty. Mix it up until your ground beef and spices are thoroughly combined. Cover your newly made sausage, and set it aside in the refrigerator for 30 minutes.
- After the half hour has passed, you can use the sausage in a recipe, cook it and freeze it, or freeze it uncooked to use at a later date. Enjoy!
HOMESTYLE SAUSAGE/GROUND BEEF MEATLOAF
This is the meatloaf my mom made and it was always one of her most requested recipes. I'm not sure if it's one of her recipes or not, since she was always clipping recipes from magazines and newpapers. It's still a big hit with family and friends and remains one of my most requested recipes. My hubby is a hunter, so I do make it with ground vension and vension sausage and it's wonderful. You can also make meatballs with the meat mixture and brown them in a skillet, pop them in a crockpot with spaghetti sauce and it's great served over pasta. The meatballs also make a wonderful appetizer served with your favorite sweet & sour or BBQ sauce. Any leftover meatloaf or meatballs make a mean sandwich the next day as well. I usually make two recipes and bake both loaves on a large baking sheet so I have enough for sandwiches the next day, LOL.

- In a small bowl, combine ketchup, brown sugar and mustard; set aside.
- In a large bowl, combine 1/3 cup of the ketchup mixture and the remaining ingredients; mix well.

I had some spicy homemade sausage to use and thought some meatballs sounded good! Found a couple recipes and combined. The kids thought it was great! So did the wife and I. Use them in Italian dishes or as appetizers. Would also be good on a meatball sub!

- Line shallow baking dish with foil and oil.
- Combine all ingredients and mix, using enough water to meld.
- Shape into meatballs 1 1/2 to 2 inches in diameter.
- Broil the meatballs 8 inches from broiler for 10 minutes. Turn over meatballs and broil for 10 more minutes.
- I had 50 meatballs so you may have to broil in two batches. I used my Holland grill and cooked them on there which helped eliminate them sitting in the grease.

- Stir the brown sugar, sage, salt, basil, black pepper, onion powder, marjoram, and red pepper flakes together in a small bowl. Place the ground beef in a large bowl; mix the spice blend into the ground beef with your hands until evenly integrated. Refrigerate for 24 hours to let the flavors blend.
- Divide the ground beef mixture into 8 patties.
