HOWEVER, IF USING THE SPICE SPECIFICALLY FOR BARBECUED MEATS OR PHO SOUP, I RECOMMEND LIGHTLY TOASTING THEM FIRST IN A DRY SKILLET OVER MEDIUM HEAT FOR A SMOKY FLAVOR BEFORE THE FINAL GRINDING. YOU MAY SUBSTITUTE THE SZECHUAN PEPPERCORN WITH WHITE PEPPER, WHICH IS A POPULAR BLEND FOR USE IN CHINESE COOKERY. KEEP IN MIND -- "A LITTLE BIT OF FIVE SPICE POWDER GOES A LONG WAY". WHEN SEASONING FOODS, START WITH A SMALL AMOUNT, THEN ADJUST ACCORDINGLY.
- MEASURE all ingredients into a clean spice mill or coffee grinder, whether whole or ground, using pre-ground cinnamon as the only exception: 1 tablespoon cinnamon, 1 tablespoon cloves, 1 tablespoon fennel, 1 tablespoon star anise, 1 tablespoon Szechuan peppercorn.
- GRIND mixture in a clean spice mill or coffee grinder in 15-30 second increments, until mixture is finely powderized.
- Store in an airtight container.
- Use measure-for-measure in any recipe calling for Chinese Five Spice powder.

- Gather the ingredients.
- In a dry skillet or wok, toast the Sichuan peppercorns by shaking the pan over low to medium heat until the aroma of the peppercorns is released. This will take around 3 minutes.
- Grind the toasted peppercorns and the star anise in a blender, pepper mill, or spice grinder .
- Pass the blended seasonings through a fine-mesh strainer so you are left with an even consistency.
- Mix in the ground cloves, ground cinnamon, and ground fennel seeds.
- Place the mixture back into the blender, mill, or spice grinder and grind the spices until very fine.
- Store in an airtight container and keep in a dark, cool space until use.

- My Note: * 1/2 teaspoons salt * 1/4 teaspoons ground white pepper Dont worry about these two ingredients as they are both to taste and are only needed when you are adjusting seasoning to taste. White pepper has a very strong and overpowering flavor. I would even omit the white pepper entirely since this is a -5- spice.

Congratulation for such great effort. No one defines formula in food. But she testify this formula is genuine and popularly used. Individual variations are always present, some add MSG, some fry the Szechwan peppercorn powder more, some dry fry the anise seeds powder more to give more fragrance, etc. Salt & pepper spice simply means add salt and white pepper. Completely agree.

- Combine peppercorns, anise, cloves and fennel seeds in a small skillet. Toss over medium heat about 2 minutes to toast lightly.
- Grind in a coffee grinder or use a mortar and pestle. Add the ground cinnamon. Keep in a sealed container.
- Preheat oven to 375 degrees F.
- Brush tenderloins with soy sauce. Sprinkle with five-spice powder and grated ginger. You can marinate pork overnight in the fridge if desired.
- Heat a large skillet on medium setting and add oil. When pan is hot add the pork and sear on all sides about 3 minutes. Remove from heat and transfer pork to a roasting pan. Finish cooking in the oven for about 15 minutes until done to your liking but still juicy.

Set over medium-low heat and cook, stirring frequently, for about 5 minutes, until very fragrant, popping a tiny bit; some of the fennel seeds should be lightly browned. At that point, pull the skillet off the heat and pour the spices into a bowl to cool. Stir in any ground spices you may be using so may commingle well with the warm, toasted spices.
