HOMEMADE CINNAMON ROLLS RECIPE BY TASTY
Nothing says Sunday morning like a warm, gooey batch of homemade cinnamon rolls. Finish them with a generous topping of frosting, and be prepared to lick brown sugar off your fingers for the rest of the afternoon.

- Generously butter two disposable foil pie/cake pans.
- In a large bowl, whisk together warm milk, melted butter, and granulated sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
- Sprinkle the yeast evenly over the warm mixture and let set for 1 minute.
- Add 4 cups (500g) of all-purpose flour to the milk mixture and mix with a wooden spoon until just combined.
- Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
- After 1 hour, the dough should have nearly doubled in size.
- Remove the towel and add an additional ¾ cup (95g) of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface.
- Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
- Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
- Spread the softened butter evenly over the dough.
- Sprinkle evenly with brown sugar and a generous sprinkling of cinnamon.
- Press the mixture into the butter.
- Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
- Cut the log in half, then divide each half into 7 evenly sized pieces. About 1½ inches (8cm) thick each.
- Place 7 cinnamon rolls in each cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
- Preheat oven to 350˚F (180˚C).
- To prepare the frosting. In a medium-size mixing bowl, whisk together cream cheese, butter, whole milk, vanilla, and powdered sugar, until smooth.
- Remove plastic wrap. Bake the cinnamon rolls in a preheated oven for 25-30 minutes, until golden brown.
- While still warm, drizzle evenly with frosting.

These rolls have been a family favorite since I started baking them more than 35 years ago. They're so easy to do-especially for first-time yeast bakers-because they require no kneading.

- In a small bowl, dissolve yeast in water; set aside. In a large bowl, combine flour, sugar and salt; cut in the butter until crumbly. Add yeast mixture, milk and egg yolks; stir to form a soft dough. Cover and refrigerate 4 hours or overnight. Divide dough in half; roll each half into a 12-in. x 10-in. rectangle. Spread with butter. Combine sugar and cinnamon; sprinkle half over each piece. Roll up, jelly-roll style, starting at the long end. Cut each roll into 12 slices. Place in greased muffin cups. Cover and let rise until doubled, about 1 hour. Bake at 375° for 20-25 minutes or until golden brown. For glaze, cream sugar and butter in a bowl. Add vanilla and milk; beat until smooth. Remove rolls to a wire rack; spread with glaze.

HOMEMADE CINNAMON ROLLS (SCANDINAVIAN STYLE)
Inspired by Scandinavian baking, this version of homemade cinnamon rolls are similar to what you'd find in a bakery in Denmark! These sweet and delicious rolls are glazed with a simple icing making them perfect for a small breakfast, after-dinner dessert, or snack to go with tea or coffee.

- Heat the milk in a pot or in the microwave until it is slightly warm (but not hot or boiling!). Whisk the yeast and the sugar into the milk until the yeast has dissolved. Add the mixture into a large mixing bowl.
- Add the egg, butter, cardamom, and salt into the mixture. Mix everything together using the spiral dough hooks of your electric hand mixer. Slowly add in the flour in small increments and keep mixing for around 5 minutes until the dough forms a ball and doesn't stick to the side of the bowl anymore. The dough should be slightly sticky but not wet. If it's too moist, add a tiny bit more flour.
- Cover the bowl which holds the ball of dough and let it sit in a warm spot until the dough has risen/increased in size (approximately 30 minutes, but it could be longer!).
- In the meantime, prepare the filling by mixing the butter, cinnamon, and brown sugar together into a medium-sized bowl with the normal hooks of your electric mixer. It's important that the butter is soft, but it should not be melted. Ideally, you use a bowl with a mixing cover for this since the cinnamon can make this step slightly messy.
- Next, add some flour onto a smooth surface and thinly roll out the dough into a rectangle. If you want to make 15 cinnamon rolls, one side should be approx. 18 inches long and approx. 1/8 inch thick. Evenly spread the filling on top of the dough using a spatula or a spoon. Be gentle and patient when doing this step so that you don't accidentally rip the dough.
- Start rolling the dough from one of the long edges until it forms a long, tight, sausage. Cut off the uneven ends, then cut the dough into even pieces approx. 1 1/4 inches wide. Carefully place the cinnamon rolls on a baking sheet and press down slightly to flatten them. Let the rolls rest for 20 more minutes.
- In the meantime, preheat the oven to 350 degrees Fahrenheit and also prepare the egg wash by whisking one egg in a small bowl with a fork until it is uniform in color.
- Once the 20 minutes are up, brush the rested cinnamon buns with the egg wash and bake them in the oven for approximately 15 minutes. Since every oven is different, your cook time might vary slightly. The rolls should still be slightly soft but cooked. Remove the cinnamon rolls from the oven and place them on a cooling rack.
- While the rolls are cooling, prepare the glaze by whisking powdered sugar and water together. It's best to add the ingredients a little bit at a time until you reach the desired amount and consistency. It should be quite sticky.
- Once the cinnamon rolls have sufficiently cooled, drizzle the glaze on top (you can get creative here) and allow the glaze to harden. Enjoy!

SCANDINAVIAN TEA RING OR CINNAMON ROLLS

- Cut the cold butter into the flour, sugar & salt using a dough hook in the kitchen aid mixer. Beat the egg yolks and add to the mixture. Stir yeast into warm water to dissolve and add to mixing bowl along with the warm milk. Mix until dough is shiny and in a ball. Place in a bowl that's been sprayed with vegetable spray. Spray the top of the dough and cover with saran wrap. Place in refrigerator overnight.
- Roll dough into rectangular shape and spread on the butter, cinnamon, sugar and nuts. Roll the mixture into a log shape, the thickness will be determined by the bread maker. From a ring bringing the two ends together and pinching together as necessary. Make diagonal cuts approximately 1/2 inch thick all the way around the tea ring. Layer the slices at an angle.
- Allow the dough to rise 3 hours before baking. Set oven at 350 degrees F and bake for 20-30 minutes. The actual duration of time will depend upon the thickness of the ring. (To push this process along turn an oven to 200 degrees F and preheat. When the dough is ready to rise turn off the oven and slide the dough in.) This should cut the rise time at least in half.
- While the tea ring is warm drizzle glaze over the bread and then garnish with additional chopped nuts and/or green and red holiday cherries.

I found this recipe in an old fundraiser church cookbook. These are baked in muffin cups, which I have never attempted to do with cinnamon rolls.

- Soften yeast in warm water.
- Scald milk and set aside to cool.
- Combine flour, salt and sugar in large bowl.
- Cut in margarine with pastry blender.
- Stir in yeast, egg yolks and lukewarm milk. Beat well.
- Chill overnight in refrigerator.
- Divide dough in half. Roll each half to 12x10-inch rectangle.
- Brush with melted margarine.
- Combine 1/4 cup sugar and cinnamon. Sprinkle over dough.
- Starting with 12-inch side, roll jelly-roll fashion.
- Cut into 1-inch slices.
- Place in 24 greased muffin cups.
- Cover; let rise in warm place for 1 hour.
- Bake at 375 degrees for 20 to 25 minutes.
- Combine ingredients for icing. Ice while warm.

FINNISH CINNAMON ROLLS (KORVAPUUSTIT)
Recipe posted in response to a request, and edited once the poster finally conquered her fear of yeast. Finnish korvapuustit are not turned on their side but sit on their bottom - hence step 12! You can of course turn them on their sides too, and call them "kierrepullat" in Finnish instead! Please note that the amount of gluten in flour varies, so use the amount listed here only as a guideline - while it's perfect for me, you might find you need more or less!

- Crumble yeast into a bowl.
- Melt butter, add milk and gently heat the mixture to 37°C.
- Pour over yeast and mix until yeast has dissolved.
- Add salt, sugar, cardamom and stir; add about 200 ml of the flour and stir.
- Add the rest of the flour and knead dough by hand until smooth and elastic, and it no longer sticks to the bowl (this shouldn't take long) nor to your hand (which takes a bit longer).
- Sprinkle some flour on top and cover: let rise for 30 minutes.
- Mix the filling ingredients together.
- Lightly flour the baking board and turn the dough on it.
- Roll dough out to a 40 x 60 cm square.
- Spread the filling on the dough and roll it up tightly, starting from the longer side of the square.
- Cut the roll in 3-4 cm pieces.
- "Open" the pieces by pressing the centre of each piece with a handle of a knife so that the centre is pressed down and the sides spread.
- Place rolls on a parchmented baking sheet, cover and let rise for 30 minutes.
- Brush the rolls with beaten egg.
- Bake at 225 C for about 10 minutes.
- Cover the rolls while cooling.
SWEDISH CINNAMON ROLLS (VEGAN)
These aren't the gooey sickly sort of cinnamon rolls you get at the mall! They're not overly sweet, the sort of thing you would have with tea or coffee in the morning. I came across this "Swedish" version on the blog: http://dieflaschenpost.blogspot.com. I'm not an experienced cinnamon bun baker, this was actually my first attempt. I can see now why they're so popular, because they're quite fun & easy to make. These have a subtle cardamom flavour, which I suppose you could sub with another spice if you choose. The original version didn't include any whole wheat flour...you could adjust to all regular flour if you choose. I tried it with more whole wheat as well as with oil and the results weren't as good. They're very pretty out of the oven, it seems a shame to ice them! Although, took to a school event and did ice them with a simple frosting to please the masses. :) Prep time includes the approximate rising time.

- Warm the soy milk slightly - too hot will kill the yeast, too cool won't activate it -- just about lukewarm is right. In a small bowl stir together the soy milk, the yeast and the teaspoon of sugar. Set aside to let the yeast do it's thing.
- Add the next 7 ingredients (yogurt to 1/4 cup margarine) to a larger bowl and then add in the yeast mixture. Knead for about 10 minutes until a nice soft dough has formed. Cover and let rise in a warm place for about half an hour, until doubled in size.
- Mix the 2 tbsp margarine, 2 tbsp sugar and cinnamon together in another small bowl and set aside.
- Place 12 muffin liners on a baking sheet. Roll the dough into about a 10" x 12" rectangle - as close to square as you can get it.
- Spread the cinnamon sugar mixture evenly over the dough and then roll it up (roll from the longest side). Cut into 1" slices and place each slice in a muffin liner. Cover again and let rise for another hour, should be doubled in size.
- Preheat oven to 425 degrees. Brush the tops of the rolls with soy milk and sprinkle with a touch of sugar. Bake for 10 minutes until golden brown.
