Creamed Coconut Spinach image

Martha's Omani-inspired creamed spinach spices things up with coconut milk, fresh ginger, cumin, and a touch of jalapeno.

Provided by Martha Stewart

Categories     Food & Cooking     Lunch Recipes

Number Of Ingredients 10

3 tablespoons ghee
20 ounces flat-leaf spinach, washed and drained
2 shallots, halved and sliced
1 tablespoon minced fresh ginger
2 teaspoons minced jalapeno chile
2 tablespoons unbleached all-purpose flour
1/2 teaspoon ground cumin
Pinch of sugar
1 cup coconut milk
Kosher salt and freshly ground pepper

Steps:

Stir in flour, cumin, and sugar and cook for 1 minute, then slowly whisk in coconut milk. Bring to a boil, reduce to a simmer, and cook until thickened, 1 to 2 minutes.
  • Stir chopped spinach into coconut mixture and season with salt and pepper.

CURRY-CREAMED SPINACH AND TOFU (OR PORK) WITH POTATO CRUST

Curry-Creamed Spinach and Tofu (or Pork) With Potato Crust image

Coconut milk and yogurt lighten creamed spinach and make it more flavorful, and the addition of tofu or pork turns it into a main course. A crust of thinly sliced potatoes adds a welcome if nontraditional crust.

Provided by Mark Bittman

Categories     easy, weekday, casseroles, appetizer, main course, side dish

Time 45m

Yield 4 servings

Number Of Ingredients 11

Salt
3 pounds spinach, trimmed
2 tablespoon butter
2 teaspoons garam masala or curry powder
¼ teaspoon nutmeg
2 cups coconut milk
½ cup yogurt
1 brick firm or extra-firm tofu, cut into ½-inch cubes, or 12 ounces thinly sliced pork shoulder
1 large russet potato, thinly sliced (with a mandoline if you have one)
2 tablespoons olive oil
Black pepper

Steps:

  • Heat the oven to 425. Bring a large pot of water to boil, and salt it. When the water is boiling, add the spinach, and cook for about a minute. Plunge the spinach into a large bowl of ice water, squeeze the moisture from the leaves and roughly chop them.
  • Put the butter and garam masala (or curry powder) and nutmeg in a large saucepan over medium heat. When the spices are fragrant, add the coconut milk, yogurt, spinach, tofu (or pork) and 1 teaspoon salt. Bring to a boil, and cook, stirring occasionally, until the spinach has absorbed much of the liquid; taste, and adjust the seasoning, and transfer to an ovenproof dish.
  • Toss the potato slices with the oil, and sprinkle with salt and pepper. Lay them over the top of the spinach and tofu (or pork) without overlapping too much. Bake until the potatoes are golden and crisp, 25 to 35 minutes. Scoop into bowls, and serve.

GARLIC BUTTER CREAMED SPINACH SALMON.

Garlic Butter Creamed Spinach Salmon. image

This one skillet salmon is for those nights when you're craving something fancy...ish, but need to keep things quick and easy too. All made in one skillet with heart healthy salmon, shallots, garlic, a touch of creamy coconut milk, parmesan cheese, plenty of fresh baby spinach, and spring herbs. Comes together in less than 30 minutes!

Provided by Tieghan Gerard

Time 25m

Number Of Ingredients 14

4 salmon filets, skin on or off ((your preference))
kosher salt and black pepper
2 tablespoons extra virgin olive oil
2 tablespoons salted butter
1 small shallot, thinly sliced
3 cloves garlic, minced or grated
1/2 teaspoon crushed red pepper flakes
1 cup canned full-fat coconut milk, or heavy cream
2 ounces cream cheese, cubed
1/2 cup grated parmesan cheese
4 cups fresh baby spinach
juice from 1 lemon
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh chives, plus more for serving

Steps:

  • 1. Season the salmon all over with salt and pepper. 2. Heat the olive oil in a large skillet over medium heat. When the oil shimmers, add the salmon, skin side down and cook for 2-3 minutes, until the salmon is crisp. Gently flip, and continue cooking the salmon for another 2-3 minutes, or until the salmon is cooked to your liking. Remove from the skillet. If desired, peel away the skin and discard. 3. To the same skillet, add the butter, shallots, and garlic and cook until the garlic is fragrant, about 2 minutes. Add the crushed red pepper flakes, coconut milk, and cream cheese. Season the sauce with salt and pepper. Bring to a simmer over medium heat, stirring constantly until smooth and creamy. Add the parmesan, and spinach and cook until the spinach is wilted, about 3-5 minutes. Stir in the lemon juice, parsley, and chives. Remove from the heat and slide the salmon back into the sauce. 4. To serve plate each piece of salmon, then spoon the sauce over top. Serve with additional herbs.

  • Defrost spinach during the day, or place frozen spinach balls or blocks in a bowl with hot water for about half an hour to an hour. Strain and squeeze some of the excess liquid out with your hands. Spinach doesn’t need to be dry; it can still have some liquid in it, which will add moisture to the sauce. Roughly slice handfuls of spinach in half.
  • Heat a large frying pan over medium-high heat. Add coconut oil and bring the heat down to medium. Add the onion and salt and sauté for about 8 minutes, stirring a few times, until softened and golden.
  • Add spinach, garlic and curry powder and stir through with the onion for about a minute. Use the spatula to break down the clumps of spinach. Then add coconut cream and lemon juice and stir through for another minute until hot and well incorporated. As spinach is already pre-cooked, you only need a couple of minutes to combine and heat everything together. Taste for salt and season with a little extra if needed.
