EGG, SAUSAGE AND CHEESE BREAKFAST SANDWICH
Breakfast in a bun? Why not! This recipe has all the usual suspects - eggs, sausage, cheese - plus a little spice to kick your morning into high gear.

Steps:
- Preheat oven to 425 degrees F. Toast buns until golden brown.
- Cook sausage patties in a skillet over medium heat until brown.
- While preparing sausage, whisk the eggs together in a bowl and season with salt and pepper.
- In a clean saute pan add 1 tablespoon of olive oil and scramble the eggs till cooked throughout.
- Combine Sriracha sauce and mayonnaise and spread on each side of the buns.
- Place a sausage patty onto the four bottom buns. For each sandwich, top sausage with eggs, cheese and arugula.
- Serve while warm.

- Mix pork, maple syrup, sage, salt, fennel seed, red pepper flakes, garlic powder, onion powder, and anise seed in a large bowl until evenly blended. Shape pork into small patties.
- Heat olive oil in a large skillet over medium heat; fry patties in batches until pork is browned and no longer pink in the center, 4 to 5 minutes per side.

GRILLED SAUSAGE AND EGG BREAKFAST SANDWICHES
Steps:
- Sausage: Heat grill to medium. Combine all ingredients in a bowl, being careful not to overmix. Divide the sausage mixture into 8 (4-ounce) patties. Grill until cooked completely through, about 4 minutes per side. Eggs: Heat grill to medium. Whisk together eggs, salt, pepper, and chives in a medium bowl. Melt the butter in a 9-inch cast iron skillet on the grates of the grill. Add the eggs and stir until soft curds form. Remove from the heat. Assemble: Place bagels, cut side down, on the grill and toast until lightly golden brown, about 45 to 60 seconds. Remove the bagel tops from the grill. Turn the bagel bottoms over and top each with a slice of cheese and let melt, about 30 seconds. Top the cheese with a sausage patty and then divide the eggs among the patties. Top with the bagel tops, close the cover and just let heat through, about 1 minute. Remove from heat and serve immediately. ;
BREAKFAST SAUSAGE AND EGG CHEESEBURGERS

Steps:
- Preheat a grill to medium high.
- Form the sausage meat into 4 patties. Use your thumb to make an indentation in the center of each patty so they don't curl up while cooking. Grill until cooked through or the internal temperature reaches 160 degrees F, 3 to 5 minutes per side, depending on thickness. Add 2 slices of American cheese to each patty and close the grill until melted, about 1 minute.
- Place some avocado slices on the bottom buns and season with pinch of salt. Add a patty, then top with an egg and a few pickled Fresno chiles. Add the top bun and serve.
MAKE AHEAD BREAKFAST SANDWICHES
I started experimenting with breakfast ideas for my husband who is too busy at work to sit down for long to eat. The seasonings, cheese, meat and bread I have listed are just suggestions (my husband's preference). Add veggies if you like! The possibilities are endless! If you want to cut down on the meat and save some money, replace part of the sausage with textured vegetable protein. It will take on the flavor of the sausage and make it a little lower in fat. Just follow the directions on the TVP package to prepare. TVP is usually in the health food section at the store.

Steps:
- Bake biscuits according to package directions.
- While biscuits are baking start browning sausage.
- In a mixing bowl combine eggs dry mustard and pepper.
- Add egg mixture to the browned sausage and cook until eggs are done.
- After biscuits have cooled cut them in half and spread with butter.
- Sprinkle buttered biscuits with garlic salt (DON'T add the salt to the eggs while they are cooking, the salt will make the eggs rubbery).
- Cut cheddar cheese slices into fourths.
- Put one fourth of cheese slice on bottom half of biscuit.
- Spoon a small amount of cooked egg and sausage mixture onto the bottom half of each biscuit (on top of cheese).
- Place another fourth of a cheese slice on top of the egg and sausage mixture (putting the cheese on this way "glues" the sandwich together when it is reheated).
- Place top of biscuit onto sandwich.
- Wrap each sandwich in wax paper and put them in large freezer bags.
- Place them in the freezer.
- To reheat, leave sandwich in wax paper and microwave on high for approximately one minute to a minute and a half.

- 1. Form sausage into 4 patties. Cook in a large, non-stick sprayed skillet over medium-high heat for 3-4 minutes a side, or until golden brown and crisp. Place sausage patties on a paper towel-lined plate to drain the grease.
- 2. Drain fat from skillet then return to stove and turn heat down to medium. Whisk eggs, salt, and pepper in a bowl then pour into the skillet. Cook until top is nearly set but still glossy, then carefully fold eggs over in half. Remove from heat to finish cooking.
- 3. In a small bowl, whisk butter until creamy and smooth. Stir in the maple syrup. Toast the English Muffins.
- 4. To assemble: Spread 1 tablespoon of maple butter on English Muffin, both halves. Place 1 egg on the bottom of a English muffin then top with cooked sausage patty and slice of cheese. Microwave for 20-30 seconds to melt cheese then cap with English muffin top. Continue making other sandwiches. Serve immediately.

- Prepare and shape the sausages as directed and cook in a large skillet (non-stick works well) over medium heat.
- Cook until undersides are browned, about 5 minutes. Flip the patties and cook for about another 5 minutes. Place a slice of cheese on each patty, cover the pan, and cook until the cheese melts, about 1 minute longer. Remove the patties from the pan and set aside until ready to use.
