6 ounces tomato paste ((1 standard can))
1/3 cup apple cider vinegar
1/4 cup pure maple syrup
1/4 cup molasses
2 tablespoons Worcestershire sauce
2 teaspoons smoked paprika
1 teaspoon dry mustard powder
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/8-1/4 teaspoon cayenne pepper ((optional but encouraged))

Steps:

  • In a medium saucepan, stir together all of the ingredients: tomato sauce, tomato paste, apple cider vinegar, maple syrup, molasses, Worcestershire, smoked paprika, dry mustard, garlic, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat.
  • Cover with a lid slightly ajar so that the pot is mostly covered to deter splattering, but steam can still escape and the sauce can reduce. Let cook, stirring occasionally, until the sauce thickens, about 10 to 15 minutes.
  • Taste and adjust seasonings as desired. Enjoy immediately or let cool and store for later use.

  • Add more water to thin the barbecue sauce if it is too thick. I usually add up to ½ cup more water to reach my desired consistency.

  • Heat the oil in a saucepan over medium-low heat. Add the garlic and onions and cook for 5 minutes, stirring, being careful not to burn them. Reduce the heat to low. I guess I would describe it as sweet, spicy and slightly tangy. If you would like it to have a little more kick, you could add 1/4 teaspoon more of chili powder. This sauce is thick and rich, a little bit sweet and a little spicy. This makes a lot, make half the first time you make it, then double it the next time so that you can freeze it in batches, which is what I've done.

3 garlic cloves, minced
1/2 cup vegetable oil

1/2 cup soy sauce
1 cup hoisin sauce

Steps:

  • Whisk together warm water, tomato paste and apple cider vinegar. This important step will help dissolve the tomato paste into the mixture.
  • Add brown sugar, maple syrup, honey, and molasses and combine well. Add the spices and stir to incorporate.
  • Bring to a simmer over medium to high heat. Stir continuously with a wooden spoon so it does not burn.
  • Turn the heat down cook over medium to low heat until the mixture thickens. Continue to stir occasionally with a wooden spoon so the mixture does not burn.
  • The sauce will thicken as it cools. To check the thickness, transfer a small amount to a small cup and place it in the freezer until cool.

In our house, we don't agree on how much barbecue sauce should be added to our pulled chicken. Some like the sauce to be dripping, and I like a minimal amount. This is a simple recipe for pulled chicken, and you may add any amount of barbecue sauce you would like. You could also use this pulled chicken as a protein for a green salad, or a filling for a taco, with a few seasoning tweaks. Or, dice it (instead of pulling it) and use in a mayonnaise-based chicken salad. However you choose to use it, you can start it on the stovetop, finish it in the oven, and have dinner on the table in less than an hour.

3 pounds bone-in chicken breast halves, with skin
salt and ground black pepper to taste
2 tablespoons avocado oil
½ cup barbeque sauce, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pat chicken breasts dry with a paper towel. Season both sides with salt and pepper.
  • Heat oil in a 12-inch, nonstick, oven-safe skillet over medium heat. Add chicken, skin-side down, to the hot oil and cook until lightly browned, 2 to 3 minutes. Turn and brown on the other side, 2 to 3 minutes.
  • Cover the skillet and transfer to the preheated oven. Bake until an instant-read thermometer inserted near the bone reads 160 degrees F (71 degrees C), 25 to 30 minutes.
  • Remove from the oven. Transfer chicken to a cutting board and cover with foil; let sit until cool enough to handle, about 10 minutes. The residual heat will bring the internal temperature to the recommended 165 degrees F (74 degrees C).
