Home-Fried Potatoes with Smoked Paprika image

Pimenton, or smoked paprika, gives these potatoes an unexpected flavor. Any of the several varieties of the spice -- ranging from sweet to hot -- will work well, so take your pick.

1/4 cup plus 1 tablespoon olive oil
3 russet potatoes, cut into 1-inch pieces
Coarse salt
2 onions, sliced into rings
1/2 teaspoon pimenton
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Heat 3 tablespoons oil in a large nonstick skillet over medium-high heat. Cook potatoes, covered, for 5 minutes. Season with salt. Add remaining 2 tablespoons oil and the onions; stir. Reduce heat to medium, and cook, covered, for 5 minutes more. Uncover, and cook, tossing often, until potatoes and onions begin to brown, about 8 minutes.
  • Sprinkle with pimenton, and cook until potatoes and onions are golden brown and tender, about 8 minutes more. Toss with parsley, and season with salt.

1 1/2 pounds small yellow new potatoes
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
1 teaspoon smoked paprika
1/4 cup chopped fresh parsley, plus whole leaves for garnish
1/4 cup aged sherry vinegar
1 heaping teaspoon Dijon mustard
1/2 cup extra-virgin olive oil
Clover honey, optional
1/4 cup grated Parmesan

Steps:

  • Put the potatoes in a pot and cover by 2 inches with cold water. Add 2 tablespoons of salt, bring to a boil and cook until a skewer inserted in the center of a potato meets no resistance, about 20 minutes. Drain well and cool slightly.
  • Preheat a grill to high heat. Halve the potatoes and toss with the canola oil, smoked paprika and some salt and pepper. Grill the potatoes cut-side down until golden brown and crusty, 4 to 5 minutes.
  • While the potatoes are grilling, whisk the vinegar, mustard, parsley and salt and pepper until combined. Slowly whisk in the olive oil. Taste; add a drop or two of honey if desired.
  • Mound the cooked and still warm potatoes in a large shallow bowl. Drizzle with the vinaigrette and top with the Parmesan and parsley leaves.

4 red potatoes
1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, seeded and chopped
2 tablespoons olive oil
1 teaspoon salt
¾ teaspoon paprika
¼ teaspoon ground black pepper
¼ cup chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool cut into 1/2 inch cubes.
  • In a large skillet, heat 1 tablespoon olive oil over medium high heat. Add onion and green pepper. Cook, stirring often, until soft; about 5 minutes. Transfer to a plate and set aside.
  • Pour remaining 2 tablespoons of oil into the skillet and turn heat to medium-high. Add potato cubes, salt, paprika and black pepper. Cook, stirring occasionally, until potatoes are browned; about 10 minutes. Stir in the onions, green peppers and parsley and cook for another minute. Serve hot.

2 pounds potatoes (peeled, cut into wedges)
1 Tablespoon olive oil
1 teaspoon hot smoked paprika
3/4 teaspoon dried parsley
1/4 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • In a small bowl mix together all the spices.
  • Peel the potatoes and cut them into wedges. Place potatoes in a large sauce pan of water. Slowly bring them to a boil and let them cook until about 3/4 of the way done. Drain well, place the potatoes on a very clean kitchen towel. Using another towel, pat as dry as you can get them.
  • Toss potato wedges in olive oil. Add spices, toss gently to coat.
  • Arrange, in one layer, on a baking sheet that's been sprayed with PAM. Bake for 30 minutes, or until potatoes are golden and crisped. Turning once half way through the cooking time.

2 pounds new red potatoes, cut into 3/4-inch pieces
2 tablespoons olive oil, divided
1 Vidalia onion, thinly sliced
1 red bell pepper, sliced
Kosher salt and freshly ground black pepper
1 teaspoon smoked paprika
1 teaspoon Neely's BBQ seasoning
2 tablespoons roughly chopped fresh parsley leaves

Steps:

  • In a saucepan over low heat, add the potatoes and cover with cold water by 2 inches. Simmer until the potatoes are tender, about 6 minutes. Drain the potatoes in a colander and reserve.
  • While the potatoes are cooking, heat a large cast iron skillet over medium-high heat and add 1 tablespoon of the olive oil. Add the onion and peppers and saute until lightly browned, about 5 minutes. Season with salt and pepper, to taste. Remove the vegetables to a bowl and reserve.
  • Into the same skillet, add the remaining 1 tablespoon of olive oil and the potatoes in a single layer. Let cook for 4 to 5 minutes so they form a slight crust. Turn the potatoes and continue to cook for 3 to 4 more minutes. Add the paprika and seasoning and continue to stir until the potatoes are cooked and crisp. Stir in the onion and bell pepper mixture. Season again with salt. Remove to a serving dish and garnish with parsley.
