My mom really likes the DC Chicken Salad at Corner Bakery, so I came up with a copy that tastes as good as the real thing. Enjoy!

1 (1 inch) piece fresh ginger root
1 star anise pod
2 skinless, boneless chicken breast halves
½ cup mayonnaise
⅛ teaspoon salt
1 pinch ground black pepper
1 pinch paprika
½ teaspoon honey
½ cup diced celery
½ cup diced apples
¼ cup diced red onion
¼ cup chopped raisins
¼ cup chopped walnuts
2 teaspoons minced fresh ginger root

Steps:

  • Place the 1-inch piece of ginger and star anise in a pot of water over medium-heat and bring to a boil. Add chicken to the water. Lower heat to medium-low; simmer until chicken is no longer pink the middle, 10 to 12 minutes. Remove to a plate to cool. Once cool to the touch, dice into bite-sized pieces.
  • Make a dressing by whisking together the mayonnaise, salt, pepper, paprika, and honey; set aside.
  • Combine the diced chicken, celery, apple, onion, raisins, walnuts and 2 teaspoons minced ginger in a bowl. Drizzle dressing into the chicken mixture; stir until pieces are evenly coated. Cover and refrigerate overnight.

1 cup mayonnaise
1 teaspoon paprika
1 ½ cups dried cranberries
1 cup chopped celery
2 green onions, chopped
½ cup minced green bell pepper
1 cup chopped pecans
1 teaspoon seasoning salt
ground black pepper to taste

Steps:

  • In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.

1 cup mayonnaise or 1 cup yogurt
1 cup chopped celery

Steps:

  • In a medium bowl, shred the drained chicken.
  • Add and mix the mayo or yogurt, paprika, cranberries, celery, bell pepper, onions and nuts.
  • Add pepper to taste.

1 Tbsp Real Lemon juice
2 cups diced appples
4 cups finely chopped cooked chicken
1 1/2 cups finely chopped celery
1 cup green grapes, cut in half
3/4 cup Kraft Miracle Whip Salad Dressing
1/2 tsp salt
1/4 tsp pepper
1 pkg (8 oz.) Philadelphia Brand Cream Cheese
1/4 cup Kraft Miracle Whip Salad Dressing

Steps:

  • Sprinkle lemon juice over apples. Add chicken, celery, grapes, salad dressing, and seasonings; mix lightly
  • Press mixture into 1 1/2 quart bowl; chill serveral hours. Unmold on serving platter.
  • Combine softened cream cheese and salad dressing until well blended. Frost chicken salad. Garnish as desires.

1 teaspoon seasoned salt
1 teaspoon smoked paprika
1 cup white raisins
1 cup chopped water chestnuts
1 cup chopped pecans
2 green onions, chopped

Steps:

  • Whisk mayonnaise, seasoned salt, and smoked paprika together in a bowl. 8 boneless skinless chicken breasts
1/4 cup butter
1 bag fresh spinach, cooked and well drained
4 ounces cream cheese with herbs (I like Rondele)
1/2 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon nutmeg
2 eggs, beaten
1 package Ritz cracker, crushed (sleeve)

Steps:

  • Melt butter in a 9x13 inch baking dish.
  • Lay 4 chicken breasts, not in the baking dish, and top with 1/4 of the spinach and 1 oz of the cheese on each breast.
  • Place another chicken breast on top of each one and press down.
  • Mix together the flour, salt and nutmeg and then dip the breast"sandwiches" in the mixture, then in the eggs, and then in the cracker crumbs.
  • Place in the baking dish and keep each sandwich from touching.
  • Bake at 500 for 15 minutes, or until completely cooked.
