EASY CHICKEN ROLL UPS
Steps:
- Preheat oven to 375°F.
- Combine soup, milk, broth, flour, garlic powder and salt & pepper to taste. Pour the soup mixture in the bottom of a 9x13" pan.
- Separate crescent roll triangles.
- Divide 1 ½ cups of the cheddar cheese and all of the chicken and broccoli over the crescent rolls.
- Roll each crescent roll and place in the prepared pan.
- Bake 25 minutes. Top with remaining cheese and bake an additional 5-10 minutes.
- Rest 5 minutes before serving.

Steps:
- Flatten chicken to 1/4-inch thickness.
- Place a slice of ham and cheese on each piece of chicken.
- Roll up from a short side and tuck in ends; secure with a toothpick.
- In a shallow bowl, mix crumbs, grated cheese and parsley.
- Pour milk into another bowl.
- Dip chicken rolls in milk, then roll in crumb mixture.
- Wrap and freeze roll-ups for up to 2 months.
- To use frozen chicken--completely thaw in the refrigerator.
- Unwrap roll-ups and place on a greased baking sheet.
- Spritz with nonstick cooking spray.
- Bake uncovered, at 425 degrees for 30 minutes or until juices run clear.

CREAM CHEESE ROLL-UPS

- In a medium bowl, mix together the cream cheese, salsa and onions until fully combined. Spread the tortillas with the mixture, leaving a 1/2-inch edge. Top each with bacon and ham, then roll into tight cylinders and wrap in plastic wrap. Refrigerate for at least one hour. Remove from fridge, discard the plastic wrap and cut each roll into 1-inch pieces, discarding the uneven ends (or eating them while preparing, like I did!). Each roll should yield eight pieces. If you like, before cutting, stick toothpicks in the rolls at 1-inch intervals; it makes serving a snap.

- Put a wrap on a board or plate. Spread the hummus onto the middle of it using a spoon or butter knife.
- Tear up the chicken (or ask a grown-up helper to do this) and put it in a line down the middle of the wrap. Chop the avocado with a butter knife (or ask your helper) and put it next to the chicken.
- Squish the tomatoes onto the wrap by squeezing them and tearing them in half (they might squirt, so mind your clothes). Sprinkle on some cheese.
- Roll up the wrap and press it down firmly. Ask your grown-up helper to cut it in half for you.

CHICKEN ROLL UPS
I had a lady in my church who made this for an activity and they were so good! I asked her for the recipe and they are so easy to make!! I poached my chicken by boiling it for about 10 minutes and they were cooked through. You could also use a left over rotisserie chicken or even canned chicken, although with canned it tends to taste like tuna to me. I also used the Pillsbury Grands biscuits, but found that I would have preferred them smaller, so have listed the regular sized ones here.

Steps:
- Prepare you chicken and shred it finely. I used a food processor and pulsed it a few times to shred it easily.
- Add the shredded chicken to a mixing bowl and add the rest of the ingredients and stir well until creamy.
- Open the can of biscuits and roll out each individual one to flatten them out a bit.
- Spoon a heaping tablespoon of the chicken creamy mixture to the biscuit dough and fold the dough over the filling. It is ok if some of the filling comes out, as it bakes it will set up.
- Bake at 400* for about 15 minutes and the biscuits are golden brown.
- Allow to cool for a few minutes before serving.
- These could be made up in advance and frozen for a few weeks, and heated in a 350* for about 10 minutes.

- Cut the chicken into small strips, or use breast tenders.
- Add the chicken to a large pot, and cover with water.
- boil the chicken for 45 minutes to an hour, or until it is cooked thoroughly.
- Drain the chicken, and after it cools, shred it (remove any fat that is on it).
- Wrap some of the chicken in each crescent roll, and place them in a casserole dish (spray the dish with cooking spray first), and sprinkle the remaining chicken evenly in the pan. Set the pan aside.
- In a medium saucepan, heat the cream of chicken soup, broth, and milk over medium - medium high heat. When it is heated, add the cheese, and stir constantly until it is melted.
- Pour the mixture over the "chicken roll-ups" in the pan, and bake at 350 degrees for 30 minutes, or until the tops of the rolls are slightly brown.
