1 cup sweetened flaked coconut
1 cup all-purpose flour
1 1/4 cups confectioners' sugar
salt, pinch
6 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
4 teaspoons milk

Steps:

  • Grind 1/2 cup of the coconut in food processor.
  • Chop remaining coconut and set aside.
  • Add flour, 1/4 cup of the confectioners' sugar and the salt.
  • Pulse to blend.
  • Add butter and vanilla; pulse until dough comes together.
  • Heat oven to 350 degrees.
  • Roll dough into 1-inch balls.
  • Place dough balls 1 inch apart on an ungreased baking sheet.
  • Bake cookies until firm but tender, 15 minutes.
  • Remove to rack, let cool completely.
  • In small bowl, stir together remaining 1 cup confectioners' sugar and enough milk until smooth but still thick.
  • Dip cookies in glaze (about 1/2 t for each), letting it drip down sides.
  • Dip in chopped coconut and set aside for glaze to dry.

Coconut, cardamom, and condensed milk star in this super quick and easy Indian dessert that's great for gifting.

2 cups flaked coconut
1 (14 ounce) can sweetened condensed milk
2 pinches ground cardamom
2 drops vanilla extract
2 tablespoons semolina flour
½ cup flaked coconut, or more as needed

Steps:

  • Place 2 cups coconut into a pan and heat over low heat until lightly toasted, making sure not to burn or change color, 2 to 3 minutes. Remove from heat.
  • Bring a pot of water to a boil over high heat. Place unopened can of condensed milk into the middle of the pot; boil for 3 to 4 minutes. Remove using tongs; let cool slightly, about 5 minutes. Pour into coconut and add cardamom and vanilla extract. Mix well. Let cool enough to handle, about 5 minutes.
  • Form mixture into small balls using oiled hands, as mixture will be very sticky, adding semolina as needed if very wet and runny.
  • Place remaining coconut into a shallow bowl or on a plate. Roll ladoos in coconut and serve.

While these powdery treats may resemble Mexican wedding cookies or Russian tea cakes, they have a decidedly different flavor, thanks to the chai-inspired combination of Darjeeling tea and warming spices in the batter.

2 cups unbleached all-purpose flour
1 cup almond flour
2 tablespoons best-quality black tea leaves, such as Darjeeling, coarsely ground in a spice grinder or mortar and pestle
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/2 teaspoon ground cardamom
Pinch of ground cloves
2 sticks unsalted butter, room temperature
1/2 cup confectioners' sugar, plus more for rolling
1 teaspoon pure vanilla extract or paste

Steps:

  • Preheat oven to 325 degrees, with racks in upper and lower thirds. In a bowl, whisk together both flours, tea, salt, pepper, and spices. In another bowl, beat butter with sugar on medium speed until light and fluffy, about 3 minutes. Beat in vanilla. Reduce speed to low; gradually add flour mixture, beating just until a dough forms. Roll level tablespoons of dough into balls. Place 1 inch apart on 2 parchment-lined baking sheets.
  • Bake, rotating rack positions once halfway through, until cookies are set and golden on bottoms, 15 to 18 minutes.
  • Let cool on sheets 5 minutes. Roll in confectioners' sugar; let cool completely on a wire rack. Generously coat in more confectioners' sugar before serving, or store in an airtight container at room temperature up to 2 weeks.

This is a modern holiday version of a ladoo which contains mixed peeled fruit, coconut, raisins and the spicy flavours of masala Chai. ¾ cup organic peanut butter, crunchy
¾ cup coconut, dried and unsweetened + extra ½ cup for dusting
½ cup dried cranberries
½ cup almonds, coarsely chopped
¼ cup golden raisins
¼ cup candied mixed peel or red candied cherries, coarsely chopped
¼ cup icing sugar
¼ cup raw honey
2 Tbsp sherry or rum
2 Tbsp ginger powder
2 tsp chai masala (such as Arvinda's Chai Masala)

Steps:

  • In a small bowl, soak raisins in sherry or rum. Set aside.
  • In a medium bowl, add peanut butter and mix well. If consistency is stiff, slightly warm up peanut butter in microwave or on stovetop.
  • Mix in remaining ingredients and combine. Chill in refrigerator for 15-20 minutes. Roll into balls (slightly smaller than walnut size).
  • Place remaining coconut in a small bowl. Dust balls with coconut to garnish. Store in refrigerator.

1 cup unsalted butter, softened
cookie
1 cup confectioners' sugar
1 teaspoon pure lime oil (or 2 T. lime juice)
1 1/2 teaspoons finely grated lime zest
1/4 teaspoon salt
2 cups all-purpose flour
1 cup unsweetened dried shredded coconut
1 cup unsweeteded shredded coconut
1 cup confectioners' sugar, sifted
1 1/2 teaspoons finely grated lime zest
2 tablespoons cornstarch, sifted

Steps:

  • Preheat oven to 350 with racks in the upper and lower thirds.
  • Combine butter and sugar and beat until light and fluffy.
  • Add lime oil; beat to combine.
  • Gently fold in lime zest, salt, flour and coconut. Blend well.
  • Lightly flour hands and roll dough into small,about 1-inch, balls and place about 1 1/2" apart on an ungreased baking sheet.
  • Bake until puffy (not browned)and bottoms are just golden, about 15 minute.
  • Meanwhile, combine coating ingredients in a gallon size plastic bag. While cookies are still warm, toss them in the coating.
  • Remove and transfer to wire rack to cool completely.
