Herbsaint or anise flavored liqueur
1 1/2 ounces rye whiskey
1/2-ounce simple syrup
4 dashes Paychauds bitters

Steps:

  • Pour a little herbsaint into a frozen rocks glass. Swirl around the inside of the glass and then pour out. In a cocktail shaker with ice, combine the remaining ingredients and shake well. Strain into the herbsaint lined glass.

Steps:

  • Combine 2 ounces rye whiskey and a dash each of hibiscus syrup and hibiscus bitters in a cocktail shaker with ice; stir well. Add a dash of absinthe to a chilled rocks glass and swirl to coat. Strain the drink into the glass (add fresh ice, if desired). Garnish with a lemon twist.

1 ounce gin, such as Plymouth
3/4 ounce hibiscus tea
3/4 ounce Simple Syrup, recipe follows
1/2 ounce lemon juice
Lime wedge, for garnish
1 cup sugar

Steps:

  • Put the gin, tea, Simple Syrup and lemon juice in a mixing glass, add large ice and shake vigorously with a cocktail shaker. Taste for balance, strain into a martini or Nick and Nora glass with ice and garnish with a lime wedge.
  • Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

3 dashes Peychaud bitters
3 dashes Angostura bitters
2 ounces bourbon
1 ounce simple syrup or 1 teaspoon sugar
Splash Ricard
Lemon peel garnish

Steps:

  • In an ice-filled mixing glass, stir together 3 dashes Peychaud bitters, 3 dashes Angostura bitters, 2 ounces bourbon, and simple syrup or sugar. Into chilled rocks glasses, add a splash of Ricard, swirl, and pour out. Strain the Sazerac into the chilled rocks glasses. Garnish with lemon peels.

1 sugar cube
2 dashes Peychaud's bitters
2 ounces bourbon
1/4 ounce absinthe
Lemon peel, for garnish

Steps:

  • Muddle the sugar and bitters to a paste in an old-fashioned glass. Fill the glass with ice, add the bourbon and stir for 12 to 15 seconds with a bar spoon or long-handled spoon.
  • In a second old-fashioned glass, add the absinthe, swirl to coat the inside of the glass, then discard the excess absinthe. Strain the bourbon mixture into the absinthe-rinsed glass.
  • Serve without ice, neat. Garnish with a lemon peel.

Rye is absolutely vital in a Sazerac, among the most supernaturally alluring of drinks and frequently a bartender's favorite. Peychaud's bitters, which are made by the Sazerac Company in Louisiana, are asked for here, and are lighter than the more commonly found Angostura variety. If you can't get your hands on some, try using your own favorite bitters. (The New York Times)

  • Coat chilled rocks glass with absinthe. Muddle sugar cube with bitters in a mixing glass; add rye and ice. Stir. Strain into chilled rocks glass. Twist lemon peel over the drink to release oils, then discard twist.
