Steps:
- Whisk the sugar and water in a small saucepan until sugar dissolves. Bring to a simmer, then turn off the heat and add the teabags (or hibiscus flowers). Let steep 20 minutes. Remove teabags or pour through a strainer. Cool syrup completely in the refrigerator until cold. Makes enough for 4 drinks.
- Put about 2 tablespoons salt on a small plate. Run the flesh of a lime wedge over the rim of a glass, then turn the glass upside down on the salt, turning the glass to coat the rim. Fill the glass with ice.
- Pour the mezcal, lime juice and Hibiscus Syrup in an ice-filled cocktail shaker. Shake or stir vigorously until well mixed. Pour over the ice-filled glass. Garnish with a slice of lime. Cheers!

- Prepare the Sugar and Salt Spice Blend by combing the coarse sea salt, the coconut sugar, and the contents of one of the hibiscus tea bags on a plate. Stir to combine. Rub your glasses with a wedge of lime, and then dip each in the Sugar and Salt Spice Blend. Store them in the fridge to chill while you take the following steps.
- Place the warm water in a mug and add the remaining hibiscus tea bag. Add the orange zest. Allow to steep for about 5 minutes, until the water has transformed into a deep shade of red.
- In the meantime, add the tequila, vodka, and lime juice to a cocktail shaker and shake it to stir. Add optional sweetener here, such as agave, maple syrup, or zero-calorie sweetener. If using granulated sugar, stir it in with the lemon juice so it dissolves.
- When the tea is ready and has cooled, use a fine-mesh strainer to strain it into the cocktail shaker. Add the ice and shake it to stir. Pour into prepared glasses, adding additional ice as needed.

- To make the hibiscus tea concentrate, bring 3 cups water to a boil, add hibiscus tea, stir, remove from heat and let steep for 30 minutes.
- Strain into a jar or glass container using a fine mesh strainer and add sweetener to taste. I found 1/3 cup (amount as original recipe is written // adjust if altering batch size) was about the right amount, using half agave nectar, half cane sugar. Stir to dissolve and let cool.
- To make two margaritas, add ice, cooled hibiscus tea concentrate, lime juice, tequila and 1 Tbsp agave nectar (optional // amount as original recipe is written // adjust if altering batch size) to a cocktail shaker and shake vigorously to combine.
- Pour over two glasses with ice. We love this oversized ice cube mold for cocktails. Salt or sugar rim is optional. Garnish with lime wedge. If too strong, dilute with a splash of sparkling water.
