HIBISCUS GIN AND TONIC

Steps:
- Fill an 11-12 ounce glass with ice (the glass I used and is shown in my photos holds 11 ounces)
- Add the gin, syrup and lemon juice
- Next, add the seltzer water
- Stir
- Top with hibiscus flower and add a lemon slice to the glass as a garnish

- Combine 1 1/2 ounces vodka, 3/4 ounce syrup from a jar of hibiscus flowers and 1/2 ounce lime juice in a tall glass; stir to combine. Add ice and top with 3/4 cup chilled tonic water. Garnish with a jarred hibiscus flower.

- Bring 3/4 cup water to a gentle boil in a small saucepan over high. Add tea bag to water, and remove from heat. Steep until desired strength is reached, 5 to 7 minutes. Remove tea bag, and transfer tea to a small heatproof cup; allow to cool, uncovered, at room temperature 10 minutes. Cover and refrigerate until completely chilled, about 40 minutes.
- Gently muddle herb leaves in a mixing glass or cocktail shaker. Add lime juice and maple syrup; muddle until liquid is fully extracted. Stir in 1/4 cup hibiscus tea, gin, and Cocchi Americano. Strain mixture into a rocks glass filled halfway with ice cubes. Add orange bitters, and garnish with lime wheel.

- Combine sugar, hibiscus, ginger, and 1 cup water in a medium saucepan. Bring to a simmer (do not boil) over medium-high, stirring until sugar is dissolved. Remove from heat. Let steep 20 minutes until flavorful and bright.
- Set a fine sieve over a medium heatproof bowl. Strain the mixture into the bowl; discard solids. Refrigerate hibiscus-ginger syrup until chilled, at least 30 minutes.
- Fill the glass with ice. Pour in the Bombay Sapphire, 1 oz. of the hibiscus-ginger syrup, lime juice, and tonic water. Gently stir. Garnish with 1-2 thinly sliced lime rounds.
