- In a large saucepan over low heat, cook and stir sugar and water until sugar is dissolved. Remove from the heat; stir in lemon juice. , Pour into a freezer container. Freeze until mixture becomes slushy, about 4 hours, stirring every 30 minutes. If desired, top servings with lemon slices and mint.

- Place half of the strawberries, ice, powdered sugar and lime juice at a time in food processor. Cover and process until smooth. Pour into loaf pan, 9x5x3 inches. Freeze at least 2 hours or until icy.
- Break strawberry mixture into chunks into bowl. Beat with electric mixer on low speed about 2 minutes or until smooth. Pour back into loaf pan. Freeze about 4 hours or until almost firm. Scoop or spoon into dessert dishes. (If mixture becomes too firm to scoop, remove from freezer about 1 hour before serving.)

- Dissolve sugar in water in a pot over medium heat, whisking while water heats up. As soon as sugar dissolves and water is clear, remove pan from heat. While water is still warm, add lemon zest. Allow to cool to room temperature before adding lemon juice.
- Whisk in lemon juice and lemon extract. Pour into a baking pan about 9x13 inches. Place in freezer until ice starts to form around the edges, about 40 to 45 minutes. Use a fork to stir up ice. Do this every 20 to 30 minutes until lemon ice reaches your preferred texture, 2 1/2 to 3 hours.

- Combine strawberries, 1/3 cup sugar, lemon juice, and lemon zest in a bowl; stir gently. Cover and store in the refrigerator for about 2 hours.
- Meanwhile, mix milk and remaining sugar in a bowl with an electric mixer on low speed until sugar dissolves, about 2 minutes. Stir in heavy cream, vanilla extract, and some juice from the strawberries, but not the berries themselves.
- Add the mixture to an ice cream maker and churn according to manufacturer's instructions, about 20 minutes.
- About 10 minutes before the ice cream is finished, puree most of the strawberries in a food processor or blender; reserve a few berries to slice for a garnish. Add the strawberries to the ice cream maker for the last 5 minutes of churning. Transfer to an airtight container and freeze until firm, about 4 hours.

STRAWBERRY LEMON-LIME MARMALADE
I was going to make Strawberry Lemon Marmalade by Kristal Stygler (recipe #12057) but when I took a closer look I thought it called for more sugar than I would like and be more like jam than marmalade. I came up with this instead and I think it is really delicious. It is definitely a marmalade, but not as strong as some. Sets beautifully, too, from the natural pectin in the citrus fruit and seed. I have also made this with sour cherries instead of the strawberries - also delicious!

Steps:
- Wash the lemon and limes and shred them finely.
- Keep all the seeds from both, and put them in a clean new tea ball, or sew them into a scrap of cheesecloth.
- Put the jars into a large kettle with water to about one inch above the rims.
- Turn on the heat about 25 minutes before the jars will be needed.
- They should boil 10 minutes to be sterilized.
- Put the lemon and lime shreds in a large, broad pot with the water, and the seeds, and boil for ten minutes.
- Wash, hull and slice the strawberries.
- Add the sugar and strawberries to the pot.
- Continue boiling until it is thick and looks inclined to set, about 30 minutes longer.
- Stir regularly.
- Fish out the seeds, draining them well.
- I open the tea ball and press with the back of a spoon.
- Spoon the marmalade in sterilized jars and seal them according to the manufacturer's instruction.
- (Generally, boil lids for 5 minutes.) Process in boiling water for 5 minutes.
STRAWBERRY LEMON SLUSH

- Put 1 cup of water, lemon juice, sugar and 2 cups strawberries in blender container.
- Adjust lid; blend till the berries are pureed and the sugar is completely dissolved.
- In a pitcher combine strawberry mixture with remaining 2 cups water and a few drops of red food coloring; mix well.
- Add crushed ice, sliced strawberries and lemon slices to strawberry mixture in pitcher.
LEMON ICE & MINTY STRAWBERRIES

- To make the lemon ice, tip the lemons into a blender with the sugar and 500ml/18fl oz of water. Blitz everything for a minute or two until the lemon is chopped to a pulp. Strain the juice into a shallowish freezer container, pressing down on the lemon pulp with the back of a large spoon to release as much flavour as possible. Discard the pulp.
- Reserve two tablespoons of the juice in a medium bowl. Cover the rest with cling film and put in the freezer for four hours or until firm. There's no need to wash the blender yet.
- When the juice is frozen, break it into chunks and tip it back into the blender. Blitz until it's a smooth sorbet consistency. Tip it back into the freezer container and return it to the freezer for another 30 minutes to firm up.
- While the ice is freezing, hull and slice the strawberries, roughly chop the mint, then toss them together in the reserved lemon juice.When the ice is scoopable, spoon it into bowls and top with the strawberries.
