Easy Thai Burgers with Peanut Sauce image

2 pounds ground meat (see note; can use a combination of ground beef, ground pork or ground turkey)
2 tablespoons finely minced fresh ginger (or ginger paste)
3 green onions (white and green parts finely chopped)
2 teaspoons chili garlic sauce (use more for added spiciness)
1/2 teaspoon salt (I use coarse, kosher salt)
1/4 teaspoon black pepper (I use coarsely ground pepper)
5-6 burger buns (split and toasted (optional))
1/2 cup creamy peanut butter
5 tablespoons fresh lime juice
3 tablespoons hoisin sauce
1 tablespoon low-sodium soy suace
1 tablespoon toasted sesame oil
1 tablespoon honey
1 teaspoon chili garlic sauce (use more for added spiciness)
2 teaspoons finely minced fresh ginger (or ginger paste)
2 cloves garlic (finely minced (about a teaspoon))
1 cup grated carrots ((about 85-113 grams))
1 cup shredded purple cabbage ((about 85-113 grams))
1 green onion (white and green parts finely chopped)
2 tablespoons fresh lime juice or rice vinegar
1 tablespoon oil
1 teaspoon sugar
Salt and pepper to taste

Steps:

  • Preheat a grill to medium-high heat (can probably use an oven broiler or skillet to pan fry the burgers).
  • For the burgers, add the ground meat, ginger, green onions, chili garlic sauce, salt and pepper to a food processor and pulse until combined. Alternate method: use an electric stand or handheld mixer OR make sure the green onions and ginger are very finely chopped and combine very well with your hands. Shape the meat mixture into 5-6 patties about 1/2-inch thick and slightly larger in diameter than the buns you are using (they'll shrink a bit while cooking).
  • For the peanut sauce, whisk or blend all the ingredients together. The sauce can be made several days in advance and refrigerated.
  • For the slaw, in a medium bowl, toss together the carrots, cabbage and green onion. In a small bowl, whisk together the lime juice (or vinegar), oil, sugar and a pinch of salt and pepper. Toss the vegetables with the dressing and set aside until serving. The slaw can be made several hours (or up to a day) in advance.
  • Grill/cook the burgers until desired doneness (if using ground pork or ground turkey, cook until well done). Assemble the burgers on buns topped with peanut sauce and slaw.

1 tablespoon peanut or vegetable oil
3/4 teaspoon cayenne pepper
1 clove garlic, minced
1/2 cup creamy natural peanut butter
1/4 cup ketchup

Steps:

  • Heat the oil in a small skillet over medium heat, add the cayenne and garlic and cook, stirring, until just golden, about 1 minute. Add the peanut butter, ketchup and 1/2 cup water and stir until combined. Remove from the heat and cool slightly. Serve warm or room temperature.

2 tablespoons hoisin sauce
1 tablespoon soy sauce
1 tablespoon sriracha hot sauce
1 teaspoon fresh lime juice
1 medium clove garlic, grated

Steps:

  • Whisk together the peanut butter, hoisin, soy sauce, sriracha, lime juice and garlic in a medium bowl. Whisk in 4 tablespoons water. The sauce should be a thick enough to coat the back of a spoon but still drip off lightly. Add another tablespoon or two of water if the sauce needs thinning.

1 1/2 teaspoons balsamic vinegar
1 tablespoon soy sauce
1 teaspoon honey
1/2 teaspoon Chinese hot red chili paste
1/2 teaspoon hot chili oil
2 tablespoons red wine
1 teaspoon lime juice or margarita mix
Vegetable oil, to thin if necessary
3 tablespoons water

Steps:

  • In a food processor, place all ingredients except only half the water into the processor and blend until smooth. Add more water and some oil to thin out the sauce when necessary. Taste the sauce, if it is too thick or potent, add more water and more honey. Process until smooth and enjoy as another great dipping sauce for dumplings, wontons and Shu-mai!

We make our burger patties from scratch rather than buying the pre-made supermarket variety, as they're too salty for me. This recipe ramps up the flavour by trading the salt for a variety of either fresh or dried herbs instead. These are good on turkish breadrolls or ciabatta rolls with salad of your choice.

300 g minced beef
1 tablespoon unsalted butter
1 tablespoon fresh parsley, minced
1/4 teaspoon fresh thyme, minced
1/4 teaspoon fresh sage, minced
1/4 teaspoon fresh oregano, minced

Steps:

  • Freeze the butter.
  • Separate out the beef in a mixing bowl so it's grainy.
  • Combine all herbs in a second bowl.
  • Grate the frozen butter into the beef.
  • Mix in herbs, and combine all ingredients loosely.
  • Shape mixture into 4 large round pattiess 1cm thick. Make a depression in the centre of each.
  • Grill patties 7-10 minutes (depending on how well-done you like your burger!).

I adapted this recipe from Food & Wine Magazine to lighten it up a bit. Adding a little oil to the patties kept them nice and moist. The satay-style peanut sauce adds a spicy kick. Since ground chicken can be fairly bland on its own, this was an extremely flavorful way to punch it up.

1 lb ground chicken
1/4 cup red onion, finely diced
2 tablespoons red onions, finely diced
1 1/2 tablespoons olive oil, plus more for brushing
2 teaspoons chili powder
1 teaspoon garam masala
1/4 cup light coconut milk, unsweetened
2 tablespoons natural-style peanut butter (no sugar added)
1 tablespoon hot chili sauce (Sriracha)
2 tablespoons hot water
2 tablespoons salted peanuts, chopped
salt
4 whole wheat rolls, toasted
lettuce, for serving

Steps:

  • Combine the chicken, ¼ cup of chopped onion, 1 tablespoon olive oil, 1 teaspoon chili powder, ½ teaspoon salt and garam masala. Form into 4 patties.
  • In a medium saucepan, heat ½ tablespoon olive oil. Add 2 tablespoons of chopped onion and 1 teaspoon of chili powder. Cook over moderate heat, stirring until onion is softened, about 5 minutes. Add the coconut milk and bring to a boil. Remove from the heat and whisk in the peanut butter, sriracha and hot water. Stir in the peanuts and season with salt.
  • Brush the burger patties with olive oil and cook on a grill or grill pan over moderately high heat until cooked through, about 5 minutes on each side.
  • Spread the peanut sauce on the rolls. Top with burgers and lettuce to serve.

1 medium onion, chopped
2 teaspoons ketchup
2 garlic cloves, minced
1 teaspoon salt

1/4 teaspoon rubbed sage
