GARLIC HERB BUTTER BEEF TENDERLOIN ROAST

Garlic Herb Butter Beef Tenderloin Roast image

This Garlic Herb Butter Beef Tenderloin Roast recipe makes a delectable, melt-in-your-mouth cut of meat that is practically tender enough to cut with a butter knife.

Provided by Amy Nash

Categories     Main Course

Time 40m

Number Of Ingredients 15

2-3 pounds beef tenderloin roast, trimmed and tied
Salt & pepper
1 Tablespoon olive oil
4 Tablespoons salted butter (room temperature)
4 garlic cloves (minced)
2 Tablespoons chopped fresh rosemary
2 Tablespoons chopped fresh thyme
1/2 teaspoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup sour cream
3 Tablespoons prepared horseradish
2 Tablespoons mayonnaise
1/2 teaspoon salt
1 Tablespoon chives (finely chopped)

Steps:

  • Remove the beef tenderloin roast from the fridge and let it sit at room temperature for 1 hour before roasting. Trim the silver skin (a thin, white layer that should be removed before cooking) and tie the beef tenderloin. If one end is more tapered than the other, bend it under the roast and secure it when tying so the roast is an even thickness throughout.
  • Preheat oven to 450 degrees F. Pat the beef tenderloin dry and season by sprinkling with salt and pepper on all sides. Prepare the garlic herb butter by combining the butter, garlic, rosemary, thyme, oregano, salt, and pepper in a bowl and mashing with a fork. Divide in half, setting part of the garlic herb butter aside in a separate bowl for after the roast is done cooking.
  • Heat a large cast iron skillet or heavy pan over medium-high heat. Add the olive oil. When the oil is hot, place the roast into the skillet and let it sear on each of three sides for 2-3 minutes. Turn the roast over with tongs to the final side, then turn off the heat and rub the beef tenderloin all over with half of the garlic herb butter mixture.
  • Transfer the beef tenderloin to the oven in the skillet it was seared in, or place in a roasting pan first if you don't have an oven-safe skillet.
  • Cook for 25-35 minutes, depending on the size of your roast, until an oven-safe meat thermometer inserted into the thickest part of the tenderloin registers between 135 and 140 degrees F for medium doneness. The temperature of the meat will continue to rise another 5 degrees after it is removed from the oven while it is resting before slicing.
  • While the meat cooks, combine all of the ingredients for the horseradish sauce in a bowl and keep in the refrigerator until ready to serve.
  • Remove the beef tenderloin roast from the oven and slather with the reserved garlic herb butter mixture, then let the meat rest 10 minutes before slicing.
  • Serve with horseradish sauce, if desired.

Add the port and vinegar, and bring to a boil. Reduce the heat to medium-low and simmer for 30 minutes or until thickened. Stir in the thyme. Keeps for 1 week stored in the refrigerator in an airtight container

SHOULDER ROAST WITH GARLIC AND HERBS

Shoulder Roast with Garlic and Herbs image

Learn to cook this stunning, flavorful and mouthwatering Shoulder Roast that is easy enough for the novice, but impressive enough for anyone. It is flavored with a Garlic Herb Rub marinade you will love.

Provided by Grow and Behold

Categories     Main

Time 1h20m

Yield 8+

Number Of Ingredients 12

2 cups chopped fresh herbs (such as rosemary, parsley, basil, thyme)
1 head garlic, mashed
½ cup olive oil
1 teaspoon salt
1 tablespoons freshly ground black pepper
1 (4-7 lb.) beef shoulder roast or french roast from Grow & Behold
Olive oil
Reserved garlic/herbs mixture from roast
½ cup red wine
1 tablespoon cornstarch (or matzo meal for Passover)
¼ cup warm water
1-2 cups beef broth, vegetable broth or water

Steps:

  • 1. Mix all Garlic Herb Rub ingredients together and rub all over the shoulder roast. Refrigerate 4-6 hours. 2. When you are ready to cook, let the roast come to room temperature before browning. Scrape off herbs and garlic from the roast into a little dish and set aside. 3. Preheat oven to 250°F. 4. Heat 2-3 tablespoons olive oil in a large skillet or Dutch oven. Place the roast in the pan and cook, undisturbed, 3-4 minutes. Rotate until all sides of the roast are nicely browned (you can do this in a 450°F degree oven, but the sear is much better on the stove top.) Transfer the roast to a roasting pan and put in the oven. 5. Allow 20 minutes per pound, or cook until roast is medium-rare. 6. Allow roast to rest under a loose tent of aluminum foil at least 10 minutes before carving. 7. Remove roast from the Dutch oven and transfer to stove top. Add more olive oil if necessary. Add herb garlic mixture and cook over low heat until garlic is fully caramelized and crispy. It's ok if some of it starts to stick to the pan, but be sure to remove the garlic and herbs before they burn. 8. Deglaze the pan with red wine, scraping up the bits on the bottom as the wine simmers. 9. Mix cornstarch with warm water until dissolved. Add to wine, along with broth/water. Bring to a boil, then reduce heat. Return garlic and herb bits to the pan and simmer to reduce to desired thickness. 10. Slice roast and serve with pan sauce. FILLET OF BEEF

Fillet of beef image

In this wonderfully extravagant showstopper the earthy porcini go hand-in-hand with the garlic, thyme and butter to really kiss the meat as it cooks, creating a flavour-packed meltingly tender treat. Wrapping the fillet in a parcel of prosciutto not only protects it, but also seasons it to perfection as it cooks. Double win!

Provided by Jamie Oliver

Categories     Beef Recipes     Beef     Steak     Potato     Pork     Mushroom

Time 1h15m

Yield 6

Number Of Ingredients 10

1 kg centre fillet of beef, trimmed
20 g dried porcini mushrooms
1 large bulb of garlic
50 g unsalted butter
½ a lemon
olive oil
10 large slices of higher-welfare prosciutto, or Parma ham
4 sprigs of fresh rosemary
4 sprigs of fresh thyme
250 ml red wine

Steps:

  • Preheat the oven to 220ºC/425ºF/gas 7.
  • Get the meat out of the fridge and leave to come up to room temperature before you cook it. Cover the porcini with 300ml of boiling water and leave to rehydrate for 5 minutes.
  • Peel and finely chop 2 of the garlic cloves, then place in a large frying pan on a high heat with a knob of the butter. Add the porcini and half the soaking liquor, then reduce the heat to low and simmer for 5 minutes, or until thick and syrupy.
  • Squeeze in the lemon juice, stir in the remaining butter, and season to taste with sea salt and black pepper. Leave to cool slightly.
  • Drizzle the beef with 1 tablespoon of oil and season with black pepper. Sear in a sturdy roasting tray over a medium heat on the hob until browned all over, then remove from the heat.
  • Lay out the slices of prosciutto on a large piece of greaseproof paper, overlapping them slightly, making a sheet big enough to wrap around the fillet.
  • Spread the mushroom mixture lengthways over one half of the prosciutto, then sit the beef on top. Carefully roll up, tuck in the ends, then discard the paper. Secure with butcher's string.
  • Squash the remaining unpeeled garlic cloves and put into the roasting tray with the herbs, then carefully place the beef on top. Cook in the oven for 25 minutes for rare, 30 to 35 minutes for medium, or 40 minutes for well done.
  • When the time's up, remove the meat to a board to rest for 5 minutes, pouring any juices back into the tray.
  • Transfer the tray to a medium-high heat on the hob, pour in the wine and the remaining porcini soaking liquor (discarding just the last gritty bit) and simmer to your desired consistency, scraping up all the goodness from the bottom of the tray.
  • Remove from the heat, and sieve before serving, if you like - I also like to whisk in an extra knob of butter for maximum silkiness.
  • Carve up the beef and serve drizzled with the red wine sauce - delicious with celeriac and potato mash, and steamed greens.

  • Test Kitchen Tips:• Substitute 1 teaspoon (5 ml) Club House Rosemary Leaves and 1/2 teaspoon (2 ml) Club House Thyme Leaves for the Italian seasoning.• Remove roast from refrigerator 30 minutes before cooking to allow meat to come closer to room temperature. This will allow for more even cooking.• If roast beef looks like it is getting dry in the oven, add 1 inch of water to the bottom of the roasting pan, repeat if necessary.• Carve against the grain for more tender beef. Slicing against the grain or across the muscle fibers makes meat easier to chew.
