COD ROASTED WITH FRESH HERBS
Cod is one of my favorite fish, and we get such wonderful, fresh and inexpensive cod here in Rhode Island. I think the touch of lemon zest in the crust adds a nice lemony flavor mixed in with the breadcrumbs.

Steps:
- Preheat oven to 400 degrees.
- Place bread crumbs in a shallow dish.
- Pile parsley, garlic, lemon zest, and a little salt on the cutting board.
- Finely chop the parsley, garlic, lemon zest, and a little salt, then add mixture to the plain bread crumbs.
- Brush the top of each fillet with olive oil and dip in to the bread crumb herb mixture.
- You can be a little generous here with the crumbs.
- Brush a little bit of olive oil in the bottom of a baking pan then place fillet in the pan, crust side up.
- Roast fillets in oven, about 12-15 minutes or until firm to the touch.

HERBACEOUS BAKED COD WITH SPINACH & WHITE SAUCE
This creamy fish dish will raise your spirits. It's simple to make, but packed with flavor. It does use some butter, but substitutes milk with almond milk. You can add a touch of ground nutmeg for additional flavor. You can also add a teaspoon of smoked paprika to add that smoky and hot taste. Aside from spinach, you can add some baby broccoli and herbs such as dill for freshness. This recipe is great with light white wines. - Preheat the oven to 350 degrees Fahrenheit.
- Portion the fish into 3 servings
- Add oil to a hot cast-iron skillet and sear both sides of the codfish and set aside.
- In the same skillet, add butter and flour and cook until it forms a paste.
- Add the almond milk and stir constantly until thickened.
- Lightly season with salt and pepper.
- Add in the spinach, mix well and arrange the seared fish.
- Bake for 15 minutes and serve immediately.
HERB & GARLIC BAKED COD WITH ROMESCO SAUCE & SPINACH

- Heat oven to 220C/200C fan/ gas 7 and put the fish fillets in a shallow ovenproof dish so they fit quite snugly in a single layer. Mix 1 tbsp rapeseed oil with the thyme and garlic, spoon over the fish, then grate over the lemon zest. Bake for 10-12 mins until the fish is moist and flakes easily when tested.
- Meanwhile, heat the remaining oil in a non-stick pan and fry the pepper and leeks for 5 mins until softened. Add the almonds and cook for 5 mins more. Tip in the tomato purée, 5 tbsp water, the bouillion powder and vinegar, and cook briefly to warm the mixture through.
- Add the juice of up to half a lemon and blitz with a stick blender until it makes a thick, pesto-like sauce. Serve with the fish and the wilted spinach.

WHITE SAUCE WITH SPINACH
Here's an oldie from my collection. I use this when I make veggie lasagna, but I am sure it can be used as a pasta sauce. Easy to make. You can make the sauce richer by subbing whole milk, or by using cream or evaporated milk for part of the skim milk. Sometimes I melt a tablespoon of butter and make a roux with the flour before adding my liquid. Very versatile sauce. Note: Prep time does not include time for spinach to defrost.

- Measure flour into saucepan. Slowly whisk in milk to avoid lumps.
- Cook over medium-high heat until thick and bubbly, making sure you stir constantly. Reduce heat to low-medium.
- Stir in the garlic powder, nutmeg and parmesan. Simmer 1-2 minutes.
- Remove from heat and stir in the spinach. (If you are using for pasta sauce, you may have to warm up the sauce).

- Boil the spaghetti for 10 mins until al dente, adding the spinach for the last 2 mins. Meanwhile, fry the onion in the oil in a large non-stick frying pan with a lid until tender and turning golden. Stir in the chilli and garlic, then add the tomatoes.
- Add the vinegar, capers, olives and paprika with a ladleful of the pasta water. Put the cod fillets on top, then cover the pan and cook for 5-7 mins until the fish just flakes. Drain the pasta and wilted spinach and pile on to plates, then top with the fish and sauce. Sprinkle over some parsley to serve.
