HERB-SEASONED OYSTER CRACKERS SNACK
A crunchy, herbed flavor-filled snack! Prepare in less than 5 minutes; will be ready to eat in one hour. It's even better than any store-bought munchie! Eat this on movie night, or pack in lunches or for a camping trip. You can serve this at picnics, parties, gatherings, showers, weddings, etc: it goes a long way! This recipe is from a co-worker; I asked for the recipe after one bite of these seasoned crackers. Prep time includes 1 hour of marinating.

Steps:
- Pour crackers into a 2 gallon, re-sealable baggie.
- Mix the first 4 ingredients and pour into cracker-filled baggie; shake to coat.
- Set for 1 hour, turning and coating.

PARMESAN OYSTER CRACKERS
Steps:
- Preheat oven to 250 degrees F.
- Chop garlic cloves then sprinkle with some salt and smash to make a paste. Set a large nonstick pan over medium heat. Add butter, oil and garlic and swirl pan. Add oyster crackers and chopped flat-leaf parsley and toss to coat. Spread out on a sheet tray, season with salt and pepper and sprinkle with shredded Parmigiano. Pop into the oven and bake for 25 to 30 minutes until golden and crispy.

Steps:
- Build each cracker base first with an oyster then with a dab of any optional ingredients and top with cheese. I place a metal rack within a small broiler proof dish, keeps the crackers from getting soggy. Place cracker bites on rack.
- Broil till cheese starts to melt - anywhere from 30 seconds to a minute. Eat immediately, doesn't keep.

Steps:
- Preheat oven to 400 degrees.
- Place flour, salt, butter, herbs and pepper in bowl of food processor fitted with steel blade.
- Pulse until combined.
- With motor running, pour 1/4 cup water slowly into feed tube.
- Add a bit more if necessary until mixture begins to hold together but is not sticky.
- Process until dough forms ball.
- Roll dough out on lightly floured surface until very thin, less than 1/8 inch if possible.
- Transfer to ungreased cookie sheet, and prick all over with fork.
- Score lightly with sharp knife if you wish to break into rectangles later on.
- Or leave in free-form shape that you can break into shards.
- Bake 12 to 14 minutes, until lightly browned.
- Cool on rack and store in airtight container.
- Variations: Work small amounts of seeds, herbs or garlic into dough before rolling it out.
- For garlic crackers, add 1/8 teaspoon granulated garlic.
- Or create your own mixture.
HERBED OYSTER CRAKERS
Steps:
- Stir yeast and sugar into warm water in measuring cup and let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.) Stir together 1 1/4 cups flour, thyme, salt, and cayenne, then make a well in center and add yeast mixture and oil, stirring to form a dough.
- Turn out dough onto a lightly floured surface and knead in 2 to 3 tablespoons flour (dough should be moist but not sticky). Knead until smooth and elastic, about 6 minutes, then transfer to a lightly oiled large bowl and let rise, covered with plastic wrap, in a draft-free place at warm room temperature until doubled in bulk, 1 1/2 to 2 hours.
- Preheat oven to 450°F.
- Roll out dough as thin as possible (into an 18-inch square) with a lightly floured rolling pin on a lightly floured surface. Sprinkle with kosher salt and gently press salt to help adhere. Cut dough into 1-inch squares with a pizza wheel or large sharp knife. Transfer with a lightly floured metal spatula to 3 lightly oiled baking sheets, placing squares close together.
- Bake in batches in middle of oven, rotating sheets halfway through baking, until bottoms are golden (tops will remain pale), 6 to 7 minutes. Transfer to a rack to cool completely. (Crackers will crisp as they cool.)
GARLIC OYSTER CRACKERS
I saw the other recipes here for oyster crackers, but I didn't have parmesan, and we don't like dill - so this is how I made them, and they are yummy!

- Carefully open the bag of oyster crackers and add the melted butter, garlic, parsley, and salt right to the bag, fold up and shake to coat all the crackers.
- Place crackers on your baking stone or cookie sheet, and broil the crackers for 5-10 minutes, or to your liking!
