Grilled Chicken with Herbs image

Boneless chicken breasts marinated in herbs, garlic, oil and vinegar and broiled or grilled to perfection. This recipe is from The WEBB Cooks, articles and recipes by Robyn Webb, courtesy of the American Diabetes Association. Preparation time: 10 minutes.

2 tablespoons chopped Italian flat leaf parsley
2 teaspoons fresh rosemary, minced
2 teaspoons chopped fresh thyme
1 teaspoon dried sage
3 cloves garlic, minced
¼ cup olive oil
½ cup balsamic vinegar
salt and pepper to taste
1 ½ pounds skinless, boneless chicken breasts

Steps:

  • In a blender combine the parsley, rosemary, thyme, sage, garlic, oil, vinegar and salt and pepper to taste. Blend together. Place chicken in a nonporous glass dish or bowl and pour blended marinade over the chicken. Cover dish and refrigerate to marinate for at least 2 hours or up to 48 hours.
  • Preheat grill to medium high heat OR set oven to broil.
  • Remove chicken from dish (disposing of leftover marinade) and grill or broil for about 6 to 7 minutes per side, or until chicken is cooked through and no longer pink inside.

1 spatchcocked higher-welfare chicken, about 1.6kg, or 6 chicken breasts
1 bunch summer savory
1 bunch fresh rosemary
8 cloves garlic, skins left on
8 tablespoons extra virgin olive oil
1 thumb-sized piece fresh root ginger
sea salt
freshly ground black pepper
2 lemons, washed and thinly sliced
2 glasses Chardonnay

Steps:

  • Open out the carcass like a book, press flat and place in a roasting tray. In a pestle and mortar or with a rolling pin and a metal bowl, bash and bruise the flavour out of the herbs, squash in the garlic cloves and pour in the olive oil. Mix and rub all over the chicken then lay it out flat, skin-side up, and grate over half the ginger.
  • If you have time, leave it for a couple of hours to marinate.
  • Preheat your oven to 220°C/425°F/gas 7. Season the chicken well after marinating and place it in the preheated over for 30 minutes. Remove and lay the lemon slices over the chicken, then grate the rest of the ginger all over. Tilt the tray and spoon over all the lovely cooking oils before adding the wine to the tray and cooking for another 20 minutes or until nice and golden and cooked through - the juices should run clear. Alternatively, you can use chicken breasts and cook in the preheated oven for 30 minutes.
  • Remove from the oven and rest for 10 minutes before serving.

2 tsp minced onion
2 tsp roasted garlic powder
1/2 tsp black pepper
1/2 tsp coriander
1/2 tsp parsley
1/2 tsp paprika
1/2 cup olive oil
1/4 cup vinegar
2 lbs boneless, skinless chicken breasts

Steps:

  • Mix together sea salt, minced onion, roasted garlic powder, black pepper, coriander, parsley, and paprika.
  • Put the spice mixture, olive oil, and vinegar into a gallon sized ziptop bag. Add two pounds of boneless, skinless, chicken breasts. Toss to coat well, place in the fridge and marinate the chicken for 30 minutes.
  • Grease the grill grates, discard the marinade and grill the chicken over medium high heat for about 5 minutes per side for a total of about 10 minutes or until chicken reaches an internal temperature of 160°F.

1 tablespoon cumin seed
1 tablespoon coriander seed
2 tablespoons green peppercorns (or black)
1 tablespoon ground cardamom
1 cup fresh parsley leaves, and tender stems
1 cup mint leaf
1 cup oregano leaves
5 garlic cloves
2 fresno chilies, chopped
1/3 cup kosher salt
1 cup apple cider vinegar
1/2 cup extra virgin olive oil, divided
whole chicken, halved
1 cup castelvetrano olive, or other green olives, pitted, torn
1/4 cup fresh lemon juice
3/4 cup chopped parsley, plus leaves for serving

Steps:

  • Puree cumin, coriander, peppercorn and cardamom in a blender until very fine. Add parsley, mint, oregano, garlic, fresno, salt, vinegar and ¼ cup oil and puree until a thick pesto like paste forms. Place chicken in a large resealable plastic bag and pour in marinade. Seal bag, pressing out any air. Chill at least 3 hours and up to 24.
  • Prepare a grill for medium-high, indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off). Thoroughly clean grates and brush with oil. Set chickens, skin side up, on grate over indirect heat. Cover grill, placing cover vent (if your grill has one) over chickens so it draws heat up and over them. Grill, rotating chickens as needed so that they color evenly, until skins are lightly browned, 15-20 minutes.
  • Turn chickens and continue to cook, covered, until skins are deep golden brown and crisp and an instant-read thermometer inserted into the thickest part of breasts registers 160°, 20-25 minutes. Transfer chickens to a cutting board and let rest at least 10 minutes before carving.
  • Mix olives, lemon juice, chopped parsley, remaining ¼ cup oil, and any accumulated juices from chicken on the cutting board in a medium bowl. Season with salt.
  • To serve, arrange carved chickens on a platter and top with olive mixture and parsley leaves.

This handy recipe has you pound chicken breasts into even flat paillards which are quick and easy to cook. Then they're cooked in a grill pan and served with a light salad of herbs and sautéed radishes.

4 8-ounce boneless skinless chicken breast halves
Extra-virgin olive oil, for brushing
Coarse salt and freshly ground pepper
1/2 lemon
Herb Salad
Sauteed Radishes

Steps:

  • Place a chicken breast between 2 layers of plastic wrap, and using a meat mallet, pound to a 1/4-inch thickness. Repeat with remaining chicken. Brush both sides of chicken with olive oil, and season with salt and pepper.
  • Preheat a stovetop grill pan over high heat until very hot. Cook chicken until grill marks appear, about 3 minutes. Turn, and continue cooking until browned and cooked through, 2 to 3 minutes more. If cooking in batches, remove from heat and keep warm until serving.
  • Squeeze lemon juice over each chicken breast. Serve warm, topped with herb salad and sauteed radishes.

GRILLED CHICKEN PAILLARD WITH ARUGULA AND SHAVED PECORINO

4 boneless, skinless chicken breast halves
Extra-virgin olive oil
Salt and freshly ground black pepper
1/4 teaspoon garlic powder
Grated zest and juice of 1/2 lemon
1/2 teaspoon grainy mustard
8 cups arugula or mixed greens
Shaved Pecorino Romano cheese

Steps:

  • Preheat an outdoor grill to high. (If you hold your hand about 3 inches from the grill grate, you should have to move it within 3 seconds.)
  • Arrange a chicken breast between two sheets of plastic wrap. Using a meat mallet or small heavy pan, pound the chicken evenly until it is 1/4 inch thick. Remove the plastic wrap and repeat with the remaining chicken breasts; put the paillards on a baking sheet and brush both sides of each piece lightly with oil. In a small bowl, combine 1 teaspoon salt, 1/2 teaspoon pepper and the garlic powder and sprinkle it evenly over both sides of the chicken pieces.
  • Lightly oil the grill grate with an oil-soaked towel. Grill the chicken, turning once, until cooked through and grill marks appear, about 2 minutes per side. Transfer to a clean platter.
  • In a large bowl, whisk the lemon zest and juice, mustard and 2 tablespoons oil until combined; season with salt and pepper to taste. Add the arugula to the bowl and toss to evenly coat.
  • Put a piece of chicken on each of four plates and top with a mound of arugula. Garnish with cheese and more pepper to taste and serve immediately.

• 1 lemon, zested and juiced, 1 tablespoon juice reserved
• 1/4 cup plus 2 tablespoons olive oil
• 1 small shallot, finely chopped
• 1 clove garlic, finely chopped
• 3 tablespoons chopped fresh chives
• 3 tablespoons chopped fresh tarragon leaves
• 3 tablespoons chopped fresh parsley leaves
• Salt, for seasoning
• Pepper, for seasoning
• 1/2 cup white wine
• 1 cup chicken broth
• 1 tablespoon cold butter

Steps:

  • One by one, place the chicken breasts between 2 pieces of plastic wrap, or inside of a resealable plastic bag, and pound with a meat mallet or rolling pin or heavy-bottomed pan until about 1/2-inch thick. In a glass baking dish, combine the zest and all but 1 tablespoon of the lemon juice with 1/4 cup of the olive oil, the shallot, garlic, and a little more than 2 tablespoons of each of the chopped fresh herbs. (Reserve the remaining chopped herbs.) Add the pounded chicken breasts to the herb mixture and turn to coat. Season generously with salt and pepper, cover the dish with plastic wrap, and put in the refrigerator to marinate, at least 20 minutes and up to 1 hour. Heat the remaining 2 tablespoons olive oil in a large saute pan over high heat. Add the chicken breasts to the pan and cook, turning once, until cooked through and golden brown on both sides, about 4 to 5 minutes per side. Cook the breasts 2 at a time if the pan is too small. Transfer to a serving platter and keep warm. Add the remaining 1 tablespoon of lemon juice and the white wine to the pan, scraping to loosen any brown bits, and reduce until almost dry. Add the chicken broth and reduce by half, then off the heat add the reserved herbs and cold butter, swirling to melt the butter and thicken the sauce. Pour over the chicken paillards and serve immediately.
