6 pound Pork Rib Roast (I used a 8 bone roast)
2-3 tablespoons dried rosemary
1-2 tablespoon kosher salt
1/2 tablespoon fresh ground pepper

Steps:

  • Start by bringing the roast to room temperature for 30 minutes.
  • Preheat oven to 400º F.
  • Mix seasonings together in a small bowl. Generously rub the seasoning into the roast.
  • Place roast fat side up on roasting pan equipped with a rack.
  • Roast uncovered for 15 minutes until a golden-brown crust forms.
  • Reduce the heat to 325 º F and continue to roast uncovered for about 1 and a half to 2 hours. This will vary depending on the size of your roast. Pork roast is done when a meat thermometer reaches an internal temperature of 160 degrees Fahrenheit for a well-done roast. For a more rare roast, a temperature of 145º F is a safe temperature.
  • Remove pan from oven and place on cutting board. Let rest for 10 minutes before slicing. This keeps all those tenderizing juices inside the roast.

If you're looking for a celebratory meal for a holiday or special occasion, and you don't want to default to turkey or ham, try a pork rib roast. The rib roast is really the loin or 8 center-cut pork chops still attached together. A French-cut pork rib is one where the meat is removed from the bone, leaving the exposed ribs to make an impressive presentation.

2 tablespoons chopped fresh rosemary
2 tablespoons fresh thyme leaves
2 tablespoons chopped fresh sage
2 tablespoons chopped fresh parsley
⅔ cup coarse fresh breadcrumbs (preferably homemade)
salt and freshly ground black pepper
1 (8-rib) French-cut pork rib roast
salt and freshly ground black pepper
¼ cup Dijon mustard
5 carrots (halved and cut into 3-inch pieces)
5 parsnips (halved, cut into 3-inch pieces)
1 rutabaga (cut into large chunks)
2 pounds fingerling potatoes (halved)
olive oil
½ teaspoon dried thyme

Steps:

  • Pre-heat the oven to 375°F.
  • Combine the rosemary, thyme, sage, parsley and breadcrumbs in a small bowl. Generously season the rib roast with salt and freshly ground black pepper. Spread the Dijon mustard all over and press the herb and breadcrumb mixture on top to cover the top and sides of the roast. Place the roast in a large 12-inch by 15-inch roasting pan and transfer the roast to the oven. Roast at 375ºF for 30 minutes.
  • Toss the carrots, parsnips, rutabaga and fingerling potatoes with olive oil, dried thyme, salt and freshly ground black pepper. Once the pork has roasted for 30 minutes, add the vegetables to the roasting pan around the pork. Continue to roast for another 60 to 90 minutes (depending on the size of your roast), until the internal temperature of the pork reaches 145° on an instant read thermometer inserted into the thickest part. Toss the vegetables a few times during the cooking process to help them cook evenly.
  • Remove the roasting pan from the oven. Transfer the pork to a cutting board and let it rest for at least 20 minutes, loosely tented with foil. Return the vegetables to the oven for another 10 to 15 minutes, until they are cooked to your liking.
  • Slice the roast in between the bones into portions. Shingle the slices on a large platter and arrange the vegetable around them. Pour the jus from the pan over the meat and serve.

1 cup kosher salt
6 tablespoons granulated sugar
8 cloves garlic, smashed
8 bay leaves
3 tablespoons dried juniper berries, lightly crushed
2 tablespoons black peppercorns
1 teaspoon whole cloves
1 6-rib center-cut bone-in pork loin roast (about 5 1/2 pounds), chine bone notched
For the crust:
1 cup panko breadcrumbs
4 tablespoons unsalted butter, at room temperature
1 scallion, cut into 1-inch pieces
1/2 cup fresh parsley
2 tablespoons fresh thyme
2 teaspoons dried juniper berries, lightly crushed
3 tablespoons dijon mustard

Steps:

  • Brine the pork: Combine 4 cups water, the salt, sugar, garlic, bay leaves, juniper berries, peppercorns and cloves in a large pot or wide Dutch oven (large enough to hold the pork). Heat over medium heat, stirring, until the salt and sugar dissolve. Add 8 cups ice cubes; stir occasionally until the brine is cooled.
  • Make small deep cuts, about 2 inches apart, all over the pork and between the ribs using the tip of a paring knife. Add the pork to the pot and submerge in the brine; add more cold water if needed to completely submerge. Refrigerate overnight.
  • Set a rack in a roasting pan and put the pan on the lowest oven rack; preheat to 325 degrees F. Remove the pork from the brine, pat dry and set aside to bring to room temperature. Remove 3 cups brine (along with the spices) to a medium saucepan; bring to a boil. Remove the hot roasting pan from the oven and carefully stand up the pork on the rack with the chine bone down. Add the hot brine to the bottom of the pan. Roast until the fat is mostly rendered, about 40 minutes.
  • Meanwhile, make the crust: Pulse the panko, butter, scallion, parsley, thyme and juniper berries in a food processor until the herbs are coarsely chopped and the mixture is combined.
  • Remove the pork from the oven and reposition so it is meat-side up; brush the top and sides with the mustard, then sprinkle with the panko mixture, patting to adhere. Return to the oven and roast 50 more minutes.
  • Increase the oven temperature to 425 degrees F and continue roasting until the crust is crisp and a thermometer inserted into the center registers 140 degrees F, about 20 more minutes. Remove from the oven, transfer to a cutting board and let rest 20 minutes before carving.

1/2 cup fresh parsley leaves, chopped
1/2 cup fresh rosemary leaves, chopped

1/4 cup vegetable or grapeseed oil

Steps:

  • Preheat the oven to 325 degrees F.
  • To prepare rib roast, remove the excess fat from the bottom of the roast, and then trim the layer of fat from the top rounded side. Save the trimmed fat.
  • In a bowl, mix all the herbs well, and then add the salt and pepper and mix again. Next, add the oil, whisk to mix, and then apply to the exterior of the roast evenly on all sides. Top with the reserved trimmed fat. Roast until the internal temperature reaches 120 degrees F for medium-rare, about 2 1/2 hours. Then allow to rest for 10 minutes before carving.
  • Serve with the pan drippings or sauce if preferred.

8 lbs prime rib roast
1/4 cup fresh rosemary
8 garlic cloves
1/4 teaspoon kosher salt
1/4 teaspoon cracked pepper
1/4 cup vegetable oil
1/2 cup unsalted butter, room temperature
2 tablespoons horseradish
1 lemon, zest
1 garlic clove
fresh thyme
1/4 cup fresh thyme
1/4 teaspoon kosher salt

Steps:

  • Rub the prime rib all over with some veggie oil. Season both sides of the meat with an aggressive amount of salt, including the end caps. You want a generous amount all over so it helps form a crust while cooking. Continue seasoning with some pepper(not as much as the salt), and a good amount of fresh herbs all over the meat. Use a knife to cut slits of the top side(fat side) of the meat. Make the cuts just big enough to stuff the garlic cloves all around. Ideally, let the roast marinate uncovered overnight in the fridge. This will help infuse lots of flavor and help form a great crust. Alternatively, you could let the roast come up to room temperature for 1-1.5 hours with the seasoning on before you cook it.
  • Pre-heat oven to 325 F and setup the oven rack so the roast will sit on the bottom rack. Put the prime rib on a roasting rack in a pan. Insert a probe thermometer in the deepest part of the meat(don't touch the bones), and roast in the oven for 2.5 hours, or until the internal temperature reaches 130 F(120 F for medium rare). You may need to add 1 cup of water to the bottom of the roasting pan if the fat starts to smoke.
  • While the meat is cooking, make the butter by adding all the ingredients to a bowl and mix well. Butter can be made ahead of time and stored in the fridge for 1 week.
  • When the meat reaches 130 F, take it out of the oven and loosely cover it with tin foil. Let rest for 30-60 minutes so the juices can re-distribute. Slice the meat, top it with the butter and enjoy!

1 (5 pound) boneless pork loin
½ cup sugar
1 tablespoon cornstarch
¼ cup vinegar
¼ cup water
2 tablespoons soy sauce

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a bowl, combine sage, salt, pepper, and garlic. Rub thoroughly all over pork. Place pork in an uncovered roasting pan on the middle oven rack.
  • Bake in the preheated oven approximately 3 hours, or until the internal temperature reaches at least 145 degrees F (63 degrees C), depending upon your desired doneness.

1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1 teaspoon minced garlic
3 sprigs fresh parsley (rinsed)
1/3 cup plain breadcrumbs
1 teaspoon dried rosemary
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 325°F Season roast on all sides with salt, pepper and garlic. Place roast on rack in 13x9 inch baking dish. Bake 1 1/2 hours.
  • Meanwhile, chop parsley coarsely. Combine in small bowl with bread crumbs and rosemary; set aside.
  • Remove roast from oven. Coat roast with mustard and then bread crumb mixture. Bake 1 more hour or until internal temperature reaches 145 degrees (medium rare) or up to 170 degrees (well done). Use a meat thermometer to accurately ensure doneness.
