Steps:
- Preheat the oven to 350 degrees F.
- For the cake: Whisk together the sugar, flour, cocoa, baking powder and salt in a bowl. Whisk in the milk, butter and vanilla. Stir together until smooth with a wooden spoon or spatula.
- Pour the batter into an ungreased 9-inch square baking pan. Use an offset spatula to level into pan.
- For the topping: Whisk together the sugars and cocoa and sprinkle it evenly over the batter. Pour the hot water over the top, resist the temptation to stir it into the batter.
- Bake about 30 minutes, you want the center to bubble and look almost set, almost like an undercooked brownie. Take out of the oven and let stand 15 minutes. Serve in dessert dishes, spooning sauce from bottom of pan over top. Serve with mint chocolate chip ice cream, if desired.

Steps:
- Place the chocolate in a medium bowl and set aside. Combine the milk and all but 1 tablespoon of the sugar in a small saucepan. Heat over medium heat, stirring constantly until the sugar is completely dissolved. Stop stirring and cook until the milk begins to bubble around the edge of the pan. Remove the pan from the heat. Whisk together the egg yolk and the remaining 1 tablespoon sugar in a small bowl. Pour half of the hot milk over the yolk mixture, whisking constantly, until the mixture thickens slightly and reaches 183 degrees on an instant-read thermometer. Immediately pour the mixture over the chocolate. Whisk until the chocolate is melted. Add the butter 1/2 tablespoon at a time, whisking until the butter is melted and the mixture is smooth. Whisk in the vanilla. Scrape the batter into a 6-inch round cake pan and smooth the top with a rubber spatula. Cover the pan with a plastic wrap and place it in the freezer for at leas 6 hours, or overnight. To unmold the cake, carefully immerse the pan in hot water for a few seconds. Wipe the bottom and side of the pan dry and invert the cake onto a serving platter. Decorate the top of the cake by running a hot dull knife across its surface in a wave pattern (dip the knife in hot water and wipe completely dry before using it). Lightly dust the top of the cake with sifted cocoa powder. Allow the cake to stand at room temperature for 45 minutes before serving.

- Combine flour, brown sugar, cocoa powder and baking powder in a mixing bowl. Lightly whisk to combine. Add chocolate, walnuts and vanilla extract. To this, add the butter and milk mix while it is hot. Fold well until all the ingredients are combined and the chocolate has melted. It is alright if there still a few chunks of chocolate, it will melt while baking.
- Combine all the ingredients mentioned under sauce and whisk until there are no lumps. Pour it into the pudding dish over the cake batter.

Add the chopped chocolate, butter and vanilla and whisk until the chocolate and butter are melted and incorporated and the pudding is smooth, about 2 minutes. - For the cake: In a large bowl, stir the cake mix, pudding mix, water, oil, eggs, and sour cream until combined well. You can also do this with a mixer. Fold in the 1 1/2 cups chocolate chips.
- Pour mixture into the Bundt pan and bake for 50-60 minutes or until a toothpick comes out clean. My oven cooks fast and it was done after 50 minutes so make sure you start checking it then. Let cake cool 5-10 minutes in the pan and then invert on a plate. Cool completely.
- For the Glaze: In a microwave safe bowl, heat both chocolate chips and the Cool Whip for 2 minutes, stirring every 30 seconds until smooth. The mixture will be a little thin but will thicken a bit as it sets. If you like a thicker glaze add about 1/2 cup or more of powdered sugar and stir until smooth before glazing the cake.

- Prepare the cake mix as instructed on the box, DECREASING the eggs to ONE and swapping the water for milk (for a richer flavor). You will likely be combining the mix with approximately 1 cup milk, 1 egg, and ½ cup vegetable oil. Pour the batter into the prepared pan.
- In a separate bowl, combine sugar, cocoa powder and espresso powder. Sprinkle the sugar mixture evenly over the top of the cake batter. If necessary, gently spread the sugar into a flat layer using the back of a spoon. Slowly and carefully pour the boiling water evenly over the top of the cake batter, do not stir.
- Transfer to the oven and bake for 25-30 minutes, until the cake is cooked through and lightly springs back when you press it. Note: There will be a fudge sauce that has formed and is bubbling up under the cake, so make sure you are checking the cake only for doneness. Place pan on a wire rack to cool slightly. Enjoy warm, scooping the cake into a bowl and spooning sauce over the top.
