8 large potatoes (about 4 pounds), peeled and quartered
1-1/2 teaspoons salt, divided
3/4 cup heavy whipping cream
1/4 cup butter, cubed
1/2 teaspoon minced fresh rosemary
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper

Steps:

  • Place potatoes in a Dutch oven; add 1 teaspoon salt. Cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Drain., Place potatoes in a large bowl. Add the cream, butter, rosemary, nutmeg, pepper and remaining salt; mash until desired consistency.

Calling all potato lovers! These Rosemary Smashed Potatoes are CRAZY crispy on the outside and fluffy on the inside! Baby red potatoes drizzled with olive oil and seasoned with salt and pepper and fresh rosemary. A perfect side dish.

2 pound baby red potatoes
1/4 cup olive oil
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
1 tablespoon rosemary (fresh, chopped (or other herbs you may prefer))

Steps:

  • Bring a pot of salted water to a boil. Add potatoes and cook until fork tender, about 12 to 15 minutes. Drain and leave them in the colander for 5 minutes.
  • Preheat oven to 450 F degrees. Line a baking sheet with parchment paper and drizzle some olive oil over it.
  • Place cooked potatoes on the baking sheet, leaving plenty of room between each potato. You might need two baking sheets, if you don't have a large one, but it depends on how many potatoes you cook.
  • Using a potato masher or fork, gently press down on each potato until it slightly mashes and flattens. Rotate the potato masher 90 degrees and press down again. Brush the tops of each potato generously with more olive oil.
  • Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary.
  • Bake in a 450 degree oven for 20-25 minutes until golden brown.

3 tablespoons olive oil
1 tablespoon minced garlic
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh sage
1 teaspoon chopped fresh thyme
Kosher salt and freshly ground black pepper

Steps:

  • Put a baking sheet in the oven and preheat to 400 degrees F. Put the potatoes, olive oil, garlic, rosemary, sage, thyme and some salt and pepper in a large mixing bowl and toss until the potatoes are well coated.
  • Spread the potatoes on the hot baking sheet (they should sizzle when they hit the pan) and roast until the potatoes are browned and fork-tender, about 40 minutes. Serve warm.

  • Boil the potatoes in lots of salted water until almost cooked all the way through. Drain and leave to cool a bit. Strip the rosemary leaves and mix with the oil, garlic and seasoning in a roasting tray.

  • Preheat the oven to 425 degrees F (220 degrees C). Cover a large baking sheet with parchment paper; do not use waxed paper.

2 1/2 lbs yukon gold potatoes, peeled and cut into 1 inch pieces (5 medium)
1 1/2 teaspoons salt, divided
1/2 cup whipping cream or 1/2 cup half-and-half
1/2 cup milk
2 tablespoons butter
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary
1/8 teaspoon white pepper

Steps:

  • Prepare Roasted Garlic.
  • Place potato pieces in medium saucepan; add water to cover and 1 teaspoon salt.
  • Bring to a boil.
  • Reduce heat; simmer, uncovered, 12 to 15 minutes or until potatoes are tender.
  • Drain potatoes; set aside.
  • Place cream, milk, butter and rosemary in small saucepan; heat over medium-high heat about 3 minutes or until butter melts and mixture simmers, stirring often.
  • Mash potatoes with potato masher until smooth.
  • Add roasted garlic and milk mixture; beat with electric mixer until smooth.
  • Beat in remaining 1/2 teaspoon salt and pepper.

  • Roasted Garlic: Cut off top third of 1 large garlic head to expose cloves; discard top.

6 medium baking potatoes (about 3 lbs.)
1 large head of garlic, bulb (whole)
4 1/2 teaspoons olive oil, divided
1 teaspoon minced fresh rosemary
3/4 cup nonfat milk
3/4 teaspoon salt

Steps:

  • Scrub and pierce potatoes. Bake at 400F for 45-55 minutes or until tender.
  • Meanhwile, remove papery outer skin from garlic bulb (do not peel or separate cloves); cut top off bulb. Place on a piece of heavy-duty foil; drizzle with 1/2 teaspoons of oil. Wrap foil around bulb. Bake at 400F for 30 to 35 minutes or until softened. Cool for 10 minutes.
  • Squeeze softened garlic into a large mixing bowl. Cut potatoes in half; scoop out pulp and add to garlic. Discard potato skins. Mash potatoes.
  • In a small saucepan, saute rosemary in remaining oil for 2 minutes; add to potato mixture.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 inch square baking dish.

  • Place the cubed potatoes in a pot with enough salted water to cover. Bring to a boil, and cook until tender, about 30 minutes; drain. Add butter to drained potatoes to melt; set aside.

  • You'll want to start roasting the garlic 25 minutes before boiling your potatoes.Heat oven to 375ºF. Peel any extra skin off of the garlic bulb leaving only the last outer later of skin (you want to keep the bulb intact). Place the bulb onto a sheet of tin foil (about the size of a dinner plate), and drizzle a bit of olive oil over it. Bring bring the foil together over the garlic bulb to create a tent. Pinch a few edges to secure the tent, and bake for 40 minutes or until the garlic cloves are golden brown and nicely roasted. (Check on it at 25-30 minutes.) When done, remove the bulb from the oven and set aside to cool.
  • Place your peeled and quartered potatoes into a large pot and cover them with cold water. Add a pinch of salt. Place the pot over medium-high heat and bring the potatoes to a boil. Once boiling, bring the heat down to medium-low, cover, and simmer for 15-20 minutes or until the potatoes are fork tender.
  • When the potatoes are ready, drain them, and place them over medium-low heat. Let them sizzle for a few moments to remove any excess moisture. Then, remove from heat.
