HERB CHEVRE FIG SPREAD

From BHG, with a few changes and adjustments. The original recipe called for walnuts but I'm not a fan so replaced with almonds. Serve with toasted baguette slices or crackers.

boiling water
3/4 cup chopped dried fig (about 14 whole figs)
3 ounces crumbled chevre cheese
1/2 cup light sour cream
3 tablespoons fresh basil, snipped
1 tablespoon fresh thyme, snipped
salt, to taste
ground black pepper, to taste
1/2 cup chopped toasted almond, divided
2 tablespoons milk (optional)
fresh thyme (optional)

Steps:

  • In a small bowl pour boiling water over figs to cover; let stand 15 minutes. Drain well.
  • Meanwhile, in a medium bowl stir together chevre, sour cream, basil, and thyme. Season to taste with salt and pepper. Stir in drained figs and 1/4 cup almonds. Thin with milk if needed. Cover and chill in refrigerator up to 24 hours.
  • To serve, transfer spread to a serving bowl. Sprinkle with remaining almonds and fresh thyme (if using).
  • Serve with toasted baguette slices or crackers.

10 ounces dried calimyrna figs, stemmed and cut into 1/4 inch pieces (1 3/4 cups)
3 tablespoons sugar
1 tablespoon fresh lemon juice

Steps:

  • In a med saucepan, combine figs with sugar and 1 1/2 cups water; bring to a boil.
  • Reduce heat; simmer, covered, until most of the liquid has evaporated and figs are easily pierced with the tip of a sharp paring knife, about 20 minutes.
  • Transfer mixture to a food processor; add lemon juice.
  • Puree until smooth (add up to 1/4 cup additional water, if needed, to thin to desired consistency).
  • Store in refrigerator for up to 1 month.

2 tablespoons milk
3 garlic cloves, finely minced
3/4 teaspoon mixed Italian herbs
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon onion powder

Steps:

  • Mix milk and cream cheese together in a medium bowl with an electric mixer or in the bowl of a stand mixer using the paddle attachment until creamy.
  • Add remaining ingredients and mix well, scraping sides of bowl constantly. Place in an airtight container and refrigerate for at least one hour to allow the flavors to blend.
  • Use as cheese dip or spread on crostini, for wraps or wherever else you would use flavored cream cheese.

A tasty spread to serve with assorted crackers. Do not use oil-packed sun dried tomatoes. Cook time is chill time.

1/3 cup sun-dried tomato (not oil-packed)
boiling water
4 ounces soft fresh goat cheese (chevre)
4 ounces neufchatel cheese, softened
1/4 cup fresh basil, finely chopped (or 2 teaspoons dried basil, crushed)
3 garlic cloves, peeled and minced
1/8 teaspoon ground black pepper
2 -3 tablespoons milk

Steps:

  • In a small bowl, cover tomatoes with boiling water. Let stand 10 minutes. Drain and discard liquid. Finely chop tomatoes.
  • In a medium bowl, stir together tomatoes, cheeses, basil, garlic and pepper. Stir in enough milk to reach a spreading consistency.
  • Cover and chill for at least 2 hours (up to 8 hours).
  • Serve with assorted crackers.

5 ounces (about 3/4 cup) soft fresh goat cheese, room temperature
2 teaspoons chopped fresh thyme
2 teaspoons grated lemon peel
1 garlic clove, minced
5 teaspoons olive oil
16 French-bread baguette slices, toasted

Steps:

  • Place goat cheese in small bowl. Mix thyme, lemon peel and garlic in another small bowl; season with ground black pepper. Mix half of thyme mixture into goat cheese. Add olive oil to remaining half of thyme mixture. Form cheese into 2 1/2-inch round; flatten slightly. Place in center of plate. Spoon oil-thyme mixture over top of cheese. Surround cheese with baguette slices and serve.

3 tablespoons finely chopped fresh Italian parsley leaves
2 1/2 teaspoons finely chopped fresh thyme leaves
2 teaspoons finely chopped fresh rosemary leaves
1 teaspoon lemon zest
1 teaspoon coarsely cracked black pepper
1/4 teaspoon salt
1 11-ounce log soft fresh goat cheese
1 1/2 tablespoons extra-virgin olive oil or Meyer lemon olive oil
Fresh herb sprigs, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy baking sheets. Drizzle 3 tablespoons of olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 10 minutes.
  • Meanwhile, stir the herbs, lemon zest, pepper, and salt in a medium bowl to blend. Using about 2 teaspoons of cheese for each, form the goat cheese into 1-inch diameter balls. Roll the cheese balls in the herb mixture to coat completely. Arrange the cheese balls on a platter. Drizzle the extra-virgin olive oil over and around the cheese balls. Serve with the crostini. Garnish with herb sprigs.
  • The crostini and cheese balls can be prepared 1 day ahead. Store the crostini in an airtight container at room temperature. Cover and refrigerate the cheese balls.

Steps:

  • Preheat the oven broiler for high heat.
  • Place the fig halves, cut side up, on a baking sheet. Top each half with about 1/2 teaspoon goat cheese. Place one almond on each, press to push the cheese slightly into each fig.
