- Cut roast in half; rub with 2 tablespoons vinegar. Combine the salt, garlic powder and pepper; rub over meat. In a large skillet, brown roast in oil on all sides. - Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
- Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). - Heat 2 tbsp sunflower oil in a large pan. Dust 1½ kg rolled beef brisket with 2 tbsp plain flour and season well with salt and pepper.
- Put 3 chopped carrots, 3 chopped celery sticks, 2 chopped parsnips, 1 chopped onion and 80g button mushrooms in the bottom of your slow cooker and turn it to Low.
- Sear the beef all over in the hot pan then place it on top of the vegetables in the slow cooker.
- Add the 2 bay leaves, 2 crushed garlic cloves and 2 tsp English mustard then pour over 500ml red wine and 250ml beef stock. Cover with the lid and cook for 7 hours.

- Set up your slow cooker
- Prepare your pork shoulder by removing the skin and fat layer as best you can
- Place the roast in a large dish
- Combine the spice rub ingredients of cajun spice mix, paprika, salt and pepper
- Drizzle over the olive oil and rub into the meat with your hands on all sides
- Pour over the spice rub and massage this into all sides of the meat until fully covered
- In a frying pan add the second measure of olive oil and once heated add the pork roast and begin to sear the outside of the pork, turning to ensure each side is browned but not burnt to lock in the flavour of the spices.
- Remove and place pork into the slow cooker bowl
- Clean out your frying pan or wipe with a paper towel and add the butter and melt on a medium heat
- Once the butter has melted add the crushed garlic and cook for a minute until it begins to go golden brown and aromatic.
- Then add the honey, cider vinegar, chicken stock, salt and pepper, mix with a whisk to combine.
- Bring this mixture to the boil, and once boiling allow this to simmer for 1 minute
- Carefully pour this mixture over the pork shoulder
- Cover and cook on low for 10 hours, until the pork is tender, or until the pork shoulder reaches 65C internal temp, turning once during cooking
- Once cooked remove the pork roast from the slow cooker and cover in foil to rest
- Drain the juices through a sieve into a frying pan.
- In a small cup add the cornflour and a few tablespoons of the juices and mix well
- Pour this back into the frying pan and bring the mixture to the boil
- Continue to boil for at least six minutes until the mixture thickens, it can take longer, you ideally want it near runny honey texture, it will also thicken upon standing
- Remove the gravy from the heat and transfer to a pouring jug
- Serve thick slices of the Roast pork with sides of your choice, and smother in lashings of the gravy sauce
- Enjoy!

This recipe is just so good. The roast comes out nice a tender with great gravy. I got this recipe from the 150 best slow cooker recipes, by Judith Finlayson. I have made 3 things out of this book at the time being and every thing is very good. I will post more as I come by my favs. REMEMBER: That you should know your slow cooker. Slow cookers vary in cooking speed, hence the reason why there is a gap in cooking time. Enjoy.

- In a large Dutch oven or large pot (not nonstick,) heat up 2 TB olive oil over medium-high heat. Once oil is hot, brown half of the beef pieces on all sides. Repeat with other 2 TB olive oil and remaining pieces of beef. Transfer beef to slow cooker and set aside.
- In the original Dutch oven/large pot, add the carrots, celery, onion, and garlic over medium high heat. Stir/cook 5 minutes. Transfer mixture to the slow cooker. Pour wine into the Dutch oven/large pot and deglaze over medium heat, scraping any leftover bits from the bottom of pot. Reduce to simmer, and simmer about 4 minutes or until liquid is almost reduced by half. Add wine mixture to the slow cooker. Add bay leaves. Fill slow cooker with broth and cook 12 hours on low or 6 hours on high.
- Transfer meat and veggies to a serving platter and keep warm; skim fat off the liquid in slow cooker. In a saucepan, stir tomato paste for 1 minute over medium heat. Add the liquid from slow cooker and whisk until combined. Add kosher salt and pepper to taste. Add dissolved corn starch mixture to the liquid; bring to a boil and stir until thickened to a gravy consistency. Pour gravy over the pot roast with veggies. Garnish with parsley if desired. Serve with rice, buttered noodles, crusty bread, or potatoes.

- Season 1½ pounds cubed bottom round roast with 1 tsp. salt and ½ tsp. pepper. Melt 1 Tbsp. unsalted butter in a skillet over medium-high heat, then add the beef. Allow it to sear for 4 minutes on each side to give it a caramelized coating. Once seared, add the beef tips to your slow cooker. Top with 1 sliced yellow onion, 5-6 peeled whole garlic cloves, and ¼ tsp. dried or 1 sprig fresh thyme.
- Reduce the heat of the skillet to medium and melt ½ tablespoon unsalted butter. Add 8 ounces sliced mushrooms with a pinch of salt and stir to coat with the butter. Saute for 5 minutes, until the mushrooms are soft. Stir occasionally, scraping up the brown bits from the bottom of the pan.
- Add water and beef base to the skillet and stir to combine. Then, add the contents of the skillet to the slow cooker with your beef tips. Cover your crockpot and cook on low for 5 hours, or on high for 2½ hours, until the beef is fork-tender. If you have more time, you can cook for 6 hours for even greater flavor.
- Finally, once the beef tips are done cooking, combine 1 tablespoon red wine with 1 tablespoon cornstarch and add it to the slow cooker. Turn heat up to high and cook for 20 minutes to thicken the gravy. Alternatively, add the gravy to a skillet over medium heat along with cornstarch and red wine, and heat until thickened (this only takes a minute or two). Serve over mashed potatoes, rice, egg noodles, or roasted vegetables, and enjoy!
