Steps:
- Preheat the oven to 350 degrees F. Combine the cake mix, oil, eggs, and extract (if using) in a mixing bowl. Beat on medium speed with an electric mixer until smooth. Stir in any add-ins by hand. Drop the cookie batter by spoonfuls onto an ungreased cookie sheet about 2-inches apart. Place the baking sheet in the oven and bake at 350 degrees F for 8-10 minutes. Remove from the oven and let cool on the cookie sheet for 3 minutes then remove to a cooling rack. Store the cookies in an airtight container at room temperature.
ANY FLAVOR CAKE MIX COOKIES
Very simple recipe to turn your favorite flavor cake mix into perfect cookies! (You know, the kind with a nice cracked pattern on top, and a tiny bit of almost under done center). We went on a diet so I no longer keep white flour in the house, however a single cake mix managed to elude me. I found it when I was looking for something to bring to church. Now I keep a cake mix for bringing cookies, it's a lot less dangerous than a bag of flour! (Its best with a mix that has pudding in it for chewiness; you can also use the dry ingredients from your favorite from scratch recipe).

Steps:
- Toss all ingredients into a bowl, using enough Crisco to form a stiff dough. (I found it to take less time than pulling my mixer out, so I mix by hand).
- Form into little balls, place on a baking sheet 2 inches apart, gently flatten the balls, and bake at 350°F for 8-10 minutes, till puffy, and just barely golden around the edges. (They do spread a little while baking).
- Remove from heat, cool 5 minutes before removing to a rack to cool. (Okay, I didn't use a rack the second time, they still turned out great!) They will shrink down a little in height and form a perfect cookie!
HELOISE'S CAKE MIX COOKIES
Fast and easy when you don't have enough time to prepare cookies from scratch. If you mix them by hand, they will be flatter and more like a cookie. If you use a mixer, they will be puffier and more like cake. The cake-like version is good with a simple confectioner sugar & milk (or juice if you used an orange or lemon cake mix) glaze.

Steps:
- 1. preheat oven to 350
- 2. mix ONLY ingredients listed above (do NOT follow ANY directions on the cake mix box)
- 3. optional additions.... 1/4 to 1/2 cup chocolate or peanut butter chips, chopped nuts, raisins or whatever "extra" you and your family likes.
- 4. place dough by teaspoonsful on an ungreased cookie sheet about 2 inches apart, and bake for 8 to 10 minutes. Let cool and enjoy.
- 5. ****my variation**** roll cookie dough into teaspoon scooped balls, dip tops in sugar, put on baking (pizza) STONE and bake for 10 to 12 minutes, let stand 1 minute before removing from stone. Cool and Enjoy =)
