HEIRLOOM TOMATO, MOZZARELLA AND BASIL SIDE DISH
This is a 5 minute "recipe". It's so simple it's silly. We came up with the idea when planning the food for my wedding last summer. We did all the cooking for 100 ourselves and really had no way to use my stove on the big day. Everything we served, except the salmon on the outdoor bbq, was a cold dish. The challenge we had was coming up with a vegetable "side" dish, that wasn't a salad to go with the salmon. This was the perfect answer. It was a huge hit. I think the key was using fabulous heirloom tomatoes, if you can't get heirlooms, use the best tastiest tomatoes you can. Using "buffalo mozzarella" is great if you have it. This recipe is just for 2 servings...it's obviously easy to adjust! You do need a knife and fork for this. Enjoy!!

Steps:
- Cut the tomato in half. If tomato will not sit flat, take a small thin slice off of the bottom.
- Place 1 piece of mozzarella on top of each tomato half.
- Chiffonade the basil into thin strips and place 1/2 the basil on top of the mozzarella.
- Drizzle with olive oil and balsamic (no need to pre-mix the two together) over the tomato/mozzarella/basil.
- Serve with salt to taste (we let guests add their own).

BAKED PARMESAN BASIL HEIRLOOM TOMATOES
These juicy heirloom tomatoes are covered in TONS of gooey cheese and fresh basil for one super-simple AND healthier summer side dish! You won't be able to resist eating them straight off the sheet.

Steps:
- Place tomatoes in a single layer on a greased baking sheet and brush with olive oil. Sprinkle cheeses evenly over tomatoes and season with salt and pepper.
- Broil tomatoes on high heat 3-4 minutes or until tomatoes are blistered slightly and cheese is bubbly and golden. Remove tomatoes from oven and sprinkle with fresh basil. Serve immediately while warm. Enjoy!

- Whisk together vinegar, mustard, salt, sugar, and pepper in a large bowl. Add oil in a slow stream, whisking constantly until dressing is emulsified. Add tomatoes, mozzarella, and basil and toss well. Season with salt and pepper.
TOMATO SALAD WITH BASIL AND BALSAMIC
Steps:
- Combine tomatoes, onion and basil in a bowl.
- In a separate bowl or jar, whisk or shake together olive oil and vinegar. Pour over tomatoes and toss to coat. Season with salt and pepper, to taste.
- Serve immediately, or allow the salad to marinate for about 30 minutes - 1 hour at room temperature or in the fridge (if you prefer a cold salad).

Steps:
- Preheat oven to 375 degrees.
- In the bowl of a food processor, add drained tomatoes, 1 cup basil leaves, olive oil and 2 garlic cloves.
- Pulse until smooth, but somewhat chunky.
- Season with salt and pepper.
- On a baking sheet, line up baguette slices.
- Toast in oven for about 3 minutes or until light golden brown.
- Workking quickly, rub the remaining garlic on the toasted side of each slice and then lay a piece of mozzarella cheese on top.
- Place bread back in oven and melt cheesel slightly, about 45 seconds.
- Remove from oven and spread 1 T of the tomato mixture on each piece.
- Place bruschetta on a decorative platter and garnish with basil leaves.
