Veggie Meatloaf with Mushrooms and Sun-Dried Tomatoes image

This meatloaf is full of deep, warming flavors, including mushrooms, caramelized onions, cheese, and pungent sun-dried tomatoes. Served over a bed of baby spinach, it's a perfectly satisfying meal that includes plenty of nutritious vegetables.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons butter, at room temperature
1 cup breadcrumbs, plus more for coating ramekins
4 ounces sun-dried tomatoes
1 cup warm water
2 eggs
3 tablespoons olive oil
1 yellow onion, diced
2 cloves garlic, minced
1 pound mix of portobello and cremini mushrooms, trimmed and finely chopped in a food processor
Kosher salt and freshly ground pepper
4 ounces Cheddar, grated
8 ounces baby spinach leaves, for serving

Steps:

  • 1. Preheat the oven to 350 degrees F. Butter 4 (8-ounce) ramekins and lightly coat with breadcrumbs.
  • 2. Soak the sun-dried tomatoes in the water until soft. Remove the tomatoes and coarsely chop. In a large bowl, whisk together the eggs and soaking water, and add the breadcrumbs. Set aside.
  • 3. Heat a large skillet over medium-high heat, add the olive oil, followed by the onions. Cook until brown, stirring frequently, about 10 minutes. Add the garlic, mushrooms, and sun-dried tomatoes and cook until the liquid from the mushrooms has evaporated, about 15 minutes. Stir in 1 1/2 teaspoons salt and 1 teaspoon pepper. Transfer the vegetables to a large bowl to cool.
  • 4. Add the breadcrumb mixture and the grated cheese to the vegetables and mix well with your hands. Evenly distribute the mixture among the coated ramekins. Place on a baking sheet and bake for 30 minutes. Let cool slightly, then run a knife around the edges of the ramekins.
  • 5. Toss the spinach in a hot skillet just until wilted and divide among 4 serving plates. Invert the meatloaf onto the spinach. Serve immediately.

ROAST MEAT LOAF OR "HEDGEHOG"

Roast Meat Loaf or

Provided by Food Network

Categories     main-dish

Time 2h15m

Yield 10 to 12 servings

Number Of Ingredients 18

8 ounces mushrooms, sliced
Butter
Salt
Freshly ground black pepper
Grated nutmeg
8 ounces chicken livers
1 pound each ground beef, ground pork, ground veal
1 pound sausage meat
1 large onion, grated
3 fat cloves garlic, crushed to a paste
10 juniper berries, crushed
1 teaspoon ground allspice
Fresh thyme sprigs
1 to 2 eggs
8 ounces unsmoked bacon
Bay leaves
Branches of fresh rosemary
Tomato sauce, for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • Saute the mushrooms in butter until the juices run, then season with salt and pepper and nutmeg. Reserve.
  • Remove the sinews from the livers and slice. In a large bowl combine all the ground meats, sausage, livers, onion, garlic, and juniper berries. Add the allspice and thyme leaves. Season with salt and pepper. Beat the eggs and add to the mixture together with the mushrooms. Mix with your hands thoroughly.
  • Oil a roasting pan and place all the mixture in it, molding it into an oval shape. Adorn with the bacon slices, criss-crossed, tucking the ends under the meat. Strew some bay leaves and branches of rosemary on the top and sides. Cook in the preheated oven for 15 minutes, then lower the heat to 350 degrees and cook for 1 1/2 hours.
  • When cooked, there will be lots of lovely juices in the bottom of the pan. Save them to flavor soup, stocks, or eggs. Remove the loaf and place on a serving dish. Serve hot or cold with a tomato sauce.
  • For children, you might like to turn it into a hedgehog by pressing almonds into the meat to create prickles and placing 3 olives to form eyes and a nose. This should be done before the meat goes into the oven.

  • Poultry-based dry cat biscuits. Poutry-based dry cat biscuits are the staple diet of most hedgehogs kept as pets. Using the indoor variety of dry cat biscuits is highly recommended as this has low fat and just about the right mix of protein.
  • Wet cat food. Wet cat food is cat food in tins and should only be given in moderation as the protein content of this type of food is not substantial enough for pygmy hedgehogs.
  • Cooked Eggs. We’ve given our hedgehog scrambled egg on occasion and he’s not shown any adverse effect to it. We’d made it by cracking an egg on a microwaveable plate and then cooking it according to recommended microwave timings.
  • Lean meats. Lean meats like Chicken and Turkey are great for pygmy hedgehogs as long as nothing else is added like oils, seasoning or dairy products like butter.
  • Insects. Insects are favourite of pygmy hedgehogs, as they have evolved to be primarily insectivores. Care should be taken to ensure they are only fed these in moderation, as the phosphorus levels in insects, can build up in the hedgehog leading to bone problems.
  • Fruit. Pygmy hedgehogs can eat certain fruits in moderation as fruit can contain a lot of sugar, leading to glucose spikes. Bananas. Pygmy hedgehogs will eat bananas but care should be taken to not give them overripe bananas.
  • Vegetables. Certain vegetables can be given to pygmy hedgehogs but they find these more difficult to digest than fruits. Broccoli. We have occasionally given Hynee Broccoli which has been cooked by steaming and been left to cool.
