Ingredients

1/3 cup olive oil
2 tablespoons sugar
2 tablespoons red wine vinegar
2 tablespoons red wine, optional
1 tsp. salt
1/2 tsp.freshly ground black pepper
1/4 tsp. dry mustard
4 cups shredded red cabbage
1 6 oz. pkg. dried cranberries
1/4-1/2 medium red onion, thinly sliced

Steps:

1. For Vinaigrette: In screw top jar, combine oil, sugar, vinegar, wine (if using), salt, pepper and mustard. Cover and shake well.
2. In large bowl, toss together cabbage, cranberries and onion. Pour vinaigrette over cabbage mixture; toss gently to coat.
3. Cover and chill for 2-24 hours. Makes 6 servings.

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by June (Schaeffer) Houtz. Cooking time doesn't include 4 hour chilling.

Ingredients

2 1/2 cups cabbage, shredded
2 cups green pepper rings
2 cups onion rings
3/4 cup sugar
1 tablespoon sugar
1 teaspoon dry mustard
1 teaspoon celery seed
1 tablespoon salt
1 cup white vinegar
3/4 cup vegetable oil

Steps:

In a large bowl, layer the cabbage, pepper and onion rings.
Sprinkle 3/4 cup sugar over mixture.
In a saucepan combine 1 tablespoon sugar and remaining ingredients. Mix well and heat to boiling.
Pour hot mixture over the slaw.
Cover with foil or plastic wrap and refrigerate for 4 hours.
Toss before serving.
