- 1. Preheat Oven @ 325 degrees. Note: (do not grease Cookie sheets) WHIP butter Until Light & Fluffy. Add Flavoring, Whip well
- 2. Add Pdr Sugar, Cornstarch, Flour & Salt, Mixing Completely
- 3. Fill your Cookie Press, &, or Drop by teaspoons on to Ungreased Cookie Sheet. (Optional) Cherries, Nuts, & Sprinkles can be added Now, then baked.
- 4. Bake @ 325 Degrees for 8-10 Minutes. ( Do not let these Brown)

- Preheat oven to 325°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the egg and vanilla. Gradually add flour. Roll dough into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly with fingers. , Bake until edges are golden brown, 17-20 minutes. Cool for 2 minutes before removing to wire racks to cool completely. Dust with confectioners' sugar.

CRISP CHOCOLATE COOKIES FOR 100 BY FREDA
Great Recipe for Large Groups, Schools, Church gatherings or Potlucks, & Picnics, or Just to Freeze. . . and Who doesn't Enjoy Chocolate?? These are a slice Chill and bake recipe and a crispy cookie. also great with icing in the center of two cookies. NOTE:You will need a commercial Mixer for this recipe.

- NOTE: You will need a Commercial mixer for these. this is a commercial Foodservice recipe. Preheat Oven: @ 350 Ungreased 18X26 Baker sheet pans
- Add Ingredients in BIG Mixer in order Listed. Using Beater at Low Speed, mis 1-2 minutes, or til completely blended. Scrape down bowl once during mixing.
- Divide the Dough in 10 pieces, (about 1 lb 10 oz each)Form into rolls about 2" thick. Wrap in plastic or wax paper and chill at least 3 hrs.
- Slice each roll into 20 slices. Place in rows on baking sheet 5 X 7. on ungreased Baking sheet or Use Parchment paper for eazy cleanup. Bake 10 min. or until done. remove from pan while still warm. Optional ideas & variations: drizzle with chocolate frosting. Sprinkle with Pdr sugar, or Cocoa Add chopped Nuts, Or add Mini choc chips 2 bags.
SUGAR COOKIES (LIGHT & CRISP)
These Sugar Cookies are marvelous! Light, Crispy, Yummy and so easy. I got this recipe from a co-worker many years ago. Dieters beware--it is hard to eat just one. Tip-I have tried to substitute margarine in place of the butter, and the cookies were not as good. I have also used colored sugars for dipping the glass into for the holidays and that worked very well. Not recommended for rolled out cookies as the dough is too delicate.

Steps:
- Preheat oven to 350°F.
- In a large mixing bowl, cream together 1/2 cup granulated sugar, powdered sugar, butter, and vegetable oil.
- Beat in egg and extract.
- Add next 4 ingredients and mix together. The dough will be somewhat soft. Refrigerate a few minutes if too soft to work with.
- Shape into 1-inch balls and roll in reserved 1/2 cup of granulated sugar.
- Place on an ungreased cookie sheet and flatten with the bottom of a glass that has been dipped in granulated sugar (or colored sugar if you prefer).
- Bake at 350°F for 10-12 minutes.
- Note: Cookies should be only very slightly browned. They will be a more of a light golden color.
