HEAVENLY CHICKEN
This chicken goes by a lot of names, but we chose Heavenly Chicken because it's just so perfect! Super moist and tender thanks to the sour cream, and loaded with rich, buttery flavor thanks to the butter drizzle and crispy Ritz crackers.

Steps:
- Preheat oven to 375 degrees. Spray a 9x13 baking dish with nonstick spray.
- Pound the chicken breasts to an even thickness.
- Add the sour cream, garlic powder, onion powder, and paprika to a shallow dish and stir well to combine.
- Add the Ritz crackers to a second shallow dish.
- Dredge each piece of chicken first in the sour cream and then the cracker crumbs, pressing the crumbs into the chicken to coat.
- Place chicken in prepared baking dish and drizzle with the melted butter.
- Bake for 30 minutes or until chicken reaches 165 degrees.
- Let chicken rest for 3-4 minutes before slicing and serving.

HEAVENLY CHICKEN
I have a horror of dry chicken breasts, even though I know white meat is healthier for one. So I was happy to find a flavorful, moist casserole that is also easy to make ahead and freeze. I use skim milk and light ham to help reduce calories, but you can use whatever is on hand. From "Once-a-Month Cooking" by Mimi Wilson and Mary Beth Lagerborg; I doubled their white sauce ingredients and spinach to make it extra moist.

Steps:
- In a saucepan, sauté the scallions in butter until tender. Whisk in flour; whisk in milk all at once. Bring to a boil and cook and stir until the sauce is thickened and bubbly.
- Meanwhile, combine the cracker crumbs (breadcrumbs work too in a pinch) and cheese. Dip chicken breast halves in the crumb mixture to coat lightly; retain remaining crumb mixture. (Note: If freezing the meal for later, seal the remaining crumb mixture in a freezer bag).
- Arrange the breast halves in a greased 13 x 9-inch baking dish.
- Stir the spinach and ham into the white sauce. Spoon the spinach mixture over the chicken. (Can freeze at this point for later; tape the crumb mixture bag to the side. Defrost before baking.).
- Bake, covered, at 350°F for 60 to 75 minutes. Uncover and sprinkle with crumbs. Bake 10 minutes more.

JENNIE'S HEAVENLY SLOW COOKER CHICKEN
This is the best chicken slow cooker recipe ever, and I've tried a lot of them. I can't remember where I originally got it from; my version has been tweaked a little. I don't like mushrooms, but the mushrooms in the condensed soup are really big and easy to take out. Serve over hot cooked rice.

- Melt the butter in a saucepan over medium heat, and stir in the salad dressing mix, mushroom soup, cream cheese, and wine until the sauce mixture is hot, smooth and well combined. - In a medium bowl- mix onion soup mix, milk, cream of mushroom soup & rice together. set aside.
- In your slow cooker- spray lightly with non- stick spray & lay chicken breasts at bottom. Place 1 tablespoon of butter on each breast & pour soup mix over top.

- Melt butter in a skillet over medium-high heat. Add onion, and sauté 5 minutes or until tender. Stir in soup and next 5 ingredients. Reserve 1 cup sauce.
- Drain spinach well, pressing between layers of paper towels.
- Stir together spinach, cottage cheese, and next 3 ingredients.
- Place 3 lasagna noodles in a lightly greased 13- x 9-inch baking dish. Layer with half each of sauce, spinach mixture, and chicken. Sprinkle with 1 cup Cheddar cheese. Repeat procedure. Top with remaining 3 noodles and reserved 1 cup sauce. Cover and chill up to 1 day ahead.
- Bake at 350° for 45 minutes. Sprinkle with remaining 1 cup Cheddar cheese, and bake 5 more minutes or until cheese is melted. Let stand 10 minutes before serving.

Tender chicken in a delicious coconut sauce. Perfect for a weeknight meal 'cause it's quick and easy but tastes divine. I like subtle flavors, so if you like it spicy you'll want to increase the spices. Serve over rice. (BY THE WAY, don't feel bad about opening the chili packet for just a 1/4 teaspoon. I keep an opened packet on hand all the time for seasoning vegetables. Give it a try on corn on the cob, delicious!)

- Start onion and garlic cooking over med-hi heat in pan large enough to hold chicken. Start rice according to your package directions.
- Meanwhile mix together spices and sprinkle them over cubed chicken.
- Add chicken to pan and cook, stirring frequently, about 8 minutes or until no longer pink.

- Put the chicken pieces in a large bowl and season with the salt. Squeeze the citrus halves over the chicken, then spend a minute or so rubbing the cut sides of the citrus against the chicken. Add the onions, garlic, chile, and thyme and toss well, rubbing the chicken as you do. Cover and marinate in the fridge for at least 12 hours or up to 48 hours.
- Preheat the oven to 375F. Remove the chicken from the marinade, guiding any stuck-on aromatics back into the bowl. Set a strainer over a small mixing bowl. Pour the marinade through the strainer, reserving the solids and liquid. Pat the chicken very dry with paper towels.

- Reduce the heat to medium-low, add the tomato paste and salt, and cook, stirring often, until it turns several shades darker, about 3 minutes. Add the bell peppers and the reserved solids from the marinade, and cook, stirring occasionally, until the peppers soften slightly and take on a little color, about 8 to 10 minutes.
