Steps:
- Heat oven to 325°F.
- Spray bottom of 9-inch springform pan with cooking spray; sprinkle with graham crumbs.
- Beat Neufchatel, sugar and extract in large bowl with mixer until blended. Gradually add whole eggs and egg whites, mixing on low speed after each just until blended. Pour into prepared pan.
- Bake 55 min. to 1 hour or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.

CHEESECAKE BROWNIES
Steps:
- Preheat oven to 350 degrees F.
- In a small saucepan over low heat melt the butter, chocolate and cocoa powder. Transfer to a large bowl. Add sugar, eggs, 1 teaspoon vanilla, flour, and cayenne. Using a hand-held electric mixer beat until well combined.
- Spread batter into a buttered and floured 8 by 8-inch pan.
- In a medium bowl add the cream cheese, sugar, egg yolk, 1 teaspoon vanilla and beat until thoroughly mixed.
- Dollop the cheese mixture on top of the batter in the pan.
- Bake for 35 minutes. Remove from the oven and cool before slicing.

- Spray a 9" pie pan with cooking spray and flour;& set aside.
- Prepare brownie mix as box states.
- Evenly pour brownie mixture into pan.
- Bake 10 minutes.
- While baking,In a mixing bowl,combine cream cheese,sugar,vanilla extract& egg whites.
- Pour mixture over the brownie layer.
- With spoon,spread melted chocolate over cream cheese layer.
- Cut through the chocolate mixture& cheese mixture many times to create marbled look.

Steps:
- Heat oven to 325°F. Mix cookie crumbs and butter in small bowl. Press evenly in bottom of springform pan, 10x3 or 9x3 inches. Refrigerate while preparing filling.
- Beat cream cheese in large bowl with electric mixer on medium speed until smooth. Gradually beat in sugar until smooth. Beat in eggs, one at a time. Beat in vanilla, melted baking chips and half-and-half until blended. Pour over crust; smooth top.
- Bake 55 to 60 minutes or until center is set; cool 15 minutes. Run metal spatula around side of cheesecake to loosen. Cover and refrigerate at least 8 hours, but no longer than 48 hours. Remove side of pan. Top cheesecake with strawberries. Garnish with mint leaves. Store covered in refrigerator.

- Make the cheesecake layer first. In a stand mixer fit with the paddle attachment beat all the cheesecake ingredients together until combined, about 2 minutes.
- Now make the brownie layer. In a microwave-safe bowl, melt the butter. Remove from microwave, stir in sugar. Microwave the mixture for 30 more seconds. Stir again and melt for 60 seconds more.
- Remove mixture from the microwave and stir the bittersweet chocolate into the hot mixture to melt it completely. If the chocolate doesn’t melt completely, put it in the microwave for another 15 seconds.
- Add eggs and egg yolk and the vanilla extract, beating until combined. Add the flour, cocoa powder and salt and mix until combined.

- Step 5Bake 50 to 55 minutes or until a wooden pick inserted in the center comes out clean (a few crumbs attached are OK). Cool completely on a wire rack, about 3 hours.
