FRENCH FRY CASSEROLE

A friend gave me this recipe a few years ago and it's still a family favorite. Try the recipe as is, or use cream of chicken soup for a different taste.

1 tablespoon vegetable oil
1 ½ pounds lean ground beef
½ onion, diced
½ green bell pepper, diced
salt and black pepper to taste
1 (10.75 ounce) can condensed cream of mushroom soup
¾ cup processed cheese sauce (such as Cheez Whiz®)
½ (28 ounce) package frozen shoestring potato fries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C), and grease a 9x13 inch baking dish.
  • Heat the oil in a skillet, and cook and stir the ground beef, onion, and green pepper over medium heat for about 15 minutes, until the meat is crumbly and no longer pink and the onion is translucent. Season with salt and pepper to taste, and stir in the condensed mushroom soup. Bring the mixture to a simmer over medium-low heat.
  • Scoop the cheese sauce into a microwaveable bowl, and melt on low power for about 30 seconds.
  • Place the ground beef mixture into the bottom of the prepared baking dish, and spread an even layer of the melted cheese sauce over the ground beef. Top with frozen shoestring fries. Bake in the preheated oven for about 20 minutes, until the fries are starting to turn golden.

Leftover French Fried Potatoes
Onion
Bell Pepper
Butter or Margarine
Olive Oil
Seasoning Blend (base on type/amount of seasoning already on fries and how this side will be used)
(No measurements given as they will vary with the amount of leftovers. Start with a small amount of the fats. You can always add more if it looks too dry during the cooking process.)

Steps:

  • Slice the leftover fries so pieces are all about the same size. Chop onions and peppers. Preheat skillet, then add butter or margarine and oil. Heat until sizzling, then add onion and peppers. Sauté until softened. Add potatoes and seasoning to the pan and mix everything together. Keep stirring until the potatoes are heated through.

8 eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 cup chopped leftover french fries (you could also use roasted potatoes, hash browns, tater tots, etc.)
1/2 cup chopped deli ham
1/2 cup thawed frozen peas
1/4 cup ricotta
2 tablespoons prepared basil pesto

Steps:

  • Preheat the oven to 350 degrees F.
  • In a bowl, whisk the eggs. Whisk in the milk, salt and pepper. Set aside.
  • Heat the olive oil in an ovenproof 10-inch cast-iron or nonstick skillet over medium heat. Add the french fries, ham and peas. Saute about 2 minutes. Pour in the egg mixture. Drop the ricotta by the teaspoonful around the pan. Do the same with the pesto.
  • Transfer the skillet to the oven. Let cook until the eggs are set, 13 to 15 minutes. Serve immediately or at room temperature.

2 large eggs
1 c milk
1/2 large onion
1 bag(s) french fries or tater tots
1 dash(es) salt, garlic powder, pepper and mrs. dash
1 c jimmy deans sausage or any brand
1 c mexican blend shredded cheese

Steps:

  • 1. Preheat oven to 350° next cook sausage and seasonings in a skillet until almost done (sausage will continue to cook in oven).
  • 2. Next spray your dish with cooking spray or use a non-stick pan then layer with french fries or tater tots and set aside.
  • 3. Slightly whisk milk and eggs together in a bowl. Next begin to layer alternately sausage and cheese once that is done pour Egg and milk mixture over and bake. The bake times will vary depending On the size dish used mine took about 35-40 minutes bake until the egg has set in the middle and cheese has melted. Be sure to check center of the finished product to make sure the eggs are not runny if they are cook a Little longer. Take out of oven and let cool before serving. Enjoy!!!!!

8 ounces Frozen French Fries
2 tsp salt
1 tsp ground black pepper
1/2 tsp granulated garlic
4 ounces chedder cheese
1/2 cup whole milk
2 whole bellpeppers
6 strips bacon
1/2 cup green onion

Steps:

  • Preheat oven to 450. Scramble 6 eggs with salt, pepper, granulated garlic, milk, and about 2 ounces of grated cheese. Place in a baking dish with frozen french fries.
  • Chop bell peppers and place about half of them in the baking dish and mix in with the fry and egg mixture. Cover with tin foil and bake for about 30 minutes.
  • While the dish is baking, Cook 6 strips of bacon, then chop along with the green onions. Have the remaining bell peppers on hand.
  • After 30 minutes, remove the tin foil and top with the remaining cheese, bell peppers, bacon and green onion. Bake for another 15-20 minutes until the cheese begins to brown.
  • Serve as a side at brunch, or as a main breakfast dish along with some ketchup or ranch. Enjoy!

6 eggs
½ cup half and half
½ tsp salt
Pepper to taste
½ tsp garlic powder
½ pound beef sausage (sliced)
¼ cup bacon bits (or to taste)
1 Roma tomato diced
¼ cup green onions (chopped)
¼ cup shredded cheddar cheese
¼ cup shredded mozzarella cheese
Parsley as desired

Steps:

  • Begin by warming your French fries in your casserole dish until they are hot to the touch. If using frozen fries, bake them according to the package instructions. The fries work best when slightly crispy to start, so spray them with butter or toss with oil as they bake.
  • In a mixing bowl, combine eggs, half and half, salt, pepper, and garlic powder. Whisk to combine. Pour on top of your warmed French fries.
  • On top of your French fry and egg mixture, add your desired meats, tomato, and onion, etc. Bake at 400°F for 20 minutes, or until the center of your casserole appears to be done. Remove from the oven and add cheese to the top. Place back into the oven, and bake for an additional 10 minutes, or until cheese is melted and appears to start to turn golden in color. Remove from the oven, serve, and enjoy.
