This Moroccan spiced coffee recipe is well-suited for brewing in an automatic drip maker, stovetop Moka, or French coffee press.

1/2 cup coffee beans, or espresso beans
1 tablespoon ground cinnamon
1 or 2 whole cloves
Seeds from 3 or 4 cardamom pods
1/4 teaspoon nutmeg , freshly grated
1/4 teaspoon ground ginger, optional
1/4 teaspoon black pepper, optional
Sugar and hot milk, for serving, optional

Steps:

  • Gather the ingredients.
  • Place all ingredients into a coffee grinder and process.
  • The spiced coffee is best used immediately. If you don't need all of it, store the spiced ground coffee in a light-proof, airtight container.
  • Use the spiced ground coffee, 1 to 2 tablespoons of the mixture per serving. Note: Ground spices may clog the filter basket in electric espresso makers, so other brewing methods are preferred, such as a French press, pour over, or drip coffee machine.
  • Serve the spiced coffee black, or with sugar and hot milk as desired.

1 cup dark creme de cacoa
1 1/2 cups vodka
1 cup espresso, cooled
1 orange wedge
Orange sugar crystals
12 ice cubes

Steps:

  • Mix the coffee liqueur, creme de cacoa, vodka, and espresso in a small pitcher. Cover the pitcher with plastic wrap and place it in the freezer until the mixture is very cold, about 3 hours.
  • Meanwhile, rub the rims of 8 Martini glasses with the orange wedge. Dip the rims in the sugar crystals to coat lightly. Place the glasses in the freezer.
  • Add the ice cubes to the vodka mixture and briskly stir the mixture until the ice begins to melt. Strain the mixture into the prepared glasses, and serve.

1/4 teaspoon freshly ground cinnamon
1/4 teaspoon freshly ground black peppercorns
1/4 teaspoon freshly ground ginger
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon freshly ground green cardamom seeds
1/8 teaspoon freshly ground clove
scant 1 cup freshly roasted coffee beans
4 cups boiling water
hot milk, to taste
sugar, if desired

Steps:

  • Combine the spices with the coffee beans in a grinder and whirr until the beans are finely ground.
  • Bring 4 cups of water to boil.
  • Put some milk-a cup or more-in a small saucepan over a low flame to heat. Do not let it come to a boil.
  • If you are making the coffee in a filtered maker: Pour the coffee mixture into the paper-lined brewing cup. Pour about 2 ounces of boiling water over the coffee to allow the grounds to "bloom." Then slowly add the rest of the water, allowing it to drip through the grounds into the pot below.
  • Or (for Mikekey) if you are using a French press: Put the coffee and spice mixture in the bottom of the press pot. Pour in the requisite amount of boiling water, put the top in place and let the mixture steep for 4 to 5 minutes. Press the plunger down.
  • Pour the spiced coffee into cups and add hot milk (and sugar) if desired. Serve at once.
