CREAMY BROCCOLI POTATO SOUP



Creamy Broccoli Potato Soup image

This broccoli potato soup is intensely creamy and 100% plant based! It's an easy healthy soup that everyone loves (plus it's vegan and gluten free).

1 large yellow onion
3 garlic cloves
2 pounds Yukon gold potatoes (about 6 medium)
3 tablespoons olive oil
1 quart vegetable broth
1/2 cup raw unsalted cashews
1 teaspoon kosher salt, divided
1 pound frozen broccoli florets (or 4 cups small steamed broccoli florets*)
1 large carrot
1 teaspoon dried thyme
3/4 teaspoon dried dill
2 teaspoons white wine vinegar
1 teaspoon Dijon mustard

Steps:

  • Dice the onion. Mince the garlic. Peel the potatoes and cut them into bite-sized chunks.
  • In a large pot or Dutch oven, heat the olive oil over medium high heat. Add the onion and saute for 5 minutes. Add the garlic and saute for 1 minute. Add the vegetable broth, cashews and potatoes and 1/2 teaspoon kosher salt and bring to a boil. Reduce to a rapid simmer (not a boil), and simmer about 15 minutes until the potatoes are tender and falling apart when poked with a fork.
  • Meanwhile, run the frozen broccoli under hot water to thaw it. Chop it into smaller florets as necessary. All packages are different, so make small bite-sized florets the size you'd like for a soup. You can chop the broccoli stems off and keep them in the soup as well. Place the broccoli in a bowl and mix it with 1/4 teaspoon kosher salt and black pepper to taste. Peel and grate the carrot into long strips (we used a handheld julienne shredder).
  • When the potatoes are tender, use a ladle to transfer everything to a blender. Add the thyme, dill, white wine vinegar, Dijon mustard and another 1/4 teaspoon kosher salt. Hold the top tight and blend everything for a minute or two until fully creamy. (This quantity just fits in a standard blender.)
  • Pour the creamy soup back into the pot and add the broccoli and carrot. Simmer about 5 more minutes until the broccoli is cooked through. Taste and add additional salt as necessary (we added 1/4 teaspoon more).

40g / 3 tbsp unsalted butter
1 small onion (, finely chopped)
2 garlic cloves (, minced)
1/3 cup flour
2 cups milk (, any fat %)
2 cups chicken broth/stock (, low sodium)
2 cups water
1 tsp salt
1/2 tsp black pepper
800 g / 1.6 lb potato (, peeled and cut into 1.25 / 1/2" cubes (Note 1))
5 cups broccoli, small florets ((1 large head, ~300g/10oz, Note 1))
1+ cups grated cheese (, cheddar or tasty (or other of choice))
Cook bacon pieces ((highly recommended))
Shallots/scallions (, finely sliced)
Grated cheese

Steps:

  • Melt butter in a large pot over medium high heat. Add onion and garlic, cook for 3 minutes or until onion is softened.
  • Add flour and mix into onion mixture. Cook for 30 seconds.
  • While stirring, slowly pour the milk in and keep mixing as it turns into a thickish paste that's mostly smooth. Use a whisk to make it smooth if needed.
  • Add chicken stock, water, salt and pepper. Stir, then add potato.
  • Bring to simmer then adjust heat so it's simmering gently. Cook for 8 minutes (no lid) or until potato is almost cooked. Stir ocassionally so the base doesn't catch.
  • Add broccoli and stir. Cook for 2 minutes (or until broccoli is cooked to your liking), then take the pot off the stove.
  • Stir through cheese (I use 1 cup) - broth soup be nicely thickened. Add more salt if needed.
  • Ladle into bowls and top with garnishes of choice.

3 c fresh or frozen broccoli florets
2 large potatoes, peeled and cubed
2 Tbsp butter
3 Tbsp all purpose flour
1 small onion, chopped
2 clove garlic, minced
2 c chicken broth
2 c half and half
1/2 to 1 tsp salt, as desired
1/4 tsp pepper
1 pinch summer savory
1 pinch thyme, dried
1/8 tsp paprika
1/4 tsp worcestershire sauce
2 c shredded triple cheddar with a touch of Philadelphia
6 slice bacon, cooked and crumbled
croutons for garnish, if desired

Steps:

  • 1. In separate saucepans, cook the potatoes and broccoli in boiling salted water, covered, until tender, about 10 minutes for each; drain and set aside.
  • 2. Meanwhile, saute the onion in butter until tender, then add the garlic. When the garlic becomes aromatic, after about 1 to 2 minutes, stir in the flour and blend well. Gradually add the chicken broth and half and half, stirring constantly until it begins to get thick. If it gets too thick, add a little more liquid. Remember, the cheese will add thickness as well.
  • 3. Stir in seasonings and the cheese, heating over low heat. When the cheese is melted, add the potatoes and broccoli.
  • 4. Cook the bacon in a large skillet until crisp; drain and crumble. Add bacon to the soup and stir thoroughly.
  • 5. Ladle the soup into bowls; garnish with croutons and bacon bits.

SEARED BROCCOLI AND POTATO SOUP



Seared Broccoli and Potato Soup image

This is not your average broccoli soup. Instead of merely boiling the broccoli to cook it, here, the florets are seared until deeply browned on one side while remaining bright green on the other. This gives the soup a layer of caramelized flavor while also preserving the fresh green taste of the broccoli itself. It's a technique inspired by Andrew Feinberg of Franny's restaurant in Brooklyn, who also uses it for zucchini soup. In this version, we've added potato for body, chile flakes for spice and lemon zest to heighten the citrus tang at the end.

1/2 cup olive oil, plus more as needed
2 heads broccoli (about 2 pounds), separated into small florets, stems peeled and diced
2 1/2 teaspoons kosher salt, more to taste
2 tablespoons unsalted butter
1 large Spanish onion, diced
5 cloves garlic, chopped
1/2 teaspoons black pepper, more for finishing
1/4 teaspoon red pepper flakes
1/2 pound potatoes, peeled and thinly sliced
1/4 teaspoon finely grated lemon zest
1 1/2 tablespoons fresh lemon juice, more to taste

Steps:

  • In a large soup pot, heat 2 tablespoons of oil over high heat. Add about a third of the broccoli, just enough so that it covers the bottom of the pan in a single layer without overcrowding. Cook broccoli without moving it for about 3 to 4 minutes, or until dark brown on 1 side only (leave the other side bright green). Transfer to a big bowl and repeat with remaining broccoli and more oil. When all the broccoli has been browned, season with 1 teaspoon salt and set aside.
  • Reduce heat to medium-low. Add butter and remaining 2 tablespoons of oil to pan. Add onions and garlic, black and red peppers, and 1/2 teaspoon salt. Cook onion-garlic mixture until soft and translucent, about 4 minutes. Add potato to the pot with 1 quart water and remaining 1 teaspoon salt. Bring to a simmer, cover pot and cook until potato is just tender, 10 to 15 minutes. Add broccoli, cover again and cook until tender, another 5 to 10 minutes.
  • Add lemon zest and roughly purée soup with an immersion or regular blender, leaving some small chunks for texture. Stir in lemon juice. Finish with grated Parmesan, a drizzle of olive oil, black pepper and flaky sea salt.

2 cups chopped onion
2 tablespoons margarine
2 ½ pounds peeled and cubed potatoes
5 cups boiling water
4 cubes chicken bouillon
3 cups fresh broccoli, cooked and drained
salt and pepper to taste
3 cups shredded Cheddar cheese

Steps:

  • In a large stock pot saute onion in butter. Add potatoes, water and bouillon cubes. Cover, bring to boil and then reduce heat to medium and cook until potatoes are tender, about 15 minutes.
  • Remove tough outer skin of broccoli stems and cook broccoli. Once cooked add to soup.
  • In a blender or food processor puree half of the soup and return to stock pot. Season with salt and pepper.
  • Add cheese and heat soup through until cheese is melted. Serve warm.

This is the first time I have ever attempted to make potato soup, but it came out so well I went back for seconds! This definitely defines comfort food for me! It is a little labor intensive, and something that I reserve specifically for the weekend, but I guarantee it is worth the time!

1 tablespoon extra virgin olive oil
1 tablespoon butter (salted or unsalted work)
1/2 cup onion, diced
1 lb bacon, cut into small chunks
3 lbs red potatoes, cut into bite sized pieces (I prefer it with the skins on)
4 cups chicken broth
4 cups water
2 cups half-and-half (or milk to lighten it up a bit)
3 tablespoons flour
salt and pepper
cheese (optional)
sour cream (optional)

Steps:

  • In the soup pot you are going to use, add the extra virgin olive oil, butter and diced onion and sauté on medium low heat for 15 minutes (until onion is translucent and start to caramelize). After onion is caramelized, take out of pot and set aside.
  • In the same soup pot, add cut up bacon and cook until crisp on medium-high heat. Take out of pot and set aside.
  • In the same soup pot (yes, again), add chicken broth, water and potatoes. Boil potatoes until almost soft - about 15 minutes.
  • Take some of the broth/water in a bowl and add flour to make a roux.
  • Add half and half, onion and half of bacon, heat soup to boiling, stirring occasionally.
  • Slowly add roux to desired thickness and cook until potatoes are tender.
  • Top with left over bacon, cheese and sour cream, if desired.
  • Enjoy!
