CHEF JOHN'S TUSCAN BEAN SOUP
Since fall and winter are full of shorter, darker days, we're going to need some coping strategies, and this hearty Tuscan bean soup is one of the more effective. There's just something about that combo of smooth, silky soup, and crunchy, crispy croutons that makes everything seem okay.

Steps:
- Heat olive oil over medium-high heat in a large pot. Add butter; allow butter to melt. Add onion, celery, and carrot and cook and stir until onion begins to turn translucent and golden, about 7 minutes. Stir in garlic; cook 1 more minute. Add beans and broth. Season with salt, pepper, rosemary, thyme, and cayenne pepper. Set heat to medium high and bring to a simmer. Reduce heat to low and let simmer until vegetables are tender, about 30 minutes.
- Place bread cubes in a saute pan. Drizzle with olive oil; season with a pinch of salt and pepper. Toast bread cubes over medium heat until golden brown and crunchy, tossing occasionally, about 10 minutes. Sprinkle grated cheese over the bread cubes and continue to brown cubes about 2 more minutes.
- Puree soup with an immersion blender until it is very smooth. Whisk in creme fraiche. Stir in lemon juice. Serve topped with browned bread cubes and chopped parsley.

TUSCAN WHITE BEAN SOUP
My family loves this hearty soup. The taste is similar to an onion soup but MUCH better. The best part of it is that its vegan ( if you leave off the parmesan cheese and make sure you are using a vegan vegetable stock) which is great for my teen daughter. Enjoy!

- In a large soup pot heat oil and stir in Garlic, Onion, Leeks and potato. Cook for 4-5 Minutes.
- Add in Vegetable Stock. Cover and simmer for 15 minutes.
- Add in Savoy Cabbage and undrained can of Beans. Cook for 10 minutes.
- Using a food processor or blender, puree about 1/3 of soup, then add it back to pot. Add parsley.
- Cook for an additional 5 minutes to heat through. Serve with some freshly grated parmesan cheese on top.

- Dice the onions and carrots. Chop the rosemary and pick the thyme leaves and set aside.
- Place a large stock pot over medium heat and add 1 tbsp of olive oil. Once the oil is hot, add onions and sweat until translucent but not browning, about 5 - 8 minutes.
- Add carrots to the pot with the onions until they begin to sweat and turn bright orange, about 2 minutes. Season carrot/onion mixture with salt.
- Make a space in the center of the pot, drizzle in another tablespoon of olive oil and let it heat up a bit. Add the fresh herbs and let them sizzle in the oil for about a minute, then stir to combine.(see recipe notes)
- Clear a space in the center of the pan and add the tomato paste. Let it sizzle and cook for a minute, until the color seems to darken a bit. Stir to combine with other ingredients in the pan.
- Add both cans of cannellini beans ALONG WITH THE LIQUID IN THE CAN! This liquid is going to thicken the soup and give it additional flavor. Season with salt.
- Add 8 cups of water and the parmesan rind if using. Tear the kale from the stems and add to soup in large chunks.
- Cover and bring to a boil. Lower heat to a medium simmer for 20-30 minutes. Season with salt and pepper to taste.
- Serve topped with freshly grated parmesan cheese.

- Rinse and pick the beans then cover them with water and soak for 6 hours or overnight. Drain.
- In a large heavy bottom pot heat up a good lug of olive oil and saute the leek (or onion) with the carrot and celery until they begin to soften.
- Quickly stir in the chopped garlic and cook for a few seconds just until fragrant then add the soaked beans.
- Pour in the water and bring to a constant simmer. Add the bay, sage and rosemary, cover with a lid and cook for 45 minutes or until the beans are soft and tender to your liking.
- Check the beans half way through cooking and see if you might need to add extra water if they are absorbing lots of liquid.
- Once your beans are perfectly cooked remove from heat, stir in the nutritional yeast and season to taste with the smoked sea salt.
- Meanwhile grill the bread on both sides until nice dark char marks form. Rub each slice on both sides with a garlic clove, lightly brush with some olive oil and finish with sea salt.
- Ladle the soup into bowls and tear chunks of the garlic bruschetta over the top. Finish with a light drizzle of olive oil on top and enjoy.

- Start by washing and prepping the vegetables. Peel and chop the carrots into 1/4" slices. If using extra large carrots, cut the coin-shaped slices in half. Then clean and dice the shallots and celery too. Measure out 1 cup of each.
- Heat a large sauce pan on medium heat. Add the olive oil and carrots and cook for 2-3 minutes.
- Next add the shallots and celery and cook for an additional 5 minutes, continuously stirring until all the vegetables have started to soften and brown. Once it has started to brown, add the minced garlic and cook for an additional minute.
- Pour in the wine to deglaze the bottom of the pan, then add the broth and teaspoon of salt. Bring to a low simmer and allow to cook for 15-20 minutes.
- While the broth for the white bean soup is simmering, prepare the kale by washing and drying the leaves. Fold the long kale leaf in half, and using a sharp knife, cut away the stem. Then chop the leafy greens into 1" pieces.
- Prep the rosemary by removing the needles from the stem and chopping them very fine.
- Add the rosemary, kale, pinch of red pepper flakes, and rinced beans to the simmering broth and cook for 5 mintues until the kale leaves are tender.
- Ladle, serve, and enjoy your homemade Tuscan White Bean Soup!

As part of my pursuit of a healthier lifestyle, I am always looking for new ways to use beans. This recipe looks like it would hit the mark rather well but still taste lush. It was originally printed in the January 2008 copy of the BBC Good Food Magazine. The recipe says it can be frozen.

- Chop all the produce.
- Set a large 7-8 quart saucepot over medium heat. Add 2 tablespoons olive oil to the pot. Add in the onions, carrots, celery, and garlic. Generously season with salt and pepper. Sauté the veggies for 10 minutes, stirring regularly.
- Meanwhile, preheat the oven to 400 degrees F. Set out a rimmed baking sheet. Tear the bread (sliced or unsliced) into chunks and place on the baking sheet. Drizzle with 2 tablespoon olive oil and toss well. Then spread the bread chunks out in an even layer. Toast in the oven for 8-10 minutes, flipping once. Set aside.
- To the soup pot, add in the vegetable broth, tomatoes, cannellini beans, parmesan, anchovy paste, oregano, bay leaf, and crushed red pepper.
- Partially cover the pot and simmer for 25-30 minutes, stirring every 5 minutes. Turn the heat down to medium-low if needed. (If the soup base starts to thicken too much, feel free to add in 1-3 cups of water.)
- Add in the chopped kale and toasted bread pieces. Stir well and simmer another 5 minutes, until the bread disintegrates into the broth. The texture should be thick like a stew. Taste, then salt and pepper as needed. Serve warm.
