HASSELBACK CHICKEN CORDON BLEU

8 boneless skinless chicken breasts
1/2 cup honey Dijon mustard
2 cups panko breadcrumbs
6 tablespoons salted butter, melted
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
12 slices Swiss cheese, cut into quarters
24 rounds Canadian bacon (about 1 pound), cut into half-moons

Steps:

  • Preheat the oven to 425 degrees F.
  • At a slight angle, cut 6 slits into each of the chicken breasts, making sure not to cut all the way through. You should leave roughly 1/4 inch unsliced. Brush the top of each chicken breast with 1 tablespoon of the mustard.
  • Mix together the breadcrumbs, butter, salt and pepper in a bowl. Sprinkle the breadcrumb mixture evenly over the chicken, using your hands to press the mixture into the mustard. Place a quarter piece of cheese and a half-moon piece of Canadian bacon into each of the slits in each chicken breast. Transfer the stuffed chicken breasts to a baking sheet.
  • Bake until the chicken is cooked through and the breadcrumbs are golden, 20 to 22 minutes. Serve warm with your favorite sides.
  • Freezing instructions: Once the uncooked chicken breasts are assembled, place 4 onto a wax paper-lined baking sheet; repeat with the remaining chicken breasts on a separate lined baking sheet. Transfer the baking sheets to the freezer until the chicken breasts are frozen through, at least 3 hours. Transfer the chicken breasts to 2 wax paper-lined foil pans. Label, date and freeze until ready to eat.
  • When ready to eat, preheat the oven to 425 degrees F. Bake the chicken breasts from frozen until the chicken is cooked through and the breadcrumbs are golden, about 40 minutes. Serve as directed above.

8 slices deli ham (1 ounce each)
1-1/2 cups shredded part-skim mozzarella cheese
2/3 cup fat-free milk
1 cup crushed cornflakes
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
SAUCE:
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1/2 cup fat-free sour cream
1 teaspoon lemon juice

Steps:

  • Flatten chicken to 1/4-in. thickness. Sprinkle with pepper; place a ham slice and 3 tablespoons of cheese down the center of each piece. Roll up and tuck in ends; secure with toothpicks. Pour milk into a shallow bowl. In another bowl, combine the cornflakes, paprika, garlic powder and salt. Dip chicken in milk, then roll in crumbs., Place in a 13x9-in. baking dish coated with cooking spray. Bake, uncovered, at 350° for 25-30 minutes or until meat is no longer pink. 6 slices ham
3 tablespoons flour
1 teaspoon paprika

1/2 cup dry white wine
1 teaspoon chicken bouillon
1 tablespoon cornstarch
1 cup whipping cream

Steps:

  • Pound chicken breasts if they're too thick.
  • Place a cheese and ham slice on each breast within 1/2 inches of edge.
  • Fold edges of chicken over filling and secure with tooth picks.
  • Mix flour and paprika and coat chicken.
  • Heat butter in skillet and cook chicken until browned on all sides.
  • Add wine and bouillon with chicken in pan.
  • Reduce heat to low, cover and simmer 30 minutes.
  • Remove tooth picks and transfer breasts to warm platter.
  • Blend cornstarch with cream and whisk slowly into skillet.
  • Cook, stirring until thickened and pour over chicken.

1 cup flour
4 boneless, skinless breasts of chicken
2 eggs lightly beaten
4 very thin slices smoked ham
2 cups bread crumbs
6 ounces Lorraine Swiss cheese, cut into four chunks

Steps:

  • Preheat oven to 375 degrees. Melt butter in glass baking dish.
  • Lightly flatten chicken breasts between plastic wrap with mallet. Lay 1 slice of ham and 1 piece of cheese on flattened breast, fold in half and seal close with toothpicks. Repeat process for remaining chicken breasts.
  • Coat each piece with flour, then eggs and then bread crumbs. Place chicken pieces in glass baking dish. Turn to coat with butter.
  • Bake for 40-45 minutes or until golden brown. Serve with parselyed rice and steamed broccoli.

24 ounces sour cream
2 (10 1/2 ounce) cans cream of mushroom soup

  • Line the bottom of pan with bacon.
  • Cover bacon with chicken.
  • Mix soup, sour cream, & half of the cheese.
  • Cover chicken with soup mixture.

  • Place cheese and ham on each piece.
  • Fold edges of chicken over filling, secure with small bamboo skewers.
  • Mix flour and paprika and coat chicken pieces.
  • Heat butter in large skillet and cook chicken till browned on all sides. Add juice (or wine) and bouillon. Reduce heat simmer for 30 minutes till chicken is no longer pink.

1/4 cup white wine
1 (10 3/4 ounce) can cream of chicken soup

  • In a 10-inch skillet over medium high heat cook the chicken breasts in the butter for 10 minutes or until browned.
  • Remove chicken and set aside.

  • Preheat oven to 350 degrees F.
  • Lay the chicken between 2 pieces of plastic wrap.
  • Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness.
  • Take care not to pound too hard because the meat may tear or create holes.
  • Lay 2 slices of cheese on each breast, followed by 2 slices of ham, and 2 more of cheese; leaving a 1/2-inch margin on all sides to help seal the roll.
  • Tuck in the sides of the breast and roll up tight like a jellyroll.
  • Squeeze the log gently to seal.
  • Season the flour with salt and pepper; spread out on waxed paper or in a flat dish.
  • Mix the breadcrumbs with thyme, kosher salt, pepper, and oil.
  • The oil will help the crust brown.

6 slices virginia baked ham
6 slices American cheese
1/4 cup flour
1/4 cup grated parmesan cheese or 1/4 cup romano cheese

  • Mix flour, grated cheese and sage together in a shallow bowl.
  • Place 1 slice of ham and 1 slice of american cheese on 1 chicken cutlet.
  • Roll up and fasten with toothpicks.

  • Roll each in the flour mixture and cool on a dish in the refrigerator for 1 hour.
  • Fry cutlets in butter, turning to brown all sides, and arrange them in a greased baking dish.

  • Pour over chicken in baking dish and bake at 350 degrees for 1 hour, uncovered.
  • Serve with rice pilaf.
