SAUSAGE CHEESECAKE APPETIZER

- In a small bowl, combine the bread crumbs, cheese and butter. Press onto the bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., Meanwhile, drain sun-dried tomatoes, reserving 1 tablespoon oil. Chop enough sun-dried tomatoes to measure 1/2 cup and set aside. (Save remaining tomatoes for another use.) In a large skillet, cook sausage over medium heat until no longer pink; drain. Add garlic, cook 1 minute longer., In a large bowl, beat the cream cheese, cream and reserved sun-dried tomato oil until smooth. Add eggs; beat on low speed just until combined. Stir in the mozzarella cheese, onions, basil, sausage mixture and sun-dried tomatoes. Pour over crust. Return to baking sheet. Bake for 35-40 minutes or until center is almost set., Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan. Serve at room temperature with crackers.

MILLION HEART CHEESECAKE
Minimal baking is required to impress your Valentine. All you need to do is bake the crust and this cheesecake's filling overflows with hearts and love.

- For the crust: Preheat the oven to 350 degrees F.
- Mix the cookie crumbs, butter, granulated sugar and salt in a bowl. Press into the bottom and 1 inch up the sides of a 9-inch springform pan. Put the pan on a baking sheet and bake until set, about 10 minutes. Let cool completely.
- For the raspberry coulis: Puree the raspberries in a food processor or blender until smooth. Strain through a fine-mesh strainer to remove any seeds. Transfer to an eyedropper or small squeeze bottle.
- For the filling: Combine the cream cheese, confectioners' sugar, vanilla and salt in a medium bowl and beat with an electric mixer on medium until smooth, about 5 minutes. Beat the heavy cream to medium peaks in a separate bowl. Fold the cream cheese mixture into the whipped cream until just combined, being careful not to deflate the whipped cream.
- Pour the batter into the crust. Tap the pan on the counter gently a couple of times to release any air bubbles. Squeeze chickpea-size dots of the raspberry coulis 1/4 inch apart on the top of the cheesecake in a spiral pattern. Starting with the outermost raspberry dot, drag a toothpick or skewer through the centers of the dots to create hearts, making sure to follow the spiral pattern. Chill the cheesecake in the refrigerator uncovered until set to the touch, about 2 hours.
CHEESY SAUSAGE SNACKS
Steps:
- Preheat the oven to 400 degrees F. Grease 2 baking or cookie sheets and set aside.
- Combine the biscuit mix, sausage and rosemary in a large bowl. Mix with your hands, then work in the white and yellow Cheddars and hot sauce. Form into balls the size of walnuts and place on the prepared baking sheets. Bake until cooked through, about 20 minutes. Serve warm.
HEARTY SAUSAGE CHEESECAKE
This is a recipe that was featured in the Rosedale Park Community Newsletter. It's a unique recipe that I created just searching through the fridge!This recipe is made for a "personal" sized (4.5 inches)spring form pan. My mom loves to eat this cake warm, with grits, for breakfast!

Steps:
- Preheat oven to 350 degrees.
- Mix flour and crushed tortilla chips together.
- Pour mixture in the springform pan.
- Add melted butter, mix and press into pan creating a crust.
- Bake for 7 minutes.
- When crust is done baking, allow to cool in freezer for 10 minutes.
- Spray sides of the pan with non-stick cooking spray.
- Preheat oven to 300 degrees.
- Mix Cream Cheese together with flour, in a mixer on medium speed.
- When flour is nicely incorporated, add egg, reduce speed to low.
- Saute sausage, peppers, onions, ketchup, garlic, and pepper together until sausage is fully cooked.
- Add mixture into cream cheese batter.
- Pour mixture into pan.
- Bake for 30-45 minutes, or until cake shakes VERY SLIGHTLY in the center.
- Let cool for 30 minutes, outside of oven.
- Refrigerate for at least 3 hours.
- Enjoy,(optional)reheat slightly when serving.

- Preheat oven to 400ºF and spray a 9x13-inch baking pan with cooking spray.
- Combine all ingredients except smoked sausage in a large zipper type plastic bag,mixing well.
- Place ingredients from bag into prepared pan,bake uncovered for 30 minutes.
- Add sausage to vegetables mixing well (if desired at this point feel free to add more seasonings).

- Preheat oven to 350°. In a Dutch oven, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles. Remove with a slotted spoon. Discard drippings in pan., Add onions to same pan; cook and stir over medium heat until tender. Add garlic; cook 1 minute longer. Stir in tomatoes, tomato paste, celery, parsley, bay leaf, brown sugar, oregano, salt and thyme. Bring to a boil. Reduce heat; simmer, uncovered, 1 hour, stirring occasionally. Remove bay leaf., Remove 1 cup sauce from pan. Stir cooked sausage into remaining sauce. Spread reserved sauce into a greased 13x9-in. baking dish. Repeat layers (dish will be full)., Bake, covered, 55-65 minutes or until cheese is melted. Let stand 10 minutes before serving.

CLASSIC CHEESECAKE

- Preheat oven to 375 degrees. Make crust: Butter a 9-by-3-inch springform pan. In a food processor, pulse graham crackers until fine crumbs form; add melted butter, sugar, and salt, and pulse to combine. Press crumb mixture into bottom and about 1 inch up side of pan. Bake until set, 12 to 15 minutes; let cool on a wire rack. Reduce oven to 325 degrees.
- Set a kettle of water to boil. Make filling: Using an electric mixer, beat cream cheese on medium until fluffy, scraping down side of bowl. Gradually add sugar, beating until fluffy. Beat in lemon zest and juice, and salt. Beat in eggs, one at a time, scraping down side of bowl after each addition. Beat in sour cream.
- Wrap bottom half of pan in foil. Pour in filling; place in a roasting pan. Pour in boiling water to come halfway up side of springform. Bake until just set in center, about 1 3/4 hours. Remove pan from water; let cool 20 minutes. Run a paring knife around edge; let cool completely. Cover; chill overnight before serving.
