Unsalted butter, for the pan
1 cup all-purpose flour, plus more for dusting
1 1/2 cups granulated sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
4 large eggs, separated, plus 2 egg whites, all at room temperature
1/2 cup vegetable oil
1/2 cup coconut milk, at room temperature
1 1/2 teaspoons coconut extract
Pinch of cream of tartar
Confectioners' sugar, for dusting
1 tablespoon white rum
6 large egg whites, at room temperature
1 cup plus 2 tablespoons granulated sugar
3 sticks unsalted butter, at room temperature, cut into pieces
3 tablespoons white rum
4 cups sweetened shredded coconut

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Butter an 11-by-17-inch rimmed baking sheet and line the bottom with parchment paper. Lightly butter the parchment and dust with flour, tapping out the excess.
  • Whisk 1 cup each flour and granulated sugar, the baking powder, baking soda and salt in a medium bowl. In a large bowl, whisk the 4 egg yolks, vegetable oil, coconut milk and coconut extract. Whisk in the flour mixture in 2 batches.
  • Beat the 6 egg whites and cream of tartar in a large bowl with a mixer on medium speed until foamy. Increase the speed to medium high; gradually add the remaining 1/2 cup granulated sugar and beat until stiff, shiny peaks form. Fold one-third of the beaten egg whites into the egg yolk mixture with a rubber spatula, then gently fold in the rest.
  • Spread the batter on the prepared baking sheet and bake until the cake is golden and springs back when pressed, 15 to 20 minutes. Loosen the edges of the cake with a knife; transfer the baking sheet to a rack and let the cake cool slightly. Dust a large piece of parchment paper with confectioners' sugar. Invert the cake onto the parchment and peel off the parchment on top. Brush the cake with the rum.
  • Make the frosting: Whisk the egg whites and granulated sugar in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water) until the mixture is warm and the sugar dissolves. Remove the bowl from the pan; cool slightly.
  • Beat the egg white mixture with a mixer on medium-high speed until stiff peaks form, 12 to 15 minutes. Beat in the butter a few pieces at a time, then continue beating until glossy and smooth, 5 to 7 more minutes. (Don't worry if the mixture looks curdled at first; continue beating.) Beat in the rum.
  • Spread about 2 cups of the frosting on the cake, then sprinkle with 2 cups coconut. Starting at a short end, roll up the cake, using the parchment to help you. Transfer to a platter, seam-side down. Cover the cake roll with the remaining frosting and sprinkle with the remaining 2 cups coconut.

1/2 cup shredded coconut
1 (18.25-oz.) box yellow cake mix
1 (3.4-oz.) box instant vanilla pudding mix
4 large eggs
1/2 cup water
1/2 cup vegetable oil
1/4 cup dark rum
1/4 cup coconut rum
1/2 cup salted butter
1/4 cup water
1 cup granulated sugar
1/4 cup coconut rum
1/4 cup Appleton Special Rum

Steps:

  • Preheat oven to 325 degrees F and grease and flour a 10-inch Bundt pan. Sprinkle the shredded coconut evenly over the bottom of the pan.
  • Sift the cake mix and pudding mix into a large bowl or stand mixer fitted with a whisk attachment. Add in the eggs, water, oil, and rums and beat until fully incorporated. Pour batter over the coconut in the pan.
  • Bake for 1 hour or until a cake tester inserted into the cake comes out clean.
  • During the last 10 minutes or so that the cake is baking, prepare the glaze. In a saucepan, combine the butter, water, and sugar and bring to a boil over medium heat. Continue to boil for 5 minutes, stirring constantly. Remove from heat and stir in the rum.
  • Use a skewer to poke holes all over the bottom of the cake while in the pan, then pour the glaze all over the cake while both are still hot. Be careful not to let it overflow the pan.
  • Let the cake cool and soak for at least 2 hours before removing from the pan. DO NOT refrigerate. After the cake has cooled, use a small rubber spatula to loosen it from the sides of the pan, then gently flip it onto a serving dish and remove it from the pan. Be patient and let gravity do it's thing, the cake is a little sticky and is slow to come out.
  • Once plated, leave plain, dust with powdered sugar, or top with icing and toasted coconut if desired.

24 eggs
4 cups sugar
1 tablespoon kosher salt
4 cups flour
5 (14-ounce) cans sweetened condensed milk
5 (13.5-ounce) cans coconut milk
1/2 cup dark rum (recommended: Meyers)
1 tablespoon vanilla extract
1 teaspoon almond extract
Unsweetened whipped cream, for serving

Steps:

  • Preheat oven to 300 degrees F.
  • Line a hotel pan with parchment paper and coat with vegetable spray. Whip the eggs and sugar in a bowl of an electric mixer, until fluffy, 2 times the volume.
  • Add the salt and quickly fold in the flour until incorporated. Pour the batter into the parchment paper-lined pan and bake until a skewer comes out dry.
  • Let the cake cool and remove the cake from the pan and gently remove the parchment paper. Trim off the top crust to enable the sopping milk to absorb more easily.

  • Coconut Rum Icing Directions:.
  • Melt together butter and milk over low heat in small sauce pan. When melted stir in Rum and sugar. Whip with wire whisk until thick enough to pour over cake. If necessary add more sugar or hot water to adjust thickness of icing. Stir in flaked coconut.
  • Place cake on wire rack over cookie sheet (line with foil or wax paper to speed cleanup) and pour icing over cake. Use an offset spatula to smooth icing if necessary to cover cake. Sprinkle with a little flaked coconut for garnish.

1 medium coconut
2 teaspoons confectioners sugar
For icing:

3 tablespoons well-stirred sweetened cream of coconut
1 tablespoon dark rum
3/4 teaspoon pure vanilla extract
2 to 3 tablespoons heavy cream
1/2 cup confectioners sugar
Equipment: a 9-inch round cake pan (2 inches deep); an adjustable-blade slicer

Steps:

  • Make cake:
  • Preheat oven to 350°F with rack in middle. Lightly butter cake pan and line bottom with a round of parchment paper. Lightly butter parchment, then flour pan.
  • Whisk together flour (1 1/4 cups), baking powder, and salt.
  • Whisk together whole eggs and yolks, sugar, and vanilla in a large bowl. Gradually whisk in flour mixture until combined, then whisk in butter until just combined. Pour into cake pan and rap pan on counter to expel air bubbles.
  • Bake until golden brown and cake starts to pull away from side of pan, about 45 minutes. Cool in pan on a rack 10 minutes. (Leave oven on.) Invert cake onto rack (discard parchment) and cool 10 minutes more. Generously brush top and side of warm cake with cream of coconut, allowing it to soak in before brushing on more. Cool completely.
  • Make coconut slivers as cake cools:
  • Pierce softest eye of coconut with a small screwdriver, then drain and discard liquid. Bake coconut in a shallow baking pan 15 minutes. (Leave oven on.) Break shell with a hammer, then pry flesh from shell with screwdriver.
  • Thinly shave enough coconut with slicer to measure 2 cups and toss with confectioners sugar, then spread in 1 layer on a baking sheet. Bake until just dry but not golden (some tips may color), 5 to 10 minutes. (Shave and bake remaining coconut with more confectioners sugar to serve on the side, or freeze for another use.) Cool coconut completely. (It will crisp as it cools.)
  • Make icing:
  • Beat together cream cheese, cream of coconut, rum, vanilla, and 2 tablespoons cream with an electric mixer until smooth, then beat in confectioners sugar. Icing should be smooth and slightly runny; stir in remaining tablespoon cream if necessary.
  • Smooth icing over top of cooled cake, allowing some to drip over side, then top with coconut slivers.

  • Combine water & 1/2 cup sugar in a small saucepan; bring to a boil. Add orange rind & cook 3 minutes. Drain well. Set orange rind aside for batter & filling. Cream butter; gradually add 2 cups of sugar, beating well at medium speed of an electric mixer. Add egg yolks one at a time, beating well after each addition. Combine flour, baking powder & salt. Add flour mixture to butter mixture alternately with milk, beginning & ending with flour mixture. Beat egg whites (at room temperature) until stiff peaks form; fold egg whites & 2 tablespoons orange rind into batter. Grease two 9" cake pans, line pans with wax paper; grease & flour wax paper. Pour batter into pans; bake at 350 for 25 -30min. Cool 10 min; remove from pans & cool completely on wire racks. Split cake layers in 1/2 horizontally to make 4 layers. Spread Orange Filling between layer; spread Rum Cream on top & sides. Sprinkle w/coconut. Chill. Orange Filling: 1 cup sugar 1/4 cup cornstarch 1/4 teaspoon salt 2 tablespoons butter 2 tablespoons lemon juice. Combine sugar, cornstarch and salt in heavy saucepan; gradually stir in orange juice. Bring to a boil; cook over med heat, stirring constantly until thickened. Remove from heat; stir in butter, lemon juice, and 2 T reserved orange rind. Cool. Yield: 1-1/2 cups. Rum Cream 1 cup whipping cream 1/3 cup sugar 2 teaspoons rum Beat whipping cream until soft peaks form. Add sugar and rum; beat until still peaks form. Yield: 2-1/2 cups.

  • Slice cake horizontally into 4 equal layers using a serrated knife; set layers aside.
  • In a small bowl, prepare instant pudding mix according to package directions, using skim milk.
  • Stir in remaining 1 teaspoon orange extract and orange rind.
  • Fold in 1 cup coconut and 3/4 cup whipped topping. Chill at least 15 minutes.
  • Place bottom cake layer on serving plate; spread with 1/3 of pudding mixture.
  • Repeat with remaining cake layers, ending with top cake layer.
  • Spread remaining 2 1/2 cups whipped topping over top and sides of cake; sprinkle with remaining 1 cup coconut.
