HEARTY ITALIAN VEGETABLE BEEF SOUP
Hearty Italian Vegetable Beef Soup is filled with chunks of ground beef, plenty of vegetables, and generous Italian spices. This soup freezes quite well making it perfect for easy lunches.

- In the bottom of a large pot, over medium high heat, cook and crumble the ground beef along with the garlic and onion. When the beef has browned, about 8 minutes, add the carrots, celery, and water to the pot.
- Increase heat to high and add the diced tomatoes, crushed tomatoes, tomato sauce, oregano, basil, thyme, salt, and pepper. Cover with a lid.
- Once the soup is boiling, stir, and reduce heat to medium; simmer uncovered for about 15-20 minutes, until the carrots are tender.
- Taste the soup and adjust the salt as desired. Stir in the cabbage. Simmer a few more minutes, just until the cabbage has wilted. Top with cheese, if desired, just before serving. Enjoy!

- 1. Heat the oil in a Dutch oven set over medium heat. Add the onion and crushed red pepper flakes and cook until the onions begin to soften, 5 minutes. Meanwhile, tie the parsley sprigs, lemon zest, and fennel tops together. Add the herb bundle, broth, 2 cups of water, and, if using, the cheese rind. Bring to a very gentle simmer and simmer until the chicken is just cooked through, about 8 minutes. Transfer the chicken to a cutting board and set aside until cool enough to handle. Remove the meat from the bones in large strips, and set aside.
- 2. Meanwhile, add the sliced fennel, carrots, and celery to the broth and season with salt, to taste. Continue to simmer until the vegetables are just tender, 5 minutes. Stir in the noodles and cook until just al dente, about 5 minutes. Stir in the reserved chicken, baby spinach, and Parmesan until the chicken is heated through and the spinach is wilted. Discard the herb bundle and cheese rind. Stir in lemon juice, to taste. Ladle the soup into serving bowls and serve with additional Parmesan for passing.

- Set a large saucepan over medium heat. Coat the pan with olive oil and add the diced onions, carrots, celery and garlic. Season with some salt and pepper, and then sweat the vegetables (cook without adding any color) for about 5 minutes. Add the kale, corn, edamame and red bell pepper and cook for a few more minutes so they have a chance to saute. Add the stock, season with salt and pepper and bring to a simmer. Cook until the vegetables are soft, 7 to 8 minutes. Serve.
- Begin by fortifying store-bought broth (this will add more depth of flavor to the finished soup). In a large stock pot, add the broth, 1 quart cold water, chicken carcasses, peppercorns, celery, carrot, onion, garlic, thyme and bay leaf. Set over medium heat and slowly bring to a rolling boil. Heating the broth up slowly will draw out the flavors of the chicken bones, vegetables and aromatics. Season lightly with salt and let the stock simmer (slightly covered) for 1 to 1 1/2 hours. When done, it will have reduced by about a quarter, leaving you with approximately 3 quarts of rich stock. Strain the stock through a large sieve, discarding the bones and vegetables. - In a large saucepan or cooking pot, add olive oil and butter and heat on medium-high.
- Add onions and saute until translucent, about 5 minutes.
- Add garlic, tomatoes including liquid and continue to cook on medium-high heat for another 6 to 8 minutes.

- Use bulk sausage or remove the casings from the sausage and discard.
- Brown the sausage in a heavy Dutch oven or large saucepan, mashing it with the back of a spoon until the meat is no longer pink and has rendered most of its fat.
- Spoon out most of the fat from the cooked sausage and discard.
- Add the onions and garlic and cook, stirring,until soft but not browned.

- In a large stock pot on high heat, Sauté the chicken, onions, and celery in olive oil until chicken if browned and onions are translucent, (if using the crock-pot, uses a skillet for this step).
- For Stove top: Add remaining ingredients and bring to a boil.
- Once the soup comes to a medium boil reduce heat to a simmer.
- Soup should just gently bubble from here on out.
- After 30 minute do a taste test of the broth add additional spices to your taste.
- simmer for an additional hour then test vegetables for doneness.
- For Crock-Pot: Transfer ingredients from skillet and add remaining ingredients.
- Set crockpot on high for two hours then reduce to low.
- After 2 hours do a taste test of the broth add additional spices to your taste.
- Let simmer for an additional 4 hours.
- (Warning if you have a high powered crock-pot and the soup begins to boil to hard reduce the setting to warm if it has one, otherwise unplug your crock-pot for awhile).
HEARTY VEGETABLE SOUP
This homestyle Italian soup is quick, simple and delicious. As most of the ingredients are either pantry or kitchen staples, it is easy to fix for unexpected guests, busy days, or whenever you just want a good bowl of soup in a hurry. I usually use frozen spinach and don't alway puree the tomatoes, which cuts down on prep time even more. Enjoy

- Wash and coarsely chop spinach, discarding tough stems.
- Peel and chop the onion and garlic, cut bacon into 1/2 inch pieces.
- Puree tomatoes with juice from can, rinse and drain the beans.
- Saute the onion and bacon in the olive oil for 2 to 3 minutes.
- Add the spinach and garlic and cook over high heat until the spinach is wilted, about 2 minutes.
- Add the tomatoes, beans and stock. Bring to a boil, reduce heat and simmer 10 to 15 minutes. Add salt and pepper to taste.
