This salad is very easy to make and always requested by my family. People think they are eating something special because it is made with hearts of palm. Best if chilled overnight.

3 (14.25 ounce) cans hearts of palm, drained and sliced
2 (.7 ounce) packages dry Italian-style salad dressing mix
½ cup white wine or champagne vinegar
6 tablespoons water
1 cup olive oil
1 (8 ounce) jar green olives, sliced
1 (6 ounce) can sliced black olives
2 tablespoons bacon bits

Steps:

  • In a medium bowl, whisk together the dressing mix, vinegar, and water until well blended. Whisk in olive oil. Add hearts of palm to the bowl, and stir to coat. Cover and refrigerate for at least one hour or overnight.
  • Before serving, sprinkle the green and black olives, and bacon bits over the salad.

1 ear of corn, husked
4 medium tomatoes, cored, halved and thinly sliced
2 cups chopped flat leaf parsley leaves
1 14-ounce can hearts of palm, drained, rinsed, and sliced into 1/2-inch rounds
Extra virgin olive oil to taste
Salt and freshly ground pepper
6 leaves of radicchio, for serving
Lime wedges for serving

Steps:

  • Preheat your broiler to high. Place the corn on a baking sheet and roast under the broiler, turning every couple of minutes, until all sides are browned and even a little charred, about 6 to 8 minutes. Let the corn cool and then hold it by one end and slice down the cob with a knife to separate the kernels from the cob.
  • Place the corn, tomatoes, parsley, and hearts of palm in a large bowl. Drizzle with some olive oil and season with salt and pepper and toss together. Scoop the salad into the radicchio cups and serve with lime wedges

1 tablespoon soy sauce
3 scallions, white and tender green parts only, chopped
1/8 teaspoon ground black pepper
1/2 teaspoon salt
1/2 cup extra-virgin olive oil
32 ounces canned hearts of palm or 2 pounds fresh hearts of palm
1 large red onion, julienned
1 red bell pepper julienned
1 fresh mango, peeled, cut away from the seed and julienned

Steps:

  • Through the feed opening of a running blender add, 1 at a time, vinegar, soy sauce, scallions, black pepper, and salt. Then leaving the blender running, add the olive oil in a slow thin stream.
  • Toss together the hearts of palm, onion, bell pepper, and mango. Stir in enough of the dressing to coat, and serve any additional dressing on the side.

The result is a light crisp salad which is refreshing and not at all heavy. Hearts of palm taste a bit like artichoke hearts but have a touch more crunch like a water chestnut.

2 (16 ounce) cans hearts of palm
1/2 cup chopped red bell pepper
1/2 cup chopped yellow bell pepper
1 tablespoon chopped parsley
1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard
2 tablespoons low sodium chicken broth (remove fat) or 2 tablespoons vegetable broth
1 tablespoon olive oil
ground pepper
salt, very small amount (optional)
lettuce leaf

Steps:

  • Drain the hearts of palm, cut them into half inch pieces, and put them into a large bowl. Stir in the chopped red and yellow pepper along with the chopped parsley.
  • To prepare the dressing, whisk together the lemon juice, mustard, chicken or vegetable broth, and olive oil in a small bowl.
  • Drizzle the dressing over the hearts of palm mixture and toss gently.
  • Season to taste with salt (optional) and pepper.
  • For best results, let the ingredients sit on the counter for 15-30 minutes before serving. Line a serving bowl with lettuce leaves, spoon the salad on top and serve.
