Categories     dessert

Time 40m

Yield 18 squares

Number Of Ingredients 8

1 1/2 cups firmly packed light brown sugar
1 cup unsalted butter
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs
1 teaspoon vanilla extract
About 1 1/2 cups butterscotch, semisweet chocolate, peanut butter, or white chocolate chips, optional

Steps:

  • Preheat the oven to 375 degrees F. Butter and flour a 9 by 13-inch glass baking dish.
  • Put the sugar in a large bowl. Melt the butter in a small skillet or in the microwave in a glass measuring cup. Stir the butter into the sugar until smooth, cool to room temperature.
  • Meanwhile, in another medium bowl, whisk the flour, baking soda, and salt together.
  • Beat the eggs and vanilla into the sugar mixture. Add the flour mixture a bit at a time and mix until a smooth thick batter forms. Fold in the chips, as desired.
  • Spoon the batter to the prepared dish and spread to evenly fill the dish. Bake until the blondies are light brown around the edges and a toothpick inserted in the center comes out clean, about 20 to 25 minutes.
  • Remove from the oven and let cool slightly. Invert onto a rack and cool completely. Cut into squares and serve.

THE BEST BLONDIES

The Best Blondies image

What's a brownie without chocolate? A blondie, of course! Make it your own by adding your choice of dried fruits, nuts, and yes, even chocolate!

Provided by Ben S.

Categories     Desserts     Cookies     Brownie Recipes     Blondie Recipes

Time 1h

Yield 24

Number Of Ingredients 7

3 cups cake flour
1 tablespoon baking powder
¾ teaspoon salt
¾ pound unsalted butter
3 cups packed light brown sugar
3 large eggs
1 tablespoon vanilla extract

Steps:

  • Adjust oven rack to lowest position; heat to 325 degrees. Spray a 9-by-13-inch baking pan with vegetable cooking spray. Fit a12-by-18-inch piece of heavy-duty foil into the pan so you can use the foil overhang as a handle to pull baked blondies from the pan; coat foil with cooking spray.
  • Whisk flour, baking powder and salt in a small bowl. Then, heat butter and brown sugar in a large pan until bubbling hot. Whisk eggs and vanilla in a large bowl. Slowly whisk hot sugar mixture, then dry ingredients, into eggs. Stir in optional add-ins (if using chocolate, let batter cool slightly first).
  • Scrape batter into prepared pan, then bake until blondies are just set, about 45 minutes. Remove from oven and let cool for five minutes. Pull blondies from the pan using foil handles and set on a wire rack. Cool completely before cutting into 24 pieces.

"BROWN ON BLONDE" BLONDIES

This chewy, walnut, pecan, and almond butter-filled blondie recipe comes from EveryDayCook by Alton Brown.

Provided by Alton Brown

Categories     Cookbook Critic     Dessert     Brownie     Nut     Walnut     Pecan     Almond

Number Of Ingredients 11

170 grams unsalted butter
100 grams walnuts
55 grams pecans
272 grams all-purpose flour
6 grams baking powder
3 grams kosher salt
55 grams almond butter
346 grams dark brown sugar
2 large eggs
1 large egg yolk
1 tablespoon vanilla extract

Steps:

  • Crank the oven to 350ºF. Coat the insides of an 8-inch square baking pan with non-stick cooking spray and line with a sling of parchment paper.
  • Melt the butter in an 8-inch sauté pan over medium heat. When it's done bubbling, add the walnuts and pecans and cook until the nuts are toasted and the butter smells nutty, 5 to 7 minutes.
  • Meanwhile whisk together the flour, baking powder, and salt in a small bowl.
  • Place a fine-mesh strainer over a large heatproof bowl and strain the butter away from the nuts. Set both aside to cool for 30 minutes. Then, chop the nuts coarsely and set aside.
  • While you're waiting, beat the almond butter into the cooled butter, followed by the brown sugar, eggs, egg yolk, and vanilla. Beat until completely smooth, about 1 minute, then stir in the flour mixture. Finish by folding in the nuts and transferring to the prepared pan. The batter will be thick, so I suggest a rubber or silicone spatula.
  • Bake for 30 to 35 minutes, until the edges are deeply brown and the top is dry and cracked. Remove from the pan and cool on a rack for about 30 minutes. Slice into squares and devour with plenty of frosty almond milk.

BLACK FOREST BROWNIES

Black Forest brownies image

These easy-to-make, fudgy brownies, complete with retro decoration, marry a much-loved flavour pairing of cherry and chocolate

Provided by Nadiya Hussain

Categories     Afternoon tea, Dessert, Treat

Time 1h10m

Yield Cuts into 20 squares

Number Of Ingredients 13

250g unsalted butter , softened at room temperature, plus extra for greasing
1 tbsp instant coffee powder
350g light brown soft sugar
4 medium eggs
75g cocoa powder
100g self-raising flour
1 tsp cherry essence (optional), available from Lakeland
100g dried sour cherries , chopped
200g dark chocolate (60% cocoa solids)
25g unsalted butter , softened at room temperature
50g icing sugar
green food colouring gel
20 glacé cherries , halved

Steps:

  • Grease a 30 x 20cm cake tin and line with parchment. Heat oven to 180C/ 160C fan/gas 4. Mix the coffee with 2 tbsp boiling water, then set aside to cool.
  • Cream the butter and sugar together for about 5 mins until light and fluffy, then add the eggs, one at a time, incorporating well after each addition. In a separate bowl, combine the cocoa powder and the flour. Add in the cherry essence and cooled coffee to the butter mixture, followed by the dry ingredients. Mix well, then fold in the cherries.
  • Spoon into the prepared tin, level the top with the back of a spoon and bake in the centre of the oven for 30-35 mins or until a skewer inserted into the middle comes out clean. Leave to cool completely in the tin.
  • Once cool, melt the dark chocolate in the microwave or over a pan of simmering water, then spread in an even layer over the top of the brownies.
  • While the chocolate is setting, mix the butter with the icing sugar and a few drops of green food colouring. Put the buttercream in a piping bag fitted with a writing tip nozzle. Cut the brownies into 20 squares, place two glacé cherry halves on top of each one and use the buttercream to create the cherry stem.

  • Preheat oven to 350. Spray an 8 x 8 pan with non-stick cooking spray. I suggest cutting a strip of parchment paper and laying it inside the pan/dish as well, leaving several inches of overlap so you can use as handles later to lift the brownies out of the pan after they've cooled. This helps with easy removal of the cooked blondies from the pan. Be sure to spray the parchment paper with non-stick cooking spray as well if you choose to use it.
  • Melt the butter in a microwave-safe mixing bowl for about 30 seconds. Blend in the brown sugar and egg. A whisk works well for the blending. No need for an electric mixer unless you just want to use one...but don't overmix. Blend just enough for the ingredients to mix well.
