Steps:
- Preheat the oven to 150 ° C / 300 ° F. Prepare a baking sheet/.
- Then, clean the potatoes thoroughly with a brush under running water to remove any traces of dirt; With the help of vegetable peeler remove all eyes or knots of the potato, you should not peel the potatoes. Then place the potatoes on a dishcloth to drain.
- Add chicken stock into boiling water and part-boil the potatoes
- On a chopping board, cut a potato lengthwise, and then divide each half into three pieces of similar size. Repeat this procedure with all the potatoes.
- When you have cut all the potatoes, arrange them in a bowl and sprinkle with the tablespoon of oil, rub all the pieces to distribute the oil.
- Season the potatoes with our seasoning mix
- Arrange the pieces of potatoes, next to each other evenly on the tray you have previously prepared.
- Bake the potatoes for about 30 to 45 minutes until they are golden brown.
- Take the potatoes after 20 minutes and lightly cover the potatoes with some chicken stock.
- Add the potatoes back into oven and cook.
- Remove the tray from the oven and enjoy them hot.

- Preheat oven to 475 degrees F (245 degrees C).
- Combine oil, garlic, basil, rosemary, parsley, red pepper flakes, and salt in a large bowl. Toss in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
- Roast in preheated oven, turning occasionally, until potatoes are brown on all sides, 20 to 30 minutes.

HEARTY FRIED POTATOES

- Preheat the oven to broil.
- Heat oil in a large skillet over medium-high heat. When oil is hot, add potatoes and onions and cook until browned. Add mushrooms, tomatoes, and peppers, stir to combine, and saute until mushrooms have softened. Transfer mixture to a sizzle or heat-proof platter and cover with cheese. Broil until cheese is melted and bubbly. Serve with sour cream, salsa, and biscuits, if desired.
HEART HEALTHY CRISPY OVEN FRIED CHICKEN

Steps:
- Add 1/2 tsp of the poultry seasoning to the milk.
- Combine all the other spices with the cornflake crumbs and place in a plastic bag.
- Wash chicken and pat dry.
- Dip chicken in the milk and shake to remove excess, then quickly shake in the bag with the seasonings and crumbs.
- Refrigerate up to 1 hour.
- Preheat oven to 350°F.
- Remove chicken from the fridge and sprinkle with paprika for colour.
- Evenly space chicken on greased baking pan.
- Cover with aluminum foil and bake for 40 minutes.
- Remove foil and continue baking for an additional 30-40 minutes or until the meat can be easily pulled from the bone with a fork.
- Drumsticks may require less baking time than breasts.
- (DO NOT TURN CHICKEN DURING BAKING).
- Crumbs will form crispy skin.
HEALTHIER OVEN-FRIED POTATOES
These are healthier by far than deep fried; and if you are on a diet, using extra virgin coconut oil is the way to go since the body doesn't store much of it as fat. Olive oil or canola oil are other healthful substitutes but are stored more by the body.

- Using unpeeled potatoes, cut each lengthwise into 4 wedges.
- Place wedges, peel side down, in a 9" x 13" baking dish.
- In a small bowl, mix oil, Parmesan cheese, pepper, salt, garlic powder, and paprika.
- Brush mixture over potato wedges.
- Bake at 375 degrees for 45 min., basting every.
- 15 minute with cheese mixture.
- Turn potatoe wedges over and bake 15 minute longer.
