1 can ( 7 ounces) whole kernel corn, drained
1 can (4.5 ounces) Old El Paso™ chopped green chilies, drained
1/2 cup Old El Paso™ medium chunky-style salsa
1/4 cup chopped onion
2 tablespoons chopped fresh cilantro

Steps:

  • Mix all ingredients in medium bowl. Cover and refrigerate until chilled, at least 2 hours but no longer than 24 hours.

3/4 cup Italian salad dressing
3/4 teaspoon Tabasco sauce
1/2 teaspoon chili powder
1 tablespoon fresh lime juice or 1 tablespoon lemon juice
1 tablespoon cilantro
1 (12 ounce) can corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 medium tomatoes, finely chopped
1/2 cup finely chopped red onion
1 red bell pepper, seeded and finely chopped
1/2 cup thinly sliced scallion
1 garlic clove, minced
1 jalapeno pepper, seeded and finely chopped

Steps:

  • Combine Italian dressing, Tabasco, chili powder, citrus juice and cilantro in a jar and shake well; set aside.
  • Combine remaining ingredients till evenly mixed.
  • Cover salad with dressing and chill at least 4 hours but the salad will be at its best if made the day before serving.
  • Serve cool or at room temperature.

16 ounces black beans
16 ounces corn
1/2 cup red onion
2 avocados
1/4 cup rice vinegar
1 tablespoon garlic salt
1/2 teaspoon black pepper

Steps:

  • Drain and rinse beans, pour into bowl.
  • Drain corn, mix with beans.
  • Chop onion and add to beans and corn.
  • Peel and dice avacodo into small pieces, add to other ingredients.
  • Pour in vinegar and garlic and pepper.
  • Gently stir together.
  • Refrigerate for at least 30 minutes. Serve Chilled.

1 tablespoon olive oil
3 cups fresh corn kernels (may use frozen)
2 tablespoons chopped red onions (green onion, shallots, and regular onion work fine.)
1 medium tomatoes, diced
1 (15 ounce) can black beans, rinsed and drained
1/4 cup fresh lime juice
1/4 teaspoon ground cumin
1/4 teaspoon ground dried chile
1/2 teaspoon salt
1/2 cup choped cilantro

Steps:

  • In a large skillet coated with olive oil, cook the corn kernels on medium high until slightly charred, about 8 to 9 minutes.
  • Transfer corn to large bowl and stir in remaining ingredients.

8 ounces smoked ham, cut into 1/2-inch cubes
1 (15 1/4 ounce) can whole kernel corn
1 red bell pepper, diced
1 cup celery, thinly sliced
1 (16 ounce) can black beans, rinsed and drained
1 (4 ounce) can chopped mild green chilies
1 teaspoon ground cumin
1 teaspoon chili powder
1 cup green onion, thinly sliced
1/4 cup chopped cilantro
1/4 cup red wine vinegar
salt and pepper
1 head romaine lettuce leaf (or)

Steps:

  • Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add the ham and corn, and cook until tinged with brown, stirring often. Add the pepper and celery and cook until the vegetables are crisp-tebder, about 3 minutes. Stir in the beans, green chilies, cumin and chili powder, and cook another minute, until the beans are heated through. Remove from heat and stir in the green onions, cilantro, vinegar and remaining oil; add salt and pepper to taste. Mound the greens on a large platter or on individual plates and spoon the warm salad over top. Garnish with thyme sprigs.
