HEART BUTTER COOKIES WITH STRAWBERRY BUTTERCREAM FROSTING

Steps:
- Preheat oven to 450 degrees F.
- Cream together the butter and sugar.
- Add the egg and vanilla extract.
- Mix in the flour, salt and baking powder.
- Roll out the dough on a floured surface.
- Cut out large hearts.
- Cut a small heart into half of the large heart cookies. Leave the other half as is.
- Using a spatula carefully transfer the cookies to ungreased cookie sheets.
- Bake at 450 degrees F for 6-8 minutes until slightly golden.
- Let cool completely.
- While the cookies cool it is time to make the Strawberry Buttercream Frosting.
- In an electric mixer beat together 1 cup of softened butter, 1 cup of strawberry jam and 2 cups of confectionary sugar until smooth.
- Once the cookies are cool spread a thin layer on one of the heart cookies without the hole.
- Place one of the cookies with a heart cut out on top.
- Repeat with the rest of the cookies.

This frosting has a wonderful, fresh strawberry flavor. I make this every year for my son's birthday.

STRAWBERRY BUTTERCREAM FROSTING
I searched and searched for the perfect strawberry buttercream frosting for my daughter's birthday cake. When I couldn't find what I wanted, I decided to combine elements of different recipes to create a completely smooth, not-too-sweet, not-too-buttery frosting with a distinct strawberry flavor and beautiful pink color. The few extra steps it requires are totally worth it!

- 1. Defrost strawberries in microwave or overnight in refrigerator. Place the strawberries and their juice in a colander suspended over a deep mixing bowl. With a rubber spatula, press the thawed berries to force juice into the bowl. Strain the juice if it contains pieces of strawberries.
- Pour the berry juice from the bowl into a saucepan and boil the juice until it reduces to 1/4 cup.
- Transfer the reduced berry juice to a heat-proof container.
- In a food processor fitted with a metal blade, puree the remaining strawberries. Use a fine strainer to remove all the seeds.
- Stir the pureed strawberries, reduced berry juice, and lemon juice together. Set aside.
- Place flour in a small saucepan. Add milk, a little at a time, stirring well to remove lumps. After all the milk has been incorporated into the flour, heat the mixture until it becomes very thick, again stirring constantly to prevent lumps. Remove from heat and place plastic wrap directly on the milk/flour mixture to prevent a film from forming on its surface. Cool to room temperature.
- While the mixture is cooling, cream the butter and sugar together until light and fluffy. If using unsalted butter, add 1/4 teaspoons salt.
- Add the completely cooled milk/flour mixture and vanilla and beat until no graininess remains from the sugar.
- Mix in 1/2 cup of strawberry puree until combined, reserving remaining puree for another use.

- In the bowl of a stand mixer, mix flour, butter, and whipping cream until combined. Cover and refrigerate for at least 2 hours.
- Take about one-third of the cookie dough out of the refrigerator, keeping remaining dough refrigerated. Roll dough to 3/16" thickness on a floured surface. Use a small heart-shaped cookie cutter (mine is 2" wide x 1-1/2" high) to cut out heart shapes. You could also just use a small round cookie cutter, about 1-1/2" to 2" in diameter. You will want to work swiftly, as the dough softens quickly as it warms. With a thin metal spatula, transfer hearts to your prepared 9" pan with sugar. Turn hearts over so that sugar adheres to each side. Place hearts on ungreased cookie sheet, about 1" apart.
- Prick each heart several times with tines of a fork about 4 or 5 times. Sprinkle on a little additional sugar, if desired. Repeat with the rest of the dough, rerolling scraps as needed. After rerolling the dough more than once, the dough will start to lose its shape faster when rolled out and baked, so try to get as many cut-outs as possible out of each initial rolling.

- In a mixing bowl beat butter or margarine and cream cheese with an electric mixer on medium speed until combined. Add sugar and beat until light and fluffy. Beat in egg, vanilla extract and baking powder. Beat in flour gradually, until completely combined. Divide dough in half, wrap each half in saran wrap and refrigerate for 3 hours {and up to 3 days} or until easy to handle.
- Combine the butter and powdered sugar in a medium bowl with a hand held mixer. The two ingredients will not totally combine but the butter will break down into smaller pieces. Once that happens add the strawberry jam and continue to mix. It will take 30 seconds to a minute for the mixture to come together into a spreadable buttercream. Add enough milk or cream to make the buttercream piping consistency. Add the mixture to a piping bag or Ziploc bag.
